The application discloses health care wine with an immunity improving function, which comprises white spirit, deer penis, cordyceps militaris, oyster, deer blood, kudzu vine, honeysuckle and mint leaves. The application is used for brewing white spirit by a specific brewing method, and the white spirit is used for soaking the raw materials with the health care function, so that the content of methanol in the white spirit can be reduced, and the utilization rate of the raw materials and the leaching rate of active ingredients are improved. Meanwhile, the components are mutually cooperated to produce the effects of resisting fatigue, improving sleep, enhancing immunity and reducing blood fat; the adopted traditional Chinese medicines are harmless to human bodies, do not generate any side effect, and are safe and reliable.
Description
Technical Field
The application belongs to the technical field of functional health care wine, and particularly relates to health care wine with an immunity improving function and a preparation method thereof.
Background
Along with the development of economy and high speed, the living standard of people is obviously improved, the modern life rhythm is accelerated, the pressure of people is increased gradually, and the long-term overload operation of the body of people brings serious harm to the health of people, such as immunity decline, hypomnesis, sexual desire decline, limb weakness and the like. Meanwhile, the health concept and the awareness of pursuing the quality of life are also enhanced, and the product requirements of people on the wine and food industry are greatly changed. The health wine is prepared by adding one or more Chinese medicinal materials into a certain production process for mixed fermentation or adding a proper amount of animal and plant extract into sake for blending, integrates the functions of health care, disease prevention and disease treatment, and is a dietary therapy health care method transmitted by the ethnic group of China.
In recent years, although there are many health fermented wines, the fermented wines have unsatisfactory or not strict effects of improving immunity due to insufficient raw material utilization and depending on blending of functional components due to the reasons of ingredients and production processes.
Disclosure of Invention
In order to overcome the technical defects, the application provides the health care wine with the function of improving the immunity and the preparation method thereof, and the production process of the base material white wine is regulated and controlled, so that the process can be completed from the source and in the brewing process, and the content of methanol in the health care wine is reduced. While at the same time. Can improve the immunity of human bodies after long-term administration, has the effects of improving sleep, reducing blood fat and resisting fatigue, is healthy, nutritional, safe and reliable, and is beneficial to health after long-term administration.
In a first aspect, the application provides a health wine with immunity improving function, comprising white spirit, penis et testis Cervi, cordyceps militaris, concha Ostreae, sanguis Cervi, radix Puerariae Lobatae, flos Lonicerae and folium Menthae;
the white spirit is prepared by the following steps:
aging the brewing grains, mixing the aged brewing grains with pectin esterase and cellulase, and performing enzymolysis;
centrifuging the enzymolysis product to obtain filter residue and supernatant, mixing the filter residue with water, rhizopus and malt saccharification liquid, and performing primary fermentation;
uniformly mixing the pre-fermented product with water and yeast, and performing main fermentation to obtain fermentation liquor;
mixing the fermentation liquor and the supernatant fluid and then distilling;
removing the distilled product from the turning wine and the tail wine, and aging to obtain the white wine.
Further, the material comprises the following raw materials in parts by weight:
450-600 parts of white spirit, 5-15 parts of penis cervi, 1-5 parts of cordyceps militaris, 1-6 parts of oyster, 1-6 parts of deer blood, 30-50 parts of kudzu vine, 10-30 parts of honeysuckle and 1-10 parts of mint leaves.
Further, the degree of the white spirit is 55-78 degrees.
Further, the grain curing process comprises the following steps: soaking the brewing grains in 80-90 deg.c water for 30-60 min and steaming at 100-110 deg.c for 20-30 min.
Further, the mass ratio of the brewing grain to the pectin esterase to the cellulase is 100-150:0.01-0.5:0.5-2, the enzymolysis time is 2-10 h, and the enzymolysis temperature is 35-50 ℃.
Further, the mass of the malt saccharification liquid is 1-3% of the mass of the filter residue, the mass of the rhizopus is 0.05-0.2% of the filter residue, the temperature of the primary fermentation is 28-32 ℃ and the time is 5-10 d.
Further, the mass ratio of the pre-fermentation product to the water to the yeast is 100-150:50:0.01-0.05, the temperature of the main fermentation is 25-28 ℃, and the time is 15-30 d.
Further, the mass ratio of the fermentation liquor to the supernatant is 1-30:1, and the distillation temperature is 70-85 ℃.
In a second aspect, the present application provides a method for preparing the health wine with immunity improving function according to any one of the first aspect, comprising the following steps:
pulverizing all the raw materials except the white spirit to obtain mixed powder;
and (3) carrying out intermittent microwave radiation treatment on the white spirit, and then putting the mixed powder into the white spirit for sealing and soaking.
Further, the batch microwave radiation treatment method comprises the following steps: and (3) carrying out microwave radiation on the white wine for 30-90 min at the temperature of 35-45 ℃ and carrying out intermittent operation at the frequency of 5s operation and 5s pause.
Compared with the prior art, the technical scheme provided by the embodiment of the application has at least the following advantages:
1. the health care wine with the immunity improving function provided by the application adopts a plurality of traditional Chinese medicine components with health care function, and the traditional Chinese medicine components are mutually compatible and coordinated to produce the effects of resisting fatigue, improving sleep, enhancing immunity and reducing blood fat. Meanwhile, the penis cervi, the cordyceps militaris, the oyster and the deer blood in the application are typical medicinal materials capable of improving the effects of tonifying qi and strengthening yang, and can realize the effects of strengthening the body resistance and consolidating the constitution, tonifying qi and nourishing blood, strengthening the spleen and soothing the liver, and removing stasis and detoxifying.
2. The health care wine with the immunity improving function provided by the application has the advantages that in the white wine brewing process, the fiber of grains is loosened through curing; the degradation of the fiber is accelerated by the treatment of the complex enzyme, so that more methanol is avoided; and through three stages of primary fermentation, main fermentation and distillation, the fermentation efficiency is improved, the fermentation period is shortened, and the utilization rate of raw materials is improved. In the process of preparing the health care wine, the white wine is subjected to intermittent microwave radiation treatment, so that the volatilization of methanol is accelerated, the quality and the taste of the health care wine can be improved, and the quick dissolution of the effective components of the traditional Chinese medicine is realized.
