The food formula comprises the following components in per 100g of gel: 7-10 g of high-quality protein, 6-10 g of grease, 20-35 g of maltodextrin, 0.1-1 g of compound vitamin, 0.1-1.5 g of compound mineral and 0-40 g of sweetener. The invention creatively adopts a gel formulation based on a nutrition mode of combining animal and plant proteins, and can better stabilize environmental unstable nutrient substances such as vitamins.
Description
Technical Field
The invention belongs to the technical field of special medical foods, and particularly relates to a gel-like full-nutrition special medical food formula and a preparation method thereof.
Background
The special medical formula food is specially processed and prepared to meet the special requirements of people with limited eating, digestive absorption disorder, metabolic disorder or specific disease state on nutrients or diet, and comprises special medical infant formula food suitable for 0-12 months old and special medical formula food suitable for people over 1 year old. The formula food with special medical application can be used as a nutrition supplementing way to play a role in nutrition support. The formulation of special medical use food is mainly based on energy demand.
Double proteins refer to edible protein sources obtained from the nutritional dose-response relationship and precise interactions between vegetable and animal proteins, resulting in greater advantages than single proteins. A large number of researches show that the intake of double proteins can improve muscle level, make up for the deficiency of proteins and improve the nutrition and health of leukemia patients. Biproteins are rich in various amino acids and contain high levels of essential amino acids. The double-protein composite nutrition powder developed based on double proteins is rich in nutrition, easy to saturate and convenient to eat. In 2019, the development seminar of the "double-protein engineering" project is held in Beijing, and the seminar indicates that the foods prepared based on double proteins can effectively adjust the organism condition of the sick people and improve the physical health of the patients. The combined application of animal and plant proteins can effectively increase the quality of the proteins and improve the utilization rate of the proteins. The oil-in-water (O/W) emulsion system prepared from the macro-nutrients and the micro-nutrients through the processes of mixing with water, homogenizing, sterilizing and the like is emulsion type special medical food. The special medical food in the form of milk is convenient to apply in the aspect of nutrition support without rehydration operation, and has good development prospect.
Disclosure of Invention
The invention aims to solve the technical problem of providing a gel-like full-nutrition special medical food formula based on animal and plant double proteins and a preparation method thereof.
In order to achieve the technical effects, the invention comprises the following technical scheme:
a gel-like full-nutrition special medical food formula based on animal and plant double proteins, which is characterized in that each 100g of gel comprises the following components: 7-10 g of high-quality protein, 6-10 g of grease, 20-35 g of maltodextrin, 0.1-1 g of compound vitamin, 0.1-1.5 g of compound mineral and 0-40 g of sweetener.
The high-quality protein is compounded by animal protein and plant protein in proportion. The animal protein is whey protein, and the vegetable protein is pea protein. The hydrolysate of the above proteins can also be used as a source, such as hydrolyzed whey protein, pea protein. The animal protein accounts for 10-90% of the total protein, and the plant protein accounts for 10-90% of the total protein.
The source of the grease is one or a combination of two or more of soybean oil, sunflower seed oil, coconut oil, palm oil and refined olive oil.
The maltodextrin has a DE value of 15 to 20.
The addition amount of the vitamin in each 100g of the product is as follows: 50-100 mug RE, 1-10 mug vitamin D, 1-10 mug vitamin E, 2-10 mug vitamin K, 10-50 mg vitamin C, 10.1-1.0 mg vitamin B, 20.1-1.0 mg vitamin B, 60.1-1.0 mg vitamin B, 120.5-1.5 mug vitamin B, 2-5 mug nicotinic acid, 20-100 mug folic acid, 1.0-3.0 mg pantothenic acid and 1-10 mug biotin.
The mineral substances are added into the product in the following amount per 100 g: 50-300 mg of sodium, 30-100 mg of potassium, 50-100 mug of copper, 20-100 mg of magnesium, 1-5 mg of iron, 1-5 mg of zinc, 100-200 mug of manganese, 50-100 mg of calcium, 30-100 mg of phosphorus, 5-20 mug of iodine and 2-10 mug of selenium.
The fruit additive is essence such as apple, banana, lemon, etc.
A gel-like full-nutrition special medical food based on animal and plant double proteins comprises the following energy-producing nutritional components in percentage by weight: every 100g of the energy is 500-1200 KJ, the protein energy supply ratio is 10-20%, the fat energy supply ratio is 20-30%, and the carbohydrate energy supply ratio is 50-70%.
A preparation method of gel-like full-nutrition special medical food based on animal and plant biprotein comprises the following steps of;
1. preparation of high-solubility pea proteins: dissolving commercial pea protein powder in distilled water at a mass percentage of 8%, stirring for 120 min at 700rpm, hydrating for 24 hr under 4 deg.C refrigeration condition, taking out the powder the next day, adjusting pH to 10-12 with 2M sodium hydroxide solution, maintaining for 30min to 2 hr, and performing ultrasonic treatment with ultrasonic amplitude of 10% to 30% for 5 to 10min. After the ultrasonic treatment, the pH was adjusted to 7 to obtain a highly soluble pea protein aqueous solution. Heating in 85-90 deg.c water bath for 20-30 min, cooling to room temperature, and standing in 4 deg.c cold storage condition.
2. Preparation of animal and plant double-protein solution: whey protein powder was dissolved in distilled water at a mass percentage of 8%, stirred at 700rpm for 120 minutes, hydrated at 4℃for 24 hours under refrigeration, taken out the next day, and then returned to room temperature, and the pH was adjusted to 7. Heating in 85-90 deg.c water bath for 20-30 min, cooling to room temperature, and standing in 4 deg.c cold storage condition. After mixing the whey protein with the pea protein solution, stirring is carried out at 700rpm for 1-2 hours.
3. Preparation of animal and plant double-protein emulsion: adding maltodextrin and sweetener into animal and plant double protein solution of whey protein and pea protein, shearing at 9000r/min for 10-30min, adding mineral and water-soluble vitamins, shearing for 5-10min, and dissolving to obtain water phase. Adding fat-soluble vitamins into 65 deg.C oil, shearing at 9000r/min for 10-30min, and dissolving to obtain oil phase. Mixing the oil phase and the water phase, and shearing for 10-30min at 9000 r/min. And performing ultrasonic treatment on the colostrum, wherein the ultrasonic setting running state is 5s on and 5s off, the amplitude is set to be 10-30%, and the treatment is performed for 10-20min.
4. Preparation of animal and plant double-protein emulsion gel: adding 0.5% -2.5% of glucolactone powder into the emulsion in the step 3, slowly stirring for 3-5min under the condition of 200rpm, and then placing the mixture under the condition of 4 ℃ refrigeration to solidify the gel for 12-24 hours to obtain the full-nutrition gel formula food with special medical use.
A gel-like full-nutrition special medical food based on animal and plant double proteins and a preparation method thereof have the efficacy characteristics and innovation points that:
1. the pea protein and the whey protein which are rich in essential amino acids, low in allergy and low in cost are adopted for scientific proportioning. The advantages of the two proteins are maintained, the purpose of amino acid complementation is achieved, and the nutrition is more abundant than that of the protein of a single variety. Can comprehensively and uniformly supplement various nutrient elements for human body, and is helpful for enhancing immunity.
2. The formula adopts the gel formulation for preparation, has the characteristics of accurate nutrition, delicacy and snack, and breaks through the limitations of the traditional powder and emulsion products.
3. The formula adopts the gel formulation for preparation, and can better protect environment-sensitive nutritional ingredients such as vitamins and the like.

Detailed Description
The present invention will be described in further detail with reference to specific examples.
Example 1:
1. preparation of high-solubility pea proteins: the commercial pea protein powder is dissolved in distilled water with the mass percent of 8 percent, stirred for 2 hours under the condition of 700rpm, hydrated overnight under the refrigeration condition of 4 ℃, taken out the next day, and after returning to room temperature, the pH value is regulated to 12 by 2M sodium hydroxide solution, the solution is kept for 1.5 hours, and then the solution is subjected to ultrasonic treatment with the ultrasonic amplitude of 30 percent and the ultrasonic time of 6 minutes. After the ultrasonic treatment, the pH was adjusted to 7 to obtain a highly soluble pea protein aqueous solution. Heating in water bath at 90deg.C for 30min, immediately cooling to room temperature, and standing at 4deg.C for use.
2. Preparation of animal and plant double-protein solution: whey protein powder was dissolved in distilled water at a mass percentage of 8%, stirred at 700rpm for 2 hours, hydrated overnight at 4 ℃ under refrigeration, taken out the next day, and then returned to room temperature, and the pH was adjusted to 7. Heating in water bath at 90deg.C for 30min, immediately cooling to room temperature, and standing at 4deg.C for use. After mixing the whey protein and pea protein solution in a ratio of 75/25, stirring was carried out at 700rpm for 1 hour.
3. Preparation of animal and plant double-protein emulsion: adding maltodextrin, sweetener, essence, etc. into animal and plant double protein solution of whey protein and pea protein, shearing at 9000r/min for 10min, adding mineral, water-soluble vitamins, etc., shearing for 5min, and dissolving to obtain water phase. Adding fat-soluble vitamins into 65 deg.C oil, shearing at 9000r/min for 10min, and dissolving to obtain oil phase. The oil phase was mixed with the water phase and sheared for 10min at 9000 r/min. And performing ultrasonic treatment on the colostrum, wherein the ultrasonic treatment is performed for 10min, and the ultrasonic treatment is performed under the condition that the running state is 5s on and 5s off, and the amplitude is set to be 30%.
4. Preparation of animal and plant double-protein emulsion gel: adding 2% glucolactone powder into the emulsion in step 3, slowly stirring at 200rpm for 3-5min, and standing the mixture at 4deg.C under refrigeration to solidify the gel for 12-24 hr to obtain the final product.

The viscosity value of the special medical food is detected to be higher, and belongs to the shear thinning fluid type, and the viscosity value is shown in figure 1. There was a slight change in viscosity values during the high temperature and acceleration experiments (7 days) (fig. 2). The color index of the special medical food is L value 78.242 + -0.13, a value-0.172+ -0.02, b value 15.126+ -0.04, the color is white, the color difference value (figure 3) is obviously changed during storage, the color difference change of the sample stored at 4 ℃ is smaller, and the sample is more stable.
Claims (4)
1. A gel-like full-nutrition special medical food based on animal and plant double proteins is characterized in that aiming at the characteristics of low solubility and poor functionality of commercial pea proteins, the solubility is improved by adopting pH migration and ultrasonic technology; the full nutritional characteristics of pea protein are well reserved.
2. The animal and plant biprotein based gel-like total nutrient biomedical food according to claim 1, wherein the components per 100g of gel comprise: 7-10 g of high-quality protein, 6-10 g of grease, 20-35 g of maltodextrin, 0-40 g of compound vitamins, compound minerals and sweeteners.
3. The animal and plant double-protein-based gel-like full-nutrition special medical food according to claim 2, wherein the preparation is gel-like, and adopts an acid-induced cold gel method, so that heat-sensitive substances such as vitamins can be better reserved.
4. A gel-like total nutrient biomedical food product based on animal and plant biprotein according to any of claims 1-3, characterized in that the preparation method comprises the following steps:
s100, preparation of high-solubility pea protein: dissolving commercial pea protein powder in distilled water at a mass percentage of 8%, stirring for 120 min under the condition of 700rpm, hydrating for 24 h under the condition of 4 ℃ refrigeration, taking out the pea protein powder the next day, regulating the pH value to 10-12 by using 2M sodium hydroxide solution after returning to room temperature, keeping for 30min to 2 h, and then carrying out ultrasonic treatment with the ultrasonic amplitude of 10% to 30% and the ultrasonic time of 5 to 10 min; after ultrasonic treatment, the pH is adjusted to 7, and a pea protein aqueous solution with high solubility is obtained; heating in 85-90 deg.c water bath for 20-30 min, cooling to room temperature, and standing in 4 deg.c cold storage condition;
s200, preparing animal and plant double-protein solution: dissolving whey protein powder in distilled water at a mass percentage of 8%, stirring for 120 min at 700rpm, hydrating for 24 hours at 4 ℃ under refrigeration, taking out the whey protein powder the next day, recovering the whey protein powder to room temperature, and regulating the pH to 7; heating in 85-90 deg.c water bath for 20-30 min, cooling to room temperature, and standing in 4 deg.c cold storage condition; mixing whey protein and pea protein solution, and stirring at 700rpm for 1-2 hr;
s300, preparing animal and plant double-protein emulsion: adding maltodextrin, sweetener, essence, etc. into animal and plant double protein solution of whey protein and pea protein, shearing at 9000r/min for 10-30min, adding mineral, water-soluble vitamins, etc., shearing for 5-10min, and dissolving to obtain water phase; adding fat-soluble vitamins into 65 ℃ oil, shearing for 10-30min at 9000r/min, and dissolving to obtain an oil phase; mixing the oil phase and the water phase, and shearing for 10-30min at 9000 r/min; performing ultrasonic treatment on the primary emulsion, wherein the ultrasonic setting running state is 5s on and 5s off, the amplitude is set to be 10-30%, and the treatment is performed for 10-20min;
s400, preparing animal and plant double-protein emulsion gel: adding 0.5-2.5% of glucolactone powder into the emulsion in the step 3, slowly stirring for 3-5min under 200rpm, and standing the mixture under 4 ℃ refrigeration condition to solidify the gel for 12-24 hours to obtain the total nutrient gel formula food with special medical application.
