目前日本用叶绿素铜酸钠染色法把盐渍后的山野菜复绿,用该法处理过的山野菜色泽呈豆绿色,不是山野菜的原有颜色,在常温下放久褪色,同时该法不宜对鲜山野菜处理。
本发明的目的是提供一种使鲜山野菜或盐渍山野菜久放不退其本色同时使其保脆的技术。
本发明主要从细脆生物学角度考虑,山野菜脱盐后,细胞内渗透压减少,细胞壁和细胞膜恢复正常,孔隙加大,在外力作用下,在适合环境下细胞外保绿溶液中的某些有效微量元素等渗入,使植物体中的叶绿素恢复和被固定,以麦饭石为主要成份的“保绿剂”能有这样的效果。
该项技术是经过如下步骤实现的。将鲜的蕨菜、山芹菜、刺嫩菜等山野菜或盐渍过的蕨菜、山芹菜、刺嫩菜等山野菜经水浸10-24小时脱盐后作原料;然后配制保绿剂,将强化麦饭石75-85%、蔗糖24-12.4%、可溶性淀粉0.9-2%、柠檬酸0.1-0.6%按重量比称重后混和均匀;接着配制溶液:按保绿剂:水为0.1-0.5%∶99.9-99.5%的重量比例配制好加热到70-100℃;第四步,保绿处理:将原料山野菜浸在配制好的溶液中3-10分钟,温度保持70-100℃;第五步,保脆处理:将经过保绿处理过的山野菜浸在0.5-5%的氯化钙或碳酸钙或磷酸钙水溶液中10-30分钟;第六步:漂洗,将经过保脆处理的山野菜放入清水中洗15-20分钟;第七步,调制:将漂洗后的山野菜加入适量的食盐、味素等调料拌匀;第八步,分装:按所需重量称重经过漂洗过的山野菜分装入容器中密封;最后将分装到容器中的山野菜按常规方法灭菌,就成为可保持三个月的具有原味原色的山野菜了。上述的处理技术的关键是配制保绿剂、配制保绿溶液、保绿处理以及保脆处理。
由于采用该技术使山野菜具有原来色泽,其颜色不论在光、热环境下久放不变,保存期为三个月,而且经保脆处理后的山野菜脆度适口;该技术因为以麦饭石为主要成份做保绿处理,使得山野菜的营养丰富,适量强化了对人体新陈代谢有促进作用的和蛋白质。酶的合成有特殊作用的微量元素。麦饭石的这一作用早已被承认,而且无副作用。该技术工艺路线简单、易于掌握。
该技术的实施例如下:取强化麦饭石0.075kg,可溶性淀粉0.0009kg、蔗糖0.024kg、柠檬酸0.0001kg混合后制成0.1kg保绿剂;将保绿剂加入至99.9kg的水中加热至70℃,制成保绿溶液;取20kg脱盐后的蕨菜放入保绿溶液中保持5分钟,其溶液温度保持70℃;将保绿处理后的蕨菜放入含氯化钙0.5%的100kg的水溶液中进行保脆处理10分钟,然后对保脆处理后的蕨菜放入冷水中漂洗两次;然后将漂洗好的蕨菜加入适量的食盐、味素拌匀,再按100g一份分装在塑料包装袋内,真空封口;最后将分装好的蕨菜放入灭菌锅中灭菌,保持118℃15分钟后,冷却入库。
Claims (1)
1、一种山野菜保绿保脆技术,其特征在于:
a、配制保绿剂:将强化麦饭石75-85%、蔗糖24-12.4%、可溶性淀粉0.9-2%、柠檬酸0.1-0.6%按重量比称好混和均匀制成保绿剂;
b、配制保绿溶液:将保绿剂按重量比0.1-0.5%加入到99.9-99.5%的水中加热至70-100℃;
c、保绿处理:将鲜山野菜或脱盐后的山野菜浸在配制好的保绿溶液中3-10分钟,温度保持70-100℃;
d、保脆处理:将经过保绿处理后的山野菜浸在含氯化钙或碳酸钙或磷酸钙0.5-5%的水溶液中10-30分钟;
e、漂洗:将经过保脆处理的山野菜放入清水中冲洗15-20分钟;
f、调制:将漂洗后的山野菜加入适量的食盐、味素拌匀;
g、分装:按所需重量将调制后的山野菜分装入容器中密封;
h、将分装后的山野菜按常规方法灭菌。
