Abstract

The solution concerns production of a non-alcoholic beverage from red grapes of grape-vine. The principle of the non-alcoholic beverage from red grapes of grape-vine consists in the fact the syrup is obtained from rest of pressed must, citric acid, saccharose, water, nutmeg, and elderberry flower. The syrup is characteristic by the fact that it contains 30.76 percent by weight of pressed must rest, 3.85 percent by weight of citric acid, 53.85 percent by weight of saccharose, 11.45 percent by weight of water, 0.08 percent by weight of elderberry flower and 0.01 percent by weight of nut meg. The non-alcoholic beverage itself contains 85.62 percent by weight of water and 14.38 percent by weight of syrup. The pressed must rest is obtained by pressing the red grape pomaces after ten days of fermentation at a pressure of 30 MPa for a period of 30 minutes. The pressed must rest can be produced on technological device for wine production. The syrup can be consumed immediately after mixing with water or it can be consumed after aeration with carbon dioxide as carbonated beverage.
