技术领域
本发明属于护肤品技术领域,具体涉及一种谷物发酵液及其制备方法和应用。
背景技术
人类可以食用的谷物繁多,资源丰富,既是重要的粮食资源,又有重要的药用价值。在我国,谷物的种类繁多。
藜麦是藜科藜属植物。穗部可呈红、紫、黄,植株形状类似灰灰菜,成熟后穗部类似高粱穗。原产于南美洲安第斯山脉的哥伦比亚、厄瓜多尔、秘鲁等中高海拔山区。具有一定的耐旱、耐寒、耐盐性,生长范围约为海平面到海拔4500米左右的高原上,最适的高度为海拔3000-4000米的高原或山地地区。藜麦富含的维生素、多酚、类黄酮类、皂苷和植物甾醇类物质具有多种健康功效。藜麦具有高蛋白,其所含脂肪中不饱和脂肪酸占83%,还是一种低果糖低葡萄糖的食物能在糖脂代谢过程中发挥有益功效。
燕麦是禾本科、燕麦属一年生草本植物。90%以上燕麦脂肪含量在5-9%,相当于大米、白面的4-5倍,居所有谷物类之首。燕麦脂肪80%为不饱和脂肪酸,主要是单不饱和脂肪酸、亚油酸和亚麻酸,其中亚油酸占脂肪含量的38.1%-52.0%。亚油酸是人体最重要的必需脂肪酸,在人体内具有重要的生理功能,可降低胆固醇在心血管中的积累。燕麦中蛋白质含量十分丰富(15.6%),是大米、小麦粉的1.6-2.3倍,在禾谷类粮食中居首位。燕麦蛋白营养价值很高,含有18种氨基酸,其中8种是人体必需氨基酸。8种必需氨基酸不仅含量丰富且配比合理,接近FAO/WHO推荐的营养模式,人体利用率高。其中燕麦中赖氨酸含量是小麦、稻米的2倍以上,色氨酸含量是小麦、稻米的1.7倍以上。因此,补充燕麦食品,能弥补中国膳食结构所导致的“赖氨酸缺乏症”。燕麦含有丰富的维生素包括维生素B1、维生素B2,较多的维生素E及尼克酸、叶酸等。其中维生素B1、B2较大米之含量高,维生素E的含量也高于面粉和大米。燕麦的矿物质含量也很丰富,包括钙、铁、磷、镁、锌、铜、硒等。特别是钙的含量明显高于小麦粉、稻米、小米、荞麦面等。燕麦中硒含量也很高,相当于小麦的3.72倍,玉米的7.9倍,大米的34.8倍。
高粱是禾本科一年生草本植物。高粱米中的蛋白质以醇溶性蛋白质为多,色氨酸、赖氨酸等人体必需的氨基酸较少,是一种不完全的蛋白质,人体不易吸收。如将其与其他粮食混合食用,则可提高营养价值。高粱米蛋白质中赖氨酸含量在谷物中最低,因而蛋白质的质量也最差,而且尼克酸含量也不如玉米多,但却能为人体所吸收,因此以高粱为主食的地区很少发生“癞皮病”。高粱米含矿物质与维生素,矿物质中钙、磷含量与玉米相当,磷约40-70%,维生素中B1、B6含量与玉米相同,泛酸、烟酸、生物素含量多于玉米,但烟酸和生物素的利用率低。高粱米脂肪含量3%,略低于玉米,脂肪酸中饱和脂肪酸也略高,亚油酸含量也较玉米稍低,加工的副产品中粗脂肪含量较高,子粒中粗脂肪的含量较少,仅为3.6%左右。
有机东北大米是粳米,主要种植于黑龙江省、吉林省、辽宁省的广大平原地区,种植在极其肥沃的黑土地中,吸收了足够的氮、磷、钾等多种矿物元素,阳光雨露充足,又有纯净无污染的灌溉用水,生长周期一般五个月左右。
有机大豆是豆科大豆属的一年生草本。大豆不单单指黄豆,它还包含黑豆和青豆。大豆营养全面,含量丰富,其中蛋白质的含量比猪肉高2倍,是鸡蛋含量的2.5倍。蛋白质的含量不仅高,而且质量好。大豆蛋白质的氨基酸组成和动物蛋白质近似,其中氨基酸比较接近人体需要的比值,所以容易被消化吸收。如果把大豆和肉类食品、蛋类食品搭配着来吃,其营养可以和蛋、奶的营养相比,甚至还超过蛋和奶的营养。大豆脂肪也具有很高的营养价值,这种脂肪里含有很多不饱和脂肪酸,容易被人体消化吸收。而且大豆脂肪可以阻止胆固醇的吸收,所以大豆对于动脉硬化患者来说,是一种理想的营养品。豆渣中的膳食纤维对促进良好的消化和排泄固体废物有着举足轻重的作用。适量地补充纤维素,可使肠道中的食物增大变软,促进肠道蠕动,从而加快了排便速度,防止便秘和降低肠癌的风险。同时,膳食纤维具有明显的降低血浆胆固醇、调节胃肠功能及胰岛素水平等功能。大豆粕是大豆用低温(40-60℃)浸提法提取油脂后的残粕副产品,呈粗粉状。因没有受到温度,大豆的抗胰蛋白酶、脲酶、血球凝集素、皂素、甲状腺肿诱发因子不会被破坏。大豆饼粕是使用最广、用量最多的植物性蛋白质原料。
然而,目前我国谷物的开发主要集中于食品、油料和其他化工原料的提取,均属于谷物的浅加工,技术含量低,产品附加值低,尚没有对谷物进行深度加工,高效综合利用谷物中的营养物质。
有机谷物具有生长环境纯净、生命力强、活性成分含量高等优点,在欧美国家已成为被广泛认可的护肤品领域的重要功能性原料,众多一线护肤品牌均开发了谷物元素类护肤品,然而目前该类产品的提取多是单一成分的发酵,该类方法不仅利用率低,更重要的是没有有效利用多种谷物的营养成分互补,无法满足护肤产品的功效需求。
发明内容
本发明针对现有技术的不足,提供了一种谷物发酵液,该谷物发酵液由特定组成的谷物原料经发酵后制得。将该谷物发酵液用于护肤品,如面膜精华液中,解决了单一谷物发酵液营养成分不全面,护肤效果不佳,以及不良反应强烈的技术问题。
为此,本发明第一方面提供了一种谷物发酵液,以重量份数计,其谷物原料组成包括以下组分:

本发明第二方面提供了一种如本发明第一方面所述谷物发酵液的制备方法,其包括以下步骤:
S1,将包括高粱、大米、大豆、藜麦、燕麦、薏苡仁和绿豆的谷物原料与水混合后进行浸泡,获得浸泡后的谷物原料;
S2,对所述浸泡后的谷物原料进行熟化,冷却后获得谷物培养基;
S3,在所述谷物培养基中接入活化好的发酵菌种进行发酵,获得发酵液;
S4,调节所述发酵液的pH值,然后进行灭菌,获得所述谷物发酵液。
在本发明的一些实施方式中,步骤S1中,所述浸泡的时间为3~5小时。
在本发明的另一些实施方式中步骤S2中,所述熟化的温度为90~110℃,熟化的时间为1~3小时。
在本发明的一些实施方式中,步骤S2中,所述冷却在无菌环境中进行。
在本发明的另一些实施方式中,步骤S2中,以谷物培养基的总重量计,所述谷物培养基中谷物原料的含量为20~40wt%。
在本发明的一些实施方式中,步骤S3中,以谷物培养基的总重量计,所述发酵菌种的接种量为0.3~8wt%,优选为3~5wt%。

70~90%的水,1.5~2.5%的甘油,2.5~3.5%的1,3-丙二醇,0.05~0.15%的尿囊素,0.045~0.055%的聚谷氨酸,0.045~0.055%的透明质酸钠,0.45~0.55%的海藻糖,0.15~0.25%的羟乙基纤维素,0.05~0.15%的汉生胶,0.5~1.5%的燕麦葡聚糖,0.5~10%的所述谷物发酵液,0.045~0.055%的7草提取液,0.045~0.055%的积雪草苷,0.045~0.055%的甘草酸二钾,0.25~0.35%的烟酰胺,0.15~0.25%的乙酰壳糖胺,0.5~1.5%的马齿苋提取液,1.5~2.5%的植物防腐剂和pH值调节剂。
在本发明的一些优选的实施方式中,以质量百分比计,所述面膜精华液中所述谷物发酵液的含量为4~10%,更优选为6~8%。
在本发明的一些实施方式中,所述面膜精华液的pH值为5.5~6.5。
本发明的有益效果为:本发明所述谷物发酵液由特定组成的谷物原料经发酵后制得,该谷物发酵液相较于单一谷物发酵液产品的功效更好。将该谷物发酵液用于护肤品,如面膜精华液中,适用性更强更温和,且不良反应率更低。
具体实施方式
下面将对本申请进行详细说明。
如前所述,现有的谷物元素类护肤品中的多是单一谷物发酵液,而单一谷物发酵液营养成分不全面,护肤效果不佳,且具有不良反应强烈的副作用。
本申请的发明人通过研究发现,通过将特定含量的不同谷物(高粱20~60份,大米10~40份,大豆5~20份,藜麦1~20份,燕麦1~20份,薏苡仁1~20份,绿豆1~20份)进行复配后,由该谷物原料发酵获得的谷物发酵液在护肤面膜配方中适用性更强更温和,且不良反应率更低。

S2,对所述浸泡后的谷物原料进行熟化,冷却后获得谷物培养基;
S3,在所述谷物培养基中接入活化好的发酵菌种进行发酵,获得发酵液;
S4,调节所述发酵液的pH值,然后进行灭菌,获得所述谷物发酵液。
在本发明的一些具体实施方式中,步骤步骤S1中,所述谷物原料包括高粱35~45份,大米10~40份,大豆5~20份,藜麦1~20份,燕麦1~20份,薏苡仁1~20份和绿豆1~20份。

(3)在所述谷物培养基中接入0.3~8wt%的活化好的发酵菌种,并于28~45℃下发酵120~180小时,获得发酵液;
(4)将所述发酵液的pH值调节至4.0~6.5,然后于75~110℃下灭菌20~60分钟,获得所述谷物发酵液。
本发明第三方面涉及一种如本发明第一方面所述的谷物发酵液或第二方面所述方法制备的谷物发酵液在面膜精华液中的应用。

在本发明的一些具体实施方式中,以质量百分比计,所述面膜精华液中所述谷物发酵液的含量可以为0.5%、1%、2%、3%、4%、5%、6%、7%、8%、9%或10%。在本发明的一些优选的实施方式中,以质量百分比计,所述面膜精华液中所述谷物发酵液的含量为4~10%。在本发明的一些更优选的实施方式中,以质量百分比计,所述面膜精华液中所述谷物发酵液的含量为6~8%。
本发明中,所采用的聚谷氨酸的平均分子量为50万-70万。
本发明中,所采用的燕麦葡聚糖为燕麦β-葡聚糖。
本发明中所述“7草提取液”是指7种混合草药(即光果甘草根、积雪草、母菊花、茶叶、虎杖根、迷迭香叶和黄芩)的提取液,具有舒缓刺激、修护肌肤等作用。
本发明中所述“植物防腐剂”是指从自然界有许多植物的叶子的香精油部分(如艾叶)、花和花芽(如紫苏、丁香)、球茎(如大蒜和洋葱)、皮(如柚果)、根(如阿魏)、果实(如胡椒和花椒)部位、或植物的其他部分提取出的天然防腐抑菌物质。
在本发明的一些具体实施方式中,所述pH值调节剂可以为氢氧化钾溶液。
在本发明的一些实施方式中,所述面膜精华液的pH值为5.5~6.5。在本发明的一些具体实施方式中,所述面膜精华液的pH值为6.0。
实施例
为使本发明更加容易理解,下面将结合实施例来进一步详细说明本发明,这些实施例仅起说明性作用,并不局限于本发明的应用范围。本发明中所使用的原料或组分若无特殊说明均可以通过商业途径或常规方法制得。
实施例1
谷物培养基的制备:将包括高粱40份,大米25份,大豆15份,藜麦10份,燕麦10份,薏苡仁10份和绿豆10份的谷物原料与3倍质量的纯净水混合后,浸泡4小时,获得浸泡后的谷物原料;将所述浸泡后的谷物原料于100℃下蒸煮2小时进行熟化,然后于无菌环境中冷却至室温,获得谷物培养基,待用;
发酵:在所述谷物培养基中接入4wt%的活化好的啤酒酵母,并于37℃下发酵150小时,获得发酵液;将所述发酵液的pH值调节至5.0,然后于110℃下灭菌20分钟,获得谷物发酵液1。
实施例2
谷物培养基的制备:将包括高粱20份,大米40份,大豆20份,藜麦10份,燕麦10份,薏苡仁10份和绿豆10份的谷物原料与3倍质量的纯净水混合后,浸泡4小时,获得浸泡后的谷物原料;将所述浸泡后的谷物原料于100℃下蒸煮2小时进行熟化,然后于无菌环境中冷却至室温,获得谷物培养基,待用;
发酵:在所述谷物培养基中接入4wt%的活化好的啤酒酵母,并于37℃下发酵150小时,获得发酵液;将所述发酵液的pH值调节至5.0,然后于110℃下灭菌20分钟,获得谷物发酵液2。
实施例3
谷物培养基的制备:将包括高粱60份,大米10份,大豆5份,藜麦10份,燕麦10份,薏苡仁10份和绿豆10份的谷物原料与3倍质量的纯净水混合后,浸泡4小时,获得浸泡后的谷物原料;将所述浸泡后的谷物原料于100℃下蒸煮2小时进行熟化,然后于无菌环境中冷却至室温,获得谷物培养基,待用;
发酵:在所述谷物培养基中接入4wt%的活化好的啤酒酵母,并于37℃下发酵150小时,获得发酵液;将所述发酵液的pH值调节至5.0,然后于110℃下灭菌20分钟,获得谷物发酵液3。
对比例1
谷物培养基的制备:将大米与3倍质量的纯净水混合后,浸泡4小时,获得浸泡后的谷物原料;将所述浸泡后的谷物原料于100℃下蒸煮2小时进行熟化,然后于无菌环境中冷却至室温,获得谷物培养基,待用;
发酵:在所述谷物培养基中接入4wt%的活化好的啤酒酵母,并于37℃下发酵150小时,获得发酵液;将所述发酵液的pH值调节至5.0,然后于110℃下灭菌20分钟,获得谷物发酵液4。
实施例4
采用实施例1-3和对比例4制备的谷物发酵液制备面膜精华液,其中面膜精华液的组成配比见表1。

实施例5
将上述实施例4中的9种方案的面膜精华液分别制备成相应的面膜。选择315名年龄在20~60岁之间的受试者(男女不限)随机分成9组,每组35名。每组受试者分别选用一种面膜,每周2次敷膜,每次20~30分钟后去除面膜,清洗面部即可。连续使用2周后,记录使用后情况。结果见表2。

从表2可知,本发明所述的谷物发酵液相较于单一谷物发酵液的适用性更强更温和,且不良反应率更低。尤其是当面膜精华液中本发明所述谷物发酵液的含量为4~10%时,面膜的效果更好。

1.一种谷物发酵液,以重量份数计,其谷物原料组成包括以下组分:
高粱35~45份;
大米20~30份;
大豆10~15份;
藜麦1~20份;
燕麦1~20份;
薏苡仁1~20份;
绿豆1~20份;
其中,所述谷物发酵液中采用的发酵菌种选自啤酒酵母。
2.根据权利要求1所述的谷物发酵液,其特征在于,以重量份数计,藜麦的用量为10~15份,和/或燕麦的用量为10~15份,和/或薏苡仁的用量为10~15份,和/或绿豆的用量为10~15份。
3.根据权利要求1或2所述的谷物发酵液,其特征在于,所述谷物发酵液的pH值为4.0~6.5。
4.一种如权利要求1~3中任意一项所述谷物发酵液的制备方法,其包括以下步骤:
S1,将包括高粱、大米、大豆、藜麦、燕麦、薏苡仁和绿豆的谷物原料与水混合后进行浸泡,获得浸泡后的谷物原料;
S2,对所述浸泡后的谷物原料进行熟化,冷却后获得谷物培养基;
S3,在所述谷物培养基中接入活化好的发酵菌种进行发酵,获得发酵液;其中,所述发酵菌种选自啤酒酵母;
S4,调节所述发酵液的pH值,然后进行灭菌,获得所述谷物发酵液。
5.根据权利要求4所述的方法,其特征在于,步骤S1中,所述浸泡的时间为3~5小时;和/或
步骤S2中,所述熟化的温度为90~110℃,熟化的时间为1~3小时。
6.根据权利要求4或5所述的方法,其特征在于,步骤S2中,所述冷却在无菌环境中进行;和/或
以谷物培养基的总重量计,所述谷物培养基中谷物原料的含量为20~40wt%。
7. 根据权利要4或5所述的方法,其特征在于,步骤S3中,以谷物培养基的总重量计,所述发酵菌种的接种量为0.3~8wt%。
8. 根据权利要7所述的方法,其特征在于,步骤S3中,以谷物培养基的总重量计,所述发酵菌种的接种量为3~5 wt%
9. 根据权利要求4或5所述的方法,其特征在于,步骤S3中,所述发酵的温度为28~45℃,发酵的时间为120~180小时。
10.根据权利要求4或5所述的方法,其特征在于,步骤S4中,调节所述发酵液的pH值至4.0~6.5;和/或
所述灭菌的温度为75~110℃,灭菌的时间为20~60分钟。
11.一种如权利要求1~3中任意一项所述的谷物发酵液或权利要求4~10中任意一项所述方法制备的谷物发酵液在制备面膜精华液中的应用。
12.根据权利要求11所述的应用,其特征在于,以质量百分比计,所述面膜精华液包括以下组分:
70~90%的水,1.5~2.5%的甘油,2.5~3.5%的1,3-丙二醇,0.05~0.15%的尿囊素,0.045~0.055%的聚谷氨酸,0.045~0.055%透明质酸钠,0.45~0.55%的海藻糖,0.15~0.25%的羟乙基纤维素,0.05~0.15%的汉生胶,0.5~1.5%的燕麦葡聚糖,0.5~10%的所述谷物发酵液,0.045~0.055%的七草提取液,0.045~0.055%的积雪草苷,0.045~0.055%的甘草酸二钾,0.25~0.35%的烟酰胺,0.15~0.25%的乙酰壳糖胺,0.5~1.5%的马齿苋提取液,1.5~2.5%的植物防腐剂和pH值调节剂;
其中,所述七草提取液为光果甘草根、积雪草、母菊花、茶叶、虎杖根、迷迭香叶和黄芩这7种混合草药的提取液。
13.根据权利要求12所述的应用,其特征在于,以质量百分比计,所述面膜精华液中所述谷物发酵液的含量为4~10%;
和/或,所述面膜精华液的pH值为5.5~6.5。
14.根据权利要求13所述的应用,其特征在于,以质量百分比计,所述面膜精华液中所述谷物发酵液的含量为6~8%。
