8. The cooking appliance of claim 1 or 2, wherein the vacuum insulation is mounted to the lid and is disposed on top of the inner pan.
9. The cooking appliance of claim 8, wherein the lid body comprises an outer lid (141) and an inner lid (142) disposed on an underside of the outer lid, the vacuum insulation being disposed between the outer lid and the inner lid.

The cooking appliance of claim 9, wherein the lid further comprises a rim seal (143) disposed about a peripheral edge of the inner lid, a top end of the rim seal being captured between the outer lid and the inner lid, and a bottom end of the rim seal abutting the rim of the inner pot when the lid is closed over the pot.
