Abstract
La presente invención divulga un método para preparar cerveza que tiene un contenido de etanol de 0–1,0% en volumen, que comprende proporcionar un medio que tiene un contenido de etanol de 0–20% en volumen, donde dicho medio comprende cerveza de fermentación restringida; someter dicho medio a un paso de destilación, de modo de reducir la cantidad de uno o más aldehídos seleccionados del grupo que consiste en 2–metilpropanal, 2–metilbutanal, 3–metilbutanal, 3–metiltiopropionaldehído, fenilacetaldehído, hexanal, trans–2–nonenal, benzaldehído y furfural, en el medio, y por lo tanto, reducir también el contenido de etanol, si está presente, a un contenido en el rango de 0–1,0% en volumen. La invención además divulga cerveza obtenida con dicho proceso.
