Um diese Schwierigkeiten zu mildern, ist es bekannt, frisch gebackene Brötchen tiefzufrieren, sie im tiefgefrorenen Zustand über längere Zeiten aufzubewahren und erst unmittelbar vor dem Verzehr aufzutauen und nochmals aufzubacken.
