Dabei ist wichtig zu beachten, daß das Eintragen unter gutem Rühren geschieht, damit das Natriumalginat sich nicht zusammenballt und dabei Natronlauge einschließt, sondern feinkörnig ausfällt. Man muß so viel Alkohol im Überschuß anwenden, daß nach Eintragen des Natriumalginats in den Kneter der Wassergehalt des Alkohols nicht über 25 % ansteigt.
