Technical Field
The present creation relates to a fermenter, and more particularly, to a fermenter that can be easily replaced and facilitates attachment of a strain.
Background
Pure grain solid state fermentation is a common traditional wine brewing process. For example, the brewing process of kaoliang spirit is roughly divided into three major parts of yeast making, brewing and packaging, wherein the brewing process comprises soaking, cooking, cooling, yeast mixing, fermenting, distilling, cooling, yeast re-mixing, re-fermenting and re-distilling.
The fermentation of fermented wine is an important step, and mainly includes adding yeast, raw material and water in proper proportion into a fermentation tank, mixing them to obtain fermented wine, making fermented wine, hydrolyzing starch with yeast to produce sugar, at the same time making yeast convert sugar into alcohol, and fermenting the fermented wine at low temp. for several days to several tens of days.
The traditional fermentation is carried out in mud, cement and red brick tanks, a cement cellar is generally used in Taiwan, China, and strains can be attached to the inner wall of the cellar, so that different fermentation tanks have different flavors due to different attached strains or different attachment amounts, and the fermentation containers are propagated by using various strains for a long time, so that the prepared wine has the flavor of the cellar, and is named in a certain number of the cellar, thereby being beneficial to marketing.
Disclosure of Invention
However, the fermentation using the cement fermentation tank has disadvantages that if the inner wall of the fermentation tank is contaminated by bacteria, the wine is easily rancid, and the contaminated fermentation tank can be continuously used after manual cleaning and high-temperature and high-pressure sterilization, so that the cement fermentation tank is very difficult and inefficient in cleaning and sterilizing; further, the cement fermentation tank may be disintegrated by long-term use.
At present, a stainless steel fermentation tank is used for fermentation, although the fermentation tank can be mechanized and is easy to clean and sterilize, strains cannot be attached to grow and propagate, and the produced wine is simple and not rich in flavor and lacks the flavor of the old cellar.
In view of the above-mentioned shortcomings, the present inventors thought that it is necessary to devise a fermenter that is easy to replace and facilitates the attachment of the strain, and solve the problem of time-consuming strain cultivation in the prior art.
The main objective of the present creation is to provide a fermentation barrel, which comprises a barrel body and a plurality of stainless steel wire structures. The barrel body comprises a containing groove for placing objects inside, and each stainless steel wire structure is detachably arranged on the inner side surface of the containing groove.
Furthermore, a plurality of fixing structures corresponding to the stainless steel wire structure positions are directly or indirectly arranged on the inner side surface of the containing groove.
Further, the fixing structure is a hook or a clip.
Further, the stainless steel wire structure is composed of a plurality of steel wires wound in a coil.

Detailed Description
The detailed description and technical contents of the present invention will now be described with reference to the drawings. Furthermore, for convenience of illustration, the drawings and their proportions are not necessarily to scale, but are exaggerated, and are not intended to limit the scope of the present disclosure.
Please refer to fig. 1-2, which are an appearance diagram and a transparent partial enlarged diagram of the fermentation barrel of the present invention, as shown in the figure.
The present creation discloses a fermenter 100, which includes a tank 10 and a plurality of stainless steel wire structures 20, wherein the stainless steel wire structures 20 are disposed in the tank 10 for attaching strains, and the strains can be cultured in the stainless steel wire structures 20 before the stainless steel wire structures 20 are placed in the tank 10, so that the strains are attached to the stainless steel wire structures 20; in a preferred embodiment, a culture medium suitable for growth of a bacterial species may also be placed within the stainless steel wire structure 20. In one embodiment, the fermentation tank 100 is used in a solid mash fermentation step in a wine making process; in other embodiments, the fermenter 100 is suitable for fermentation processes in various technical fields, such as, but not limited to, the food industry (e.g., bread or pasta making, wine making processes, tea making processes, casein agricultural product making, etc.), the biological and chemical industry (e.g., pharmaceutical industry, biological pharmaceutical manufacturing, agricultural production of natural pesticides, bacterial fertilizers, microbial herbicides, etc.), and the like.
The barrel 10 includes a container 11 for placing objects therein, such as for mash fermentation, the container 11 is used for containing yeast, raw materials and water, and the above objects are mixed to make mash. In an embodiment, the material of the accommodating groove 11 is stainless steel, which has the advantages of preventing bacteria, being convenient for cleaning, and not requiring a cleaning agent.
The receiving groove 11 may be, for example, but not limited to, a substantially rectangular parallelepiped, a substantially square, a substantially cylindrical body, a substantially U-shaped groove body, or any other three-dimensional structure for receiving an object. In an embodiment, the accommodating groove 11 is a U-shaped groove (as shown in fig. 1 to 2); in another embodiment, the bottom side of the receiving cavity 11 may be provided with a foot stand (not shown) for stably supporting the barrel 10, or the bottom side of the receiving cavity 11 may be provided with a roller (not shown) for moving the barrel 10, and the present invention is not limited to the specific configuration of the barrel 10, and the present invention is described in the foregoing.
The notch 111 on the top side of the containing groove 11 is provided with the stainless steel cover body 30, the shape of the stainless steel cover body 30 corresponds to the shape of the notch 111 and is used for covering the notch 111, so that the stage of preventing air from entering to adapt to anaerobic conditions in the fermentation process is achieved, and meanwhile, bacteria can be prevented from being produced and cleaning is facilitated. In an embodiment, a coating (not shown) is disposed on the inner side of the stainless steel cover 30 to prevent the objects in the accommodating groove 11 from being contaminated, and the coating may be made of silica gel.
In one embodiment, a handle 31 is disposed outside the stainless steel cover 30 for taking the stainless steel cover 30; in another embodiment, the stainless steel cover 30 may be, for example but not limited to, a rolling cover, a folding cover, a flip cover or any other structure capable of achieving the same function or function as the above-mentioned one controlled by a driving device (such as a motor, an electrical device, or the like) for opening or closing the slot 111 of the accommodating groove 11.
Next, please refer to fig. 3 to fig. 4, which are schematic side views of the fixing structure of the present invention, and refer to fig. 1, as shown in the drawings.
Each stainless steel wire structure 20 is detachably disposed on the inner surface 112 of the accommodating groove 11, and the stainless steel wire structure 20 is composed of a plurality of twisted steel wires having surfaces for bacteria to adhere to. In one embodiment, the width of the surface of the steel wire is between, but not limited to, 50mm to 200 mm. In another embodiment, the plurality of stainless steel wire structures 20 in the present invention are regularly (e.g. corresponding to each other in rows and columns, or staggered from each other, etc.) or irregularly arranged on the inner surface 112 of the accommodating groove 11, and the present invention does not limit the specific arrangement, the arrangement pitch or the density, etc. of the stainless steel wire structures 20, and is described in advance herein.
The inner surface 112 of the accommodating groove 11 is directly or indirectly provided with a plurality of fixing structures corresponding to the positions of the stainless steel wire structures 20. In one embodiment, the fixing structure may be a plurality of hooks 113 (as shown in fig. 3) directly disposed on the inner surface 112 of the accommodating groove 11 for hooking the stainless steel wire structure 20, providing the installation and facilitating the later disassembly; in another embodiment, a stainless steel net N is laid in the accommodating groove 11, a plurality of hooks N1 (shown in fig. 4) are disposed on the stainless steel net N, and the hooks N1 are also used for mounting and detaching the stainless steel wire structure 20 at a later time. The embodiments of the fixing structure described in the present invention are not limited to the aforementioned hooks 113 and N1, but the fixing structure can be, for example, but not limited to, a clip or any other structure or method for assembling and disassembling the stainless steel wire structure 20. In another embodiment, the stainless steel net N may be attached with a strain, which may be the same as or different from the strain attached to the stainless steel wire structure 20, and the present invention is not limited thereto, and the strain is described in advance.
In conclusion, the stainless steel wire structure attached with the strains is arranged in the fermentation barrel, the strains required by fermentation are easily replaced by using the detachable stainless steel wire structure, the time for culturing the strains in the prior art is saved, and the whole fermentation process is simplified and shortened.

Claims (10)
1. A fermenter, comprising:

9. The fermenter according to any one of claims 1 to 6, wherein the material of the container is stainless steel.
10. The fermenter according to any one of claims 1 to 6, wherein a stainless steel cover is disposed on the notch at the top side of the container.
