本发明属于保健品制备技术领域,具体涉及一种虾青素抗疲劳运动饮料。
背景技术
运动饮料是根据运动时生理消耗的特点而配制的,可以有针对性地补充运动时丢失的营养,起到保持、提高运动能力,加速运动后疲劳消除的作用。伴随体育运动的全民化趋势,现代运动饮料不仅要满足专业运动员需求,还要满足普通运动人群的需求。运动饮料的发展大致经历了三个阶段。第一代运动饮料以添加水、碳水化合物、电解质为主;第二代运动饮料是在第一代运动饮料基础上添加了维生素、氨基酸等功能物质;而第三代运动饮料则是充分利用生物技术的发展成果,将诸多天然产物的提取物添加到第二代运动饮料中,形成了品种丰富、风味独特且功能更全的运动功能饮料。研究报道,产生运动疲劳的主要原因有能源物质的过度消耗,疲劳物质在体内的堆积,体内酸碱平衡、渗透压平衡、水平衡的失调等。目前市面上的运动饮料主要是通过补充水分、糖分和电解质,加入化学药品和生物制品而达到提高运动能力、消除疲劳的效果。但化学药品和生物制品的副作用可能会给机体造成一定的危害,而且某些药物还含有兴奋剂成分。因此寻找安全、有效的抗疲劳食品和药品已经成为运动医学研究领域的研究热点。
虾青素(Astaxanthin)是从虾蟹外壳、牡蛎、鲑鱼及藻类、真菌中发现的一种红色脂溶性类胡萝卜素,也是类胡萝素合成的最高级别产物。虾青素被公认为是迄今为止自然界中已发现最强的天然抗氧化剂,其抗氧化能力是天然VE的1000倍,β-胡萝卜素的10倍,葡萄籽油的17倍,花青素OPC的150倍,辅酶Q10的60倍。越来越多的研究结果表明,虾青素具有多种生理活性,如抗氧化、抗炎、抗衰老、改善运动机能等等。所以,虾青素具有重要的营养和保健作用。但虾青素与维生素一样不能被人体合成,只能从食物中摄取。在自然界中,鲑鱼可逆流而上进行洄游,其运动能力堪称生物界的奇迹,发明人受鲑鱼洄游的启示,将虾青素用于运动饮料中,以达到提高运动能力、消除疲劳等作用。
发明内容
针对上述现有技术存在的问题,本发明的目的是提供一种易于产业化生产,有利于充分发挥虾青素抗运动疲劳的保健功效,满足专业运动员和普通运动人群的需求,促进人类健康的虾青素抗疲劳运动饮料。
为实现该目的,本发明采用如下技术方案:
一种虾青素抗疲劳运动饮料及其制备方法,包括以下重量份的原料:虾青素5-7份、甜味剂10-20份、支链氨基酸6-8份、维生素8-10份、咸味剂3-5份、酸味剂1-3份。
进一步地,所述的虾青素是指虾青素微乳剂。
进一步地,所述的甜味剂是指白糖和葡萄糖混合物,混合比例为2:1。
进一步地,所述的维生素是指维生素B12。
进一步地,所述的咸味剂是指氯化钠、氯化钾、氯化钙混合物,混合比例为2:1:1。
进一步地,所述的酸味剂是指柠檬酸。
进一步地,其制备方法包括以下步骤:
(1)原料制备:将虾青素制备成微乳剂;将白糖和葡萄糖混合制备成甜味剂;将氯化钠、氯化钾、氯化钙混合制备成咸味剂;
(2)将虾青素微乳剂、甜味剂、咸味剂、酸味剂、支链氨基酸、维生素混合均匀,加入水搅拌均匀,制备成饮料;
(3)将饮料灭菌灌装制得成品。
由于虾青素分子中具有共轭双键链分子结构的不饱和酮基和羟基,并且分子中的不饱和羟基和酮基又会构成α-羟基酮,这种α-羟基酮结构具有活跃的电子效应,能提供未配对电子来吸引自由基,从而容易与自由基发生反应来达到清除自由基的目的,以此起到显著的抗氧化功效。已有研究表明,在运动后补充虾青素能够缓解机体产生的运动性疲劳,可以增强机体中抗氧化应激系统的抗氧化应激功能,降低机体内丙二醛的积累水平,减少运动后机体内的血乳酸积累水平等,运动前后饮用可显著提高机体的运动能力。
人体的运动性疲劳甚至运动性损伤主要是由于在运动过程中机体产生了大量损伤机体的自由基及代谢产物,影响了正常运动及降低运动能力,因此对运动营养补剂清除自由基的研究也成为了热点。本发明利用虾青素微乳剂,应用于运动饮料中,与维生素等营养功能成分协同作用,能够提升运动饮料的抗氧化效果,同时也促进了虾青素安全、高效、多元化的应用。
制成的天然虾青素抗疲劳运动饮料不含酒精,饮料稳定性好,风味独特,结合饮料中碳水化合物、电解质、维生素、水,能够迅速为运动员补充营养物质,给人体补充能量和电解质的同时,清除运动产生的自由基,有效缓解其运动型疲劳,能够更好地提升运动效率,是一种提升运动能力效果极佳的运动饮料。
本发明的饮料充分发挥了虾青素在生物体内抗氧化和抗疲劳的功效,有效地促进新陈代谢,调节机体酸碱平衡,消除疲劳,减少运动后对集体的损伤。本发明的虾青素运动功能饮料建议在运动前和运动中饮用,以更好发挥虾青素的保健功效。本发明的虾青素苹运动功能饮料产品,其制作过程简单、安全、可操作性高,同时制备得到的产品可在低温条件下稳定存在,尤其满足了运动人群喜欢喝冷饮的喜好,对推动虾青素和运动功能饮料的发展具有积极的意义。
由于运动会消耗大量的体能和维生素,所以饮料中含有丰富的维生素是对运动后身体的很好补充,尤其是维生素B12。蔬菜中含量很少,主要存在于动物性食物中。它因含有钴而呈红色,又称为红色维生素。它很难直接被人体吸收,与钙结合,才能有利于人体的机能活动。
支链氨基酸是一类α-碳上含有支链的中性氨基酸,因此也称BCAA,包括亮氨酸、异亮氨酸和缬氨酸。支链氨基酸都属于必需氨基酸,主要在骨骼肌中代谢,约占骨骼肌蛋白质的必需氨基酸的35%,与骨骼肌的合成有密切关系,是肌肉形成的必须氨基酸,可为肌肉提供能量,也可通过体液调节促进肌肉合成,还可以保护肌群,防止肌肉流失。此外,支链氨基酸还能够抑制血液中色氨酸进入脑部,进而降低脑内5-羟色胺的合成,能够缓解精神疲倦等中枢疲劳行为。
具体实施方式
实施例1
(1)原料制备:将5g虾青素制备成微乳剂;将白糖和葡萄糖按照2:1混合比例混合,制备成甜味剂10g;将氯化钠、氯化钾、氯化钙按照2:1:1混合制备成咸味剂3g;
(2)将虾青素微乳剂5g、甜味剂10g、咸味剂3g、柠檬酸1g、支链氨基酸6g、8g维生素B12混合均匀,加入水搅拌均匀,制备成饮料;
(3)将饮料灭菌灌装制得成品。
实施例2
(1)原料制备:将7g虾青素制备成微乳剂;将白糖和葡萄糖按照2:1混合比例混合,制备成甜味剂20g;将氯化钠、氯化钾、氯化钙按照2:1:1混合制备成咸味剂5g;
(2)将虾青素微乳剂7g、甜味剂20g、咸味剂5g、柠檬酸3g、支链氨基酸8g、10g维生素B12混合均匀,加入水搅拌均匀,制备成饮料;
(3)将饮料灭菌灌装制得成品。
实施例3
(1)原料制备:将6g虾青素制备成微乳剂;将白糖和葡萄糖按照2:1混合比例混合,制备成甜味剂15g;将氯化钠、氯化钾、氯化钙按照2:1:1混合制备成咸味剂4g;
(2)将虾青素微乳剂6g、甜味剂15g、咸味剂4g、柠檬酸2g、支链氨基酸7g、9g维生素B12混合均匀,加入水搅拌均匀,制备成饮料;
(3)将饮料灭菌灌装制得成品。

1.一种虾青素抗疲劳运动饮料,其特征在于,包括以下重量份的原料:虾青素5-7份、甜味剂10-20份、支链氨基酸6-8份、维生素8-10份、咸味剂3-5份、酸味剂1-3份。
2.根据权利要求1所述的一种虾青素抗疲劳运动饮料,其特征在于,所述的虾青素是指虾青素微乳剂。
3.根据权利要求2所述的一种虾青素抗疲劳运动饮料,其特征在于,所述的甜味剂是指白糖和葡萄糖混合物,混合比例为2:1。
4.根据权利要求3所述的一种虾青素抗疲劳运动饮料,其特征在于,所述的维生素是指维生素B12。
5.根据权利要求4所述的一种虾青素抗疲劳运动饮料,其特征在于,所述的咸味剂是指氯化钠、氯化钾、氯化钙混合物,混合比例为2:1:1。
6.根据权利要求5所述的一种虾青素抗疲劳运动饮料,其特征在于,所述的酸味剂是指柠檬酸。
7.根据权利要求1所述的一种虾青素抗疲劳运动饮料,其特征在于,其制备方法包括以下步骤:
(1)原料制备:将虾青素制备成微乳剂;将白糖和葡萄糖混合制备成甜味剂;将氯化钠、氯化钾、氯化钙混合制备成咸味剂;
(2)将虾青素微乳剂、甜味剂、咸味剂、酸味剂、支链氨基酸、维生素混合均匀,加入水搅拌均匀,制备成饮料;
(3)将饮料灭菌灌装制得成品。
