Nun wird es mit Proteasen und Bakterien angeimpft, und das Ganze bei Temperaturkontrolle gären gelassen, wobei hin und wieder gerührt wird. Das so erzeugte Aminosäurengemisch ist auf Grund seines pH-Wertes von meist unter 4 bis 3 sehr gut unter Luftabschluss haltbar. Mittels einer anschließenden Mikrofiltration wird es geklärt, von den Bakterien befreit und man erhält eine Lösung von Aminosäuren und Oligopeptiden, in der auch noch Spurenelemente aller Art vorhanden sind.
