Abstract

Se revelan composiciones que comprenden carbohidrato, lípido, que comprende de aproximadamente 0.25% a aproximadamente 2.5 % de lecitina en peso de lípido total; de aproximadamente 90% a aproximadamente 99.5% de proteína intacta en peso de proteína total; y de aproximadamente 0.5% a aproximadamente 10% de al menos una proteína hidrolizada seleccionada del grupo que consiste de proteína de caseína hidrolizada y proteína de suero hidrolizada; en donde la proteína hidrolizada tiene un grado de hidrólisis de entre aproximadamente 23% y aproximadamente 90%, y en donde las composiciones son polvos nutritivos. Los polvos nutritivos proveen estabilidad oxidativa y desempeño sensorial mejorados.
