Abstract
本发明公开一种全营养配方粉及其制备方法和应用,属于食品领域,具体配方包括:蛋白质0.5‑3.5份,脂肪0.4‑2.0份,碳水化合物1.8‑6.0份,复合维生素0.05‑0.5份,复合矿物质0.05‑0.5份,膳食纤维0.1‑1.0份,益生菌0.05‑1.0份。本发明通过原辅料的设计、筛选与科学配比,促使营养物质全面均衡且有利于人体吸收,并且配方科学、流动性和冲调性好、食用方便、口感良好等,能够作为单一营养来源满足进食受限、消化吸收障碍、代谢紊乱或特定疾病状态人群的营养需求,并且能够促进消化系统更为健康,也可作为营养补充使用,具有广泛的推广应用市场前景。
Description
技术领域
本发明属于食品领域,具体涉及一种全营养配方粉及其制备方法 和应用。
背景技术
特殊医学用途配方食品(简称“特医食品”)是指为满足进食受限、 消化吸收障碍、代谢紊乱或特定疾病状态人群对营养素或膳食的特殊 需要,专门加工配制而成的配方食品。需在医生或临床营养师的指导 下单独食用或与其他食品配方混合食用。
特医食品有助于解决老龄化与慢性病患病率上升所带来的营养 相关问题;有助于改善病人营养不良状态,具有免疫调控、减轻氧化 应激、维护胃肠道功能与结构、降低炎症反应、促进伤口愈合等功能, 最终能够对患者起到提高生存率、缩短住院时间、减少相关花费、减 少再住院次数、减少并发症等作用,因此,发展特医食品是国民营养 提升的一个重要的环节和举措。
在全营养配方食品、特定全营养配方食品、非全营养配方食品和 特殊医学用途婴儿配方食品中,全营养配方食品可作为单一营养来源 满足进食受限、消化吸收障碍、代谢紊乱等人群的营养需求,并且能 够促进消化系统更为健康。因此,目前已注册且获批通过58款特医 食品中,全营养配方食品就达18款,占比较高。然而,目前获批的 全营养配方粉虽然涵盖多种营养物质,但在膳食纤维、益生菌等方面 要求较低,存在诸多的不足且大多难以做到使人体充分吸收。
发明内容
基于此,本发明旨在提供一种全营养配方粉及其制备方法和应用, 通过原辅料的设计、筛选与科学配比,促使该含膳食纤维和益生菌的 全营养配方食品营养物质全面均衡且有利于人体吸收,该全营养配方 粉营养全面均衡、配方科学、流动性和冲调性好、食用方便、口感良 好。
为实现上述技术目的,本发明提供如下技术方案:
技术方案一:一种全营养配方粉,按质量份数计,包括以下组分:
蛋白质0.5-3.5份,脂肪0.4-2.0份,碳水化合物1.8-6.0份, 复合维生素0.05-0.5份,复合矿物质0.05-0.5份,膳食纤维 0.1-1.0份,益生菌0.05-1.0份。
优选的,所述蛋白质为乳清蛋白、酪蛋白、脱脂乳粉、大豆分离 蛋白和胶原蛋白中的一种或多种。乳清蛋白还可以为乳清分离蛋白或 乳清浓缩蛋白。
优选的,所述脂肪为玉米油、大豆油、葵花籽油、菜籽油、椰子 油、亚麻籽油、红花籽油和中链甘油三酯中的一种或多种。
优选的,所述碳水化合物为麦芽糊精、葡萄糖浆、乳糖、蔗糖、 白砂糖、葡萄糖和果糖中的一种或多种。
优选的,所述复合维生素包括维生素A、维生素D、维生素E、 维生素K1、维生素B1、维生素B2、维生素B6、维生素B12、烟酸 (烟酰胺)、叶酸、泛酸和生物素。
优选的,所述复合矿物质包括钠、钾、铜、镁、铁、锌、锰、钙、 磷、碘、氯和硒。
优选的,所述膳食纤维为低聚半乳糖、低聚果糖、菊粉、多聚果 糖、聚葡萄糖、变性淀粉、变性糊精和酵母β-葡聚糖中的一种或多 种。
优选的,所述益生菌为青春双歧杆菌、动物双歧杆菌(乳双歧杆 菌)、两歧双歧杆菌、短双歧杆菌、婴儿双歧杆菌、长双歧杆菌、嗜 酸乳杆菌、干酪乳杆菌、卷曲乳杆菌、保加利亚乳杆菌、德氏乳杆菌 乳亚种、发酵乳杆菌、格氏乳杆菌、瑞士乳杆菌、约氏乳杆菌、副干酪乳杆菌、植物乳杆菌、罗伊氏乳杆菌、鼠李糖乳杆菌、唾液乳杆菌、 嗜热链球菌、凝结芽孢杆菌、乳酸乳球菌乳酸亚种、乳酸乳球菌乳脂 亚种、乳酸乳球菌双乙酰亚种和清酒乳杆菌中的一种或多种。
技术方案二:一种全营养配方粉的制备方法,包括以下步骤:
称取原料,将蛋白质、碳水化合物、复合维生素、复合矿物质、 膳食纤维和益生菌分别粉碎并过60目筛,然后放入混料机中,再加 入脂肪,混合均匀,包装。
技术方案三:一种全营养配方粉在特殊医学用途配方食品中的应 用。
与现有技术相比,本发明的有益效果为:
本发明通过原辅料的设计、筛选与科学配比,促使营养物质全面 均衡且有利于人体吸收,并且配方科学、流动性和冲调性好、食用方 便、口感良好等,能够作为单一营养来源满足进食受限、消化吸收障 碍、代谢紊乱或特定疾病状态人群的营养需求,并且能够促进消化系 统更为健康,也可作为营养补充使用,具有广泛的推广应用市场前景。

本发明中,复合维生素中的各成分含量相同,复合矿物质中的各 成分含量相同。
实施例1
乳清蛋白粉2.0份、大豆分离蛋白0.5份、混合脂肪粉1.5份 (玉米油、大豆油、葵花籽油、菜籽油和中链甘油三酯添加质量相 同)、麦芽糊精4.0份、葡萄糖0.5份、果糖0.5份、复合维生素0.2 份、复合矿物质0.2份、低聚半乳糖0.1份、低聚果糖0.1份、菊粉0.1 份、乳双歧杆菌0.1份、两歧双歧杆菌0.1份和嗜酸乳杆菌0.1份。
制备方法:
1)准确称量上述份量的原辅料,除混合脂肪粉外,其它原辅料 的细度统一在60目以上;
2)按配方将原辅料通过混料机分级混料均匀;
3)将物料称重装袋/装罐包装。
实施例2
乳清蛋白粉2.0份、大豆分离蛋白0.5份、混合脂肪粉1.5份 (玉米油、大豆油、葵花籽油、菜籽油和中链甘油三酯添加质量相 同)、麦芽糊精4.0份、葡萄糖0.5份、果糖0.5份、复合维生素0.2 份、复合矿物质0.2份、低聚半乳糖0.1份、低聚果糖0.1份、菊粉0.1 份、嗜酸乳杆菌0.1份、植物乳杆菌0.1份和鼠李糖乳杆菌0.1份。
制备方法同实施例1。
实施例3

乳清蛋白粉2.0份、大豆分离蛋白0.5份、混合脂肪粉1.5份 (玉米油、大豆油、葵花籽油、菜籽油和中链甘油三酯添加质量相 同)、乳糖2.0份、白砂糖2.0份、果糖2份、复合维生素0.5份、 复合矿物质0.05份、酵母β-葡聚糖0.5份、变性糊精0.5份、乳酸 乳球菌乳脂亚种1.0份。
制备方法同实施例1。
实施例7
脱脂乳粉0.5份、亚麻籽油0.4份、葡萄糖浆1.8份、复合维生 素0.05份、复合矿物质0.5份、变性淀粉0.1份、短双歧杆菌0.02 份和保加利亚乳杆菌0.3份。
制备方法同实施例1。
试验例:
选择进食受限、消化吸收障碍、代谢紊乱和特定疾病状态的小鼠 各70只,分别分成7组,每组10只,将实施例1-7制备的全营养配 方粉分别给予小鼠食用一段时间后,小鼠状态健康状态良好,回复正 常体征,说明本发明制备的全营养配方粉确有满足进食受限、消化吸 收障碍、代谢紊乱或特定疾病状态人群的营养需求的效果,能够促进 身体回复健康。

现有技术中常见的全营养配方粉。
结果发现,对比例1-7配方制备的全营养配方粉和对照组的配方 粉在小鼠食用一段时间后健康状况并未好转,或者出现健康状况好转 时长较长的现象,说明本发明制备的全营养配方粉是所有组分相辅相 成最终导致的结果,而非某一种物质单独发挥的作用。

Claims (10)
1.一种全营养配方粉,其特征在于,按质量份数计,包括以下组分:
蛋白质0.5-3.5份,脂肪0.4-2.0份,碳水化合物1.8-6.0份,复合维生素0.05-0.5份,复合矿物质0.05-0.5份,膳食纤维0.1-1.0份,益生菌0.05-1.0份。
2.根据权利要求1所述的全营养配方粉,其特征在于,所述蛋白质为乳清蛋白、酪蛋白、脱脂乳粉、大豆分离蛋白和胶原蛋白中的一种或多种。
3.根据权利要求1所述的全营养配方粉,其特征在于,所述脂肪为玉米油、大豆油、葵花籽油、菜籽油、椰子油、亚麻籽油、红花籽油和中链甘油三酯中的一种或多种。
4.根据权利要求1所述的全营养配方粉,其特征在于,所述碳水化合物为麦芽糊精、葡萄糖浆、乳糖、蔗糖、白砂糖、葡萄糖和果糖中的一种或多种。
5.根据权利要求1所述的全营养配方粉,其特征在于,所述复合维生素包括维生素A、维生素D、维生素E、维生素K1、维生素B1、维生素B2、维生素B6、维生素B12、烟酸、叶酸、泛酸和生物素。
6.根据权利要求1所述的全营养配方粉,其特征在于,所述复合矿物质包括钠、钾、铜、镁、铁、锌、锰、钙、磷、碘、氯和硒。
7.根据权利要求1所述的全营养配方粉,其特征在于,所述膳食纤维为低聚半乳糖、低聚果糖、菊粉、多聚果糖、聚葡萄糖、变性淀粉、变性糊精和酵母β-葡聚糖中的一种或多种。
8.根据权利要求1所述的全营养配方粉,其特征在于,所述益生菌为青春双歧杆菌、动物双歧杆菌、两歧双歧杆菌、短双歧杆菌、婴儿双歧杆菌、长双歧杆菌、嗜酸乳杆菌、干酪乳杆菌、卷曲乳杆菌、保加利亚乳杆菌、德氏乳杆菌乳亚种、发酵乳杆菌、格氏乳杆菌、瑞士乳杆菌、约氏乳杆菌、副干酪乳杆菌、植物乳杆菌、罗伊氏乳杆菌、鼠李糖乳杆菌、唾液乳杆菌、嗜热链球菌、凝结芽孢杆菌、乳酸乳球菌乳酸亚种、乳酸乳球菌乳脂亚种、乳酸乳球菌双乙酰亚种和清酒乳杆菌中的一种或多种。
9.一种根据权利要求1-8任一项所述的全营养配方粉的制备方法,其特征在于,包括以下步骤:
称取原料,将蛋白质、碳水化合物、复合维生素、复合矿物质、膳食纤维和益生菌分别粉碎并过60目筛,然后放入混料机中,再加入脂肪,混合均匀,包装。
10.一种利用权利要求1-8任一项所述的全营养配方粉在特殊医学用途配方食品中的应用。
