其有益效果是：由于切刀装置采用一组切刀片与切刀板上设置的条形孔配合，故可以一次切出多片菜，不仅省工省时，提高了工作效率，而且厚薄均匀。根据需要，还可二次加工切出菜丝。特别适用于切菜量较大的餐饮业。

上述切刀板10上的一组切刀片11为5-7片，切刀片之间的间距相等。
为便于把握，切菜板2上设有把柄22。
