Abstract

The improvement includes subjecting the beer to a cold stage which comprises rapidly cooling the beer to a temperature of up to about its freezing point, such that ice crystals are formed therein in only minimal amounts. The resulting chilled beer is then mixed for a short period of time with an aqueous beer paste containing ice crystals, without any appreciable collateral increase in the amount of ice crystals in the resulting mixture. Finally, the beer thus treated is extracted from the mixture.
