技术领域
本发明涉及牛饲料技术领域,尤其涉及一种大麦日粮及其改善牛肉肉块结构的应用。
背景技术
目前有关大麦研究很多,但关于肉牛的肉质性状的研究尚少,已有的研究表明,饲喂豆粕、玉米等这类加深脂肪颜色的饲料会影响肉质,但是在原来玉米为主的饲料上添加大麦会使脂肪变得更有韧性,且更加洁白。因此,添加大麦的日粮可以用于改善牛肉的肉质、色泽等形状。但是,目前尚没有日粮对牛肉肉块组成的研究。
牛肉肉块是指从牛酮体上分割下来的牛肉部位,这些牛肉部位主要包括西冷(主要是由上腰部的脊肉构成)、眼肉(位于牛前腰上方有形似眼睛的脂肪)、上脑(位于肩颈部靠后、脊骨两侧)、胸口肉(位于牛胸口两肢前腿中间胸脯肉)、小里脊(脊椎骨内侧一条肌肉)、辣椒肉(里脊旁边的肉,状似辣椒)、小黄条(椎骨内侧的条状嫩肉)、大黄瓜条(位于牛后腿股外侧)、肩肉(位于牛的前肩胛部,前腿的上部)、尾扒(介于牛后腿及牛臀位的臀腰肉)、尾龙(介于牛后腿及牛臀位的臀腰肉)和霖肉(牛的膝盖的位置)等。不同部位的肉块具有不同的食用价值,其中里脊肉是牛肉中最嫩、最贵的部位之一,属于牛肉中的顶级部位;外脊肉又称西冷其口感鲜嫩,适合用于制作牛排;上脑肉是牛肉中的高级部位之一,肉质较嫩,带有一些脂肪,可以用来制作各种美食;牛腱肉、牛胸肉属于牛肉中较便宜的位置。
因此,有必要对牛肉肉块组成结构进行研究,并提供一种日粮对肉块组成结构进行改善。
发明内容
本发明的目的在于探究肉牛日粮对牛肉肉块结构组成的影响,同时提供一种大麦日粮,用于改善牛肉的肉块结构,以期提高肉牛的应用价值和经济价值。
为了实现上述发明目的,本发明提供以下技术方案:
本发明提供了一种大麦日粮,包括如下重量份的组分:大麦285~290份、粗蛋白含量为43%的豆粕95~105份、棕榈粕400~500份、大豆皮90~110份、碳酸钙15~16份、氢钙4~6份、糖蜜18~22份、氯化钠6~10份、碳酸氢钠5~7份、纤维素酶0.08~0.12份、木聚糖酶0.08~0.12份、甘露聚糖酶0.18~0.22份、氧化镁2~4份、预混料3~7份。
优选为,包括如下重量份的组分:大麦287份、粗蛋白含量为43%的豆粕100份、棕榈粕450份、大豆皮100份、碳酸钙15.6份、氢钙5份、糖蜜20份、氯化钠8份、碳酸氢钠6份、纤维素酶0.1份、木聚糖酶0.1份、甘露聚糖酶0.2份、氧化镁3份、预混料5份。
本发明还提供了一种所述的大麦日粮在改善牛肉肉块结构中的应用。
优选的,所述改善牛肉肉块结构是提高牛肉肉块中西冷、小里脊、小黄条和尾龙的重量。

优选的,所述肉牛为中国草原红牛。
本发明通过在肉牛日粮中添加大麦,并对其添加比例进行调整,在营养水平不变的情况下,获得了对肉牛肉块结构具有显著改善的作用的肉牛大麦日粮。通过在肉牛育肥中期饲喂本发明的大麦日粮,显著提高了西冷、小里脊、小黄条和尾龙的肉块重量,提高了肉牛的应用和经济价值。

可见,三组日粮的营养水平基本一致。
1.2实验动物及分组
选择饲养环境相同、健康的12月龄阉割肉牛36头(中国草原红牛),平均体重为345.27kg±26.18kg,随机分为三组,每组12头。
1.3实验管理
牛圈进行消毒,对三组牛编号,全天拴系。预饲期7天,玉米日粮组正常饲喂,玉米大麦混合日粮组和大麦日粮组由基础日粮(即玉米日粮,表2)过渡到玉米大麦混合日粮(表3)或大麦日粮(表1)。正式试验期为12个月。每日饲喂2次(早6:00和下午16:00),粗饲料自由采食,自由饮水。
1.4屠宰和测试
对屠宰后的三组牛,分别收集西冷、胸口、小里脊和眼肉等肉切块,并对其进行称重,结果如表5所示。

根据表5比较大麦日粮组相对于另外两组的肉块增重情况。结果如表6所示。

由表5、6可以分析得出,大麦日粮相对于玉米日粮和玉米大麦混合日龄都能够显著增重的肉块类型是西冷、小里脊、小黄条和尾龙。可见,本发明提供的大麦日粮能够提高肉牛中特定的肉块类型,尤其是西冷、里脊产量的提高能够产生更大的经济效益。
以上所述仅是本发明的优选实施方式,应当指出,对于本技术领域的普通技术人员来说,在不脱离本发明原理的前提下,还可以做出若干改进和润饰,这些改进和润饰也应视为本发明的保护范围。
