Experimental example 5
Stability test:
the throat drops obtained in examples 1 to 5 and comparative examples 1 to 14 were accelerated for 1, 2, 3 and 6 months in an environment with a temperature of 40℃and a relative humidity of 75%, and were sampled and compared after the completion of the experiment, and the results are shown in tables 8 to 9 below.
TABLE 8 marker components
The results show that after the throat-clearing and throat-moistening candy obtained in the example 1 is accelerated to be examined for 1-6 months in an environment with the temperature of 40 ℃ and the relative humidity of 75%, the contents of L- (+) -ascorbic acid and chlorogenic acid are not obviously reduced, which indicates that the stability is good and the storage time is long; the throat-clearing and throat-moistening candy of comparative examples 3-12 starts to decrease in content of L- (+) -ascorbic acid and chlorogenic acid after accelerated examination for 3 qualified months, and has a remarkable difference from example 1 after 6 months. Therefore, the tangerine peel, the dwarf lilyturf tuber and the platycodon root have a certain synergistic effect, which is beneficial to improving the storage stability of the throat-moistening candy, so that the L- (+) -ascorbic acid content and the chlorogenic acid content of the throat-moistening candy cannot be obviously reduced in the long-term storage process, and the shelf life of the throat-moistening candy is prolonged; in addition, the addition modes and the sequence of the specific auxiliary material components and the specific auxiliary material proportions are favorable for improving the stability of the product.
TABLE 9 physicochemical Properties
As a result, in the accelerated investigation process of 6 months, the variation amplitude of the total sugar content, the reducing sugar content and the moisture content of the throat-moistening sugar of comparative examples 9-12 is obviously higher than that of example 1, and the selection of specific auxiliary material proportion and the addition mode and sequence of the roxburgh rose are beneficial to improving the storage stability of the throat-moistening sugar and prolonging the shelf life.
In addition, experiments show that the throat drops of examples 1-5 and comparative examples 1-14 have no obvious change in microbial indexes in the accelerated investigation process of 6 months, the total colony content is less than 10CFU/g, the coliform group content is less than 30MPN/100g, the mould is less than 10CFU/g, and the yeast is less than 10CFU/g, so that the requirements are met; in terms of sensory indexes, the throat-moistening sugar of examples 1-5 is not deformed and adhered in the accelerated investigation process of 6 months, while the throat-moistening sugar obtained in comparative examples 11 and 12 is deformed and adhered, and the fact that the addition of the roxburgh rose juice concentrate before sugar boiling can lead to the product quality of the throat-moistening sugar caused by overhigh reducing sugar in a high-temperature state of later sugar liquid boiling, so that the throat-moistening sugar is easy to deform in the storage process, and the addition of the roxburgh rose juice concentrate after boiling can avoid the product deformation in the storage process of the throat-moistening sugar, so that the stability is improved; the throat-moistening sugar obtained in the comparative examples 7 and 8 is adhered, which shows that the throat-moistening sugar product is not deformed in the storage process by selecting the auxiliary materials with specific proportions.
