Abstract

1.- Aceite de semilla de girasol con elevada termoestabilidad con un contenido en ácidos grasos saturados (ácido palmítico y ácido esteárico) entre el 15% y el 45% del total de ácidos grasos presentes en el aceite, un contenido en ácido oleico entre el 45% y el 75% del total de ácidos grasos presentes en el aceite, y un contenido en la suma de gamma-tocoferol y delta-tocoferol superior al 85% del total de tocoferoles presentes en el aceite.
