Abstract
Un relleno saborizado polihídrico libre de alcohol suave y bombeable para productos horneados a base de harina, que comprende:(a) Una fase acuosa(b) Una mezcla de azúcares disuelta en la fase acuosa en donde la mezcla comprende fructosa, glucosa y sucrosa en proporciones relativas que previenen la cristalización y fijan el valor de la actividad de agua entre 0.38 y 0.47,(c) Una cantidad de componente saborizante y acidificante en una cantidad efectiva para reducir el pH del relleno por debajo de 5.
