The processing technology of the cold-soluble burdock flower and fruit instant tea provided by the invention comprises the steps of fully mixing and extracting burdock tea powder, water, pectinase, tannase and additive powder by using mixing and stirring equipment, filtering by adopting ultrafiltration, improving the instant property of the burdock tea, and adding pollen or fruit powder in the preparation process to improve the taste of the burdock tea; the blending and stirring equipment adopts bidirectional shaking and stirring to operate simultaneously, so that the mixing uniformity of the solution is enhanced.
