Nun wird es mit Proteasen und Bakterien angeimpft, und das Ganze bei Temperaturkontrolle gären gelassen, wobei hin und wieder gerührt wird. Weitere Eiweißquellen (Quark, Trockenquark, andere Eiweißpulver und Eiweißquellen) werden zudosiert. Das so erzeugte Aminosäurengemisch ist auf Grund seines pH-Wertes von deutlich unter 4.
