Description
The subject of the present invention is a new one fresh, creamy and spreadable food specialties activity that is free of additives and living lactic acid generator contains in considerable amount, as well as the procedure for their manufacture.
You can find different, more on the market today or less fatty spreadable foodstuffs lities. These are all special technologies in the Common preparation, which the products thus obtained low in milk components or completely without and therefore make it a little creamy. All of these products contain au moreover, only mesophilic lactic acid generator, whose life cycle ability through heat treatments to which the products undergo during the manufacturing process, is generally lost.
henden Werte an Milchsäurebildnern ergeben:
Philadelphia = fehlen/1 g
Bucaneve = fehlen/1 g
Fraisy = 1 × 102 max/1 g
Tartare = fehlen/1 g
Primavera = fehlen/1 g
Saint Moret < 103.Bacteriological analyzes carried out on products of the same type and available on the market have shown the following values for lactic acid generators:
Philadelphia = missing / 1 g
Bucaneve = missing / 1 g
Fraisy = 1 × 10 2 max / 1 g
Tartare = missing / 1 g
Primavera = missing / 1 g
Saint Moret <10 3 .
The essentially known methods to grease this or to produce semi-fat cheese products are like two: one uses centrifuge technology Gal excretion, the other is based on ultrafiltration. In the case of centrifugal separation, one follows the usual treatment of milk (cleaning, degassing, Pasteurization, etc.) and inoculating the lactic acid generators (Maturity) to heat the acidified milk and the subsequent centrifugal separation at temperatures between 60 and 80 ° C above. You get a concent kicked, then with cream and as an alternative with Schim types of milk cheese with cream, herbs and / or spices and various additives are mixed. The end product (Quark) has milk flora caused by heat treatment lung was almost always ineffective, as well as a low creaminess and a particularly fissile structure due to the heat treatments during production cycle.
Techno points out the centrifugal separation the advantages of ultrafiltration. So he allows the concentration process that directly with the leavened milk takes place while performing the Use of lower temperatures (max. 40 ° C, see above) that the survival of the lactic acid generator is guaranteed.
It also allows the recovery of the nutritious Milk components, such as whey protein, are used in her conventional treatments are otherwise lost with the whey would go.
In fact, centrifugal excretion looks at the Milk and during the concentration phase the application high temperatures at different times (from 60 ° up to 80 ° C, which is consequently common for the lactic acid generators my is deadly.
In many cases this is obtained through ultrafiltration semi-finished concentrate by adding small Amounts of cream to a standard pH of 4.8 brought and then heated to 80-90 ° C. It then salt and in many cases aromas, stabilizers sier substances, thickener and also sodium citrate added to the creamy structure of the product Act.
Mixing and homogenization take place at high temperature (70-80 ° C). By this operating condition conditions that are retained until they are packaged, the milk flora is practically destroyed.
Die DE-OS 24 24 031 beschreibt ein Verfahren zur Herstellung proteinhaltiger Nahrungsmittel, insbesondere von Käse, bei dem die Gerinnung der gerinnungsfähigen Proteinbestandteile einer Milch herbeigeführt wird, die gewonnene Dickmilch auf minde stens einer semipermeablen Membran ultrafiltriert wird, und eine konzentrierte Dickmilch entnommen wird, deren Trockenmas segehalt und deren Gewichtsverhältnis von Proteinen zu pro teinfreier Substanz praktisch gleich demjenigen des Fertig produkts ist.DE-OS 24 24 031 describes a process for the production protein foods, especially cheese, in the the coagulation of the coagulable protein components of a Milk is produced, the obtained thick milk to minde at least one semipermeable membrane is ultrafiltered, and a concentrated thick milk is taken, the dry matter content and their weight ratio of proteins to pro tein-free substance practically the same as that of the finished product product.
According to DE-OS 24 24 031, the milk can be heat-treated beforehand subjected to lung and the concentrated thick milk homogenized or smoothed.
When trying to find a new procedure he did leaves, one with special organoleptic-structural Obtaining properties provided product has been a ver driving that allows freshness, Tastiness, aroma, creaminess, structure and special the presence of live lactic acid generators to get a much better product than the one on the Market existing.

As can be clearly seen from the above, the end product is not subjected to any heat treatment for microbial stabilization after coagulation, which is why the viability of the numerous lactic acid generators is guaranteed. In this way, the high hygienic properties are given, which are only entrusted to the remarkable aseptic level, which was specially developed for the method according to the invention. This sterility is guaranteed by:
- - Keimfreie Ventile entlang des gesamten Reifeprozesses und von dort aus weiter;- Sterile valves along the entire ripening process and from there on;
- - Überdruck mit steriler Luft in den verschiedenen Behältern, vom Reifeprozeß an aufwärts;Overpressure with sterile air in the various containers, from the ripening process upwards;
- - sterile Konfektionierung in keimfreien Maschinen;- sterile assembly in aseptic machines;
- - vorherige Sterilisierung aller Anlagen und Behälter mit Wasser von 85°C.- Prior sterilization of all systems and containers with Water of 85 ° C.
This special technology of preparation gives the End product an individual aroma, creamy and spreadable Properties without the help of any kind of additives can be achieved, as well as a special microstructure that can straight and especially from the absolute lack of warmth acts at the expense of the product.
Compared to the known methods, the present method is characterized by:
- a) Fehlen der anfänglichen Homogenisierungsphase;a) lack of the initial homogenization phase;
- b) besonderen Fettgehalt des Endproduktes, b) special fat content of the end product,
- c) Gehalt an lebenden mesophilen und thermophilen Milchsäure bildnern in einem geeigneten Verhältnis und in beachtlicher Menge undc) content of living mesophilic and thermophilic lactic acid formers in a suitable ratio and in considerable Amount and
It was surprising that an optimal ver Ratio between mesophilic and thermophilic lactic acid image could determine, together with a combination between coccus and chopsticks in the area of thermophilic Acid generator, so that a considerable number and life ability of all types in the final product has been achieved remain approximately constant until the expiry date. The balanced ne combination of the types of selected lactic acid generators is in able to give the product special and individual organolepti to give it the natural properties and freshness that everyone wants distinguish similar products available on the market. The ratio of thermophilic lactic acid generators is 3: 1 in favor of the coccus.
It was also found that during the inoculation phase the addition of other thermophilic species such as L. acidophilus and Bifidobacterium bifidus in an amount of 0.5-1% together with the previously determined mesophilic / thermophilic combination gives the product other nutritious and healthy properties, without changing the basic properties.

Raw milk with 3.5% fat, at a temperature of 4 ° C kept in stock, cleaned and titrated to them bring to a fat content of about 7%. The milk is then preheated to a temperature of 80 ° C and in degassing suitable thickeners (to remove all before existing smells). Pasteurization then follows 95 ° C with 5 minutes remaining in the system Cooling down to the inoculation temperature (24 ° C) and that Pour the milk into ripening containers using a Overpressure are provided with sterile air and previously with were sterilized in water heated to 85 ° C.
Inoculation with a total share of 1% takes place in a relationship between mesophilic and thermophilic Milk ferments of 80: 20. Then liquid rennet becomes the strength of 1: 10,000 and in the ratio of 1.5 ml / 100 l milk with a pH of 6.4 added. It is shaken briefly and then left to rest.
