Abstract

Se revela un proceso diseñado para clarificar el aceite de café contenido en la borra de café o en los granos de café enteros y/o deteriorados. Dicho objetivo se logra mediante un proceso que inicia con la inoculación de la borra de café o los granos de café con macromicetos, -particularmente con hongos de pudrición blanca-, siguiendo con una etapa de incubación que permita lograr una población completa de la borra de café o los granos de café por el micelio del hongo, y finalizando con etapas de secado y extracción del aceite de café. El proceso revelado permite obtener aceite de café incoloro o de un color ligeramente amarillento, favoreciendo su empleo en productos cosméticos, alimenticios, entre otros.
