Abstract
En el presente documento se divulga un sistema de suministro de sabor encapsulado de perlas de gelatina esféricas secas, cada una en forma de una matriz gelificada continua formada por una gelatina no reticulada y un relleno, donde la matriz rodea una pluralidad de gotitas de una composición de sabor líquido oleoso que contiene un saborizante. La matriz gelificada continua está sustancialmente desprovista de agentes gelificantes de polisacáridos ácidos. La pluralidad de gotitas de sabor tiene un diámetro promedio en un intervalo de aproximadamente 1 micrómetro a aproximadamente 20 micrómetros; y la perla es esférica y tiene un diámetro de partícula promedio en un intervalo de aproximadamente 400 micrómetros a aproximadamente 2000 micrómetros, con un coeficiente de varianza inferior al 15 %. El sistema de suministro de sabor encapsulado se prepara mediante extrusión de una emulsión estable de aceite en agua de una mezcla a base de gelatina y un sabor líquido oleoso a través de una aguja sumergida en un fluido no acuoso enfriado.
