Abstract

一种含碘酱油,其特征在于它是易溶于水的碘化合物或海带浸取液与普通酱油的配制物,其中含碘量为30~300mg/kg。本发明的含碘酱油中碘非常稳定,并且均匀分布,在生产、销售、使用过程中没有流失问题。用海带浸取液制造价格便宜,营养丰富,其中除了含人体容易吸收的碘外,还含有海藻酸钠、多种维生素、氨基酸、对人体有益的矿物质、微量元素,且无毒副作用。

含碘酱油及其制造方法
本发明涉及一种人类生活必需的调味品。
碘缺乏病其中包括甲状腺肿大、甲状腺机能亢进、智力障碍等给国家和民族造成了严重危害,已引起我国政府的高度重视,并拔出巨款在各地推行含碘食盐。食盐是人类生活必需的调味品,推行含碘食盐无疑有最广泛的应用价值,但由于固态的碘及其无机盐的不稳定性,从生产含碘食盐经销售到消费食用的过程中,造成贵重的碘大量流失。据了解,生产含碘食盐时含碘量按60mg/Kg投加,销售时含碘量仅为30mg/Kg,到消费者开袋时只含有20~15mg/Kg,而在食用过程中流失更快,碘的有效利用只有10~15%,造成巨大的浪费,并且将碘与食盐这两种固料混合均匀极难,这显然要影响到含碘食盐的应用效果。
本发明的目的在于提供一种含碘酱油及其制造方法,这种酱油能弥补含碘食盐的上述不足。
本发明的含碘酱油是易溶水的碘化合物或海带浸取液与普通酱油的配制物,其中碘含量为30~300mg/Kg。
制造含碘酱油的方法是先取含碘高的海带,去砂及其它附着物后用3~7倍的水浸泡,将浸泡液过滤、浓缩即得海带浸取液,再将此浸取液与普通酱油配制成含碘酱油。
本发明的含碘酱油中碘非常稳定,并且均匀分布,在生产、销售、使用过程中没有流失问题。用海带浸取液制造价格便宜,营养丰富,其中除了含人体容易吸收的碘外,还含有海藻酸钠、多种维生素、氨基酸、对人体有益的矿物质,微量元素,且无毒副作用。
实施例
取含碘高的淡干海带10Kg,去砂及其它附着物后用40Kg水浸泡30分钟,再用20Kg水浸泡20分钟,把浸取液合并后过滤浓缩至10Kg,每公斤浓缩液含碘3g左右。在每公斤酱油中加入100g浓缩液,制成含碘量为300mg/Kg的高含碘酱油;在每公斤酱油中加入50g浓缩液,制成含碘量为150mg/Kg的普通含碘酱油;在每公斤酱油中加入10g浓缩液,制成含碘量为30mg/Kg的低含碘酱油。
也可以用易溶于水的碘化物例如碘酸钾等代替海带浸取液制造含碘酱油。

Claims (2)

1.一种含碘酱油,其特征在于它是易溶于水的碘化合物或海带浸取液与普通酱油的配制物,其中含碘量为30~300mg/Kg。
2.一种实施权利要求1的制造方法,其特征在于先取含碘高的海带,去砂及其它附着物质后,用3~7倍的水浸泡,将浸泡液过滤、浓缩即得海带浸取液,再将此浸取液与普通酱油配制成含碘酱油。
