On trouve actuellement sur le marché plusieurs spécialités alimentaires aptes à être étendues, lesquelles sont plus ou moins grasses.
Toutes ces spécialités ont en commun des technologies de préparation particulières qui rendent les produits ainsi obtenus pauvres en, ou complètement dépourvus de, charge lactique et peu crémeux. Tous ces produits ne contiennent en outre que des ferments lactiques mésophiles, dont la vitalité généralement se perd à cause des traitements thermiques subis pendant leur procédé de préparation.

Les procédés fondamentaux les plus connus pour obtenir ces produits fromagers gras ou demi-gras sont essentiellement deux, à savoir celui qui utilise la technologie de la séparation par centrifugation et celui qui se base sur l'ultrafiltration.
Dans le cas de la séparation par centrifugation, après les traitements habituels du lait (nettoyage, dégazage, pasteurisation et ainsi de suite), et l'inoculation avec les ferments lactiques (maturation), on effectue le chauffage du lait acidifié et la subséquente séparation par centrifugation à des températures comprises entre 60 et 80"C. 'eux actuellement sur le marché en ce qui concerne fraîcheur, sapidité, arôme, aspect et caractère crémeux et structure et surtout en ce qui concerne la présence de ferments lactiques vifs.
La présente invention a donc pour but d'offrir une spécialité alimentaire fraîche, crémeuse, apte à etre étendue, contenant de nombreux ferments lactiques vifs, laquelle est caractérisée en ce qu'elle ne contient pas d'additifs et qu'elle a un contenu en matière grasse sur la substance sèche inférieur en moyenne de 20-30% par rapport aux produits analogues.
Un autre but de la présente invention est de fournir un procédé amélioré pour obtenir cette spécialité alimentaire apte à être étendue, ayant un contenu réduit de graisses et contenant une quantité remarquable de ferments lactiques'vifs, lequel est caractérisé par les stades procéduraux suivants : 1. Traitements préliminaires du. lait, comportant nettoyage et titrage, préchauffage, pasteurisation, refroidissement et introduction dans les réservoirs de maturation pressurisés avec de l'air stérile.
2. Cycle de maturation, comportant l'inoculation des différentes espèces de ferments lactiques, l'addition du caillé et la rupture du caillot. Le temps moyen de maturation est de onze heures.
3. Cycle de concentration, qui consiste à rechauffer le lait acidifié à la température de 38-40'='C et à

le soumettre à ultrafiltration (UF) continue à la température constante de 40toc. Le produit éliminé est destiné à l'alimentation des animaux, alors que le demi-produit concentré est destiné à deux lignes différentes, à savoir : a) ligne produit naturel, b) ligne produit avec ingrédients.
4. Mélange et homogénéisation. Dans le cas du produit naturel on ajoute de la crème pasteurisée et du sel et après il y a l'homogénéisation ou le lissage de la pâte dérivant du mélange précédent (toujours à la température de 40'"'C) à des conditions qui permettent de donner au produit une structure crémeuse particulière, apte à être étendue, laquelle dénote l'absence de traitements thermiques.
Dans le cas du produit avec ingrédients, on ajoute au concentré des mélanges, préparés séparément et comportant du sel et de la crème et, au choix, également thon, saumon, tomate/origan ou"pesto" (sauce de basilic et d'ail), etc. Les produits sont envoyés tous les deux dans des réservoirs appropriés maintenus en surpression d'air stérile jusqu'au moment du conditionnement.
5. Conditionnement. Le produit est envoyé des réservoirs à une machine de conditionnement stérile. où cette stérilité est maintenue depuis le stade de dosage jusqu'à la fermeture hermétique du produit conditionné.
Tel qu'il ressort clairement de ce qui précède, le

produit final ne subit aucun traitement thermique de stabilisation microbienne après la : coagulation et par conséquent la vitalité des nombreux ferments lactiques est assurée. De cette, manière on peut également assurer que le produit possède des qualités hygiéniques excellentes, ces qualités étant uniquement le résultat du niveau élevé d'aseptisation étudié exprès pour le procédé de l'invention. Cette aseptisation est assurée par : - des soupapes aseptiques le long de tout le procédé à partir de la maturation, - la surpression d'air stérile dans les différents réservoirs à partir de la maturation, le conditionnement stérile avec une machine aseptique, - l'aseptisation préalable de toutes les lignes et des réservoirs avec de l'eau à 85oC.
Cette technologie de préparation, particulière donne au produit final un arôme personnalisé, un caractère crémeux et la possibilité de l'étendre facilement, toutes ces caractéristiques étant obtenues sans l'aide d'aucun additif ; en outre le produit a une microstructure particulière qui est notamment le résultat de l'absence absolue-de traitements thermiques effectués sur le produit.
Par rapport aux procédés connus, le procédé de l'invention est caractérisé par : a) l'absence du stade d'homogénéisation initiale, b) le contenu particulier en graisse du lait de départ, c) le contenu en ferments lactiques mésophiles et thermophiles vifs selon une proportion appropriée et

individuels soit le rapport mésophiles : thermophiles, mais, même si ces variations rentrent dans le cadre de protection de la présente invention, elles modifient sensiblement les caractéristiques finales du produit obtenu.
On a pu également constater que l'addition en phase d'inoculation d'autres espèces thermophiles, telles que L, acidophilus et Bifido-bacterium-Bifido selon des proportions de 0, 5-1% conjointement avec la combinaison mésophile/thermophile précédemment définie donne au produit d'autres qualités nutritionnelles bénéfiques sans en modifier les caractéristiques fondamentales.
Tel que précisé plus haut, le demi-produit concentré obtenu de l'ultrafiltration peut être destiné ou à la ligne couramment dénommée"du produit naturel", et dans ce cas il est additionné de crème pasteurisée et de sel, ou à la ligne couramment dénommée"avec ingrédients". Dans ce dernier cas le demi-produit est additionné d'ingrédients particuliers. Ces ingrédients sont complètement naturels et en phase de mélange il n'y a l'adjonction d'aucun additif. Leur adjonction au produit concentré a lieu à 40-50oC et en moyenne à raison de 1-10%, de préférence 6-10%, par rapport au demi-produit concentré. Lesdits ingrédients sont également aseptisés à part avant leur adjonction, sans en altérer les caractéristiques naturelles.
