Abstract
本发明属于食品加工领域,尤其涉及一种具有减肥降脂作用的益生菌固体饮料及其制备方法。本发明具有减肥降脂作用的益生菌固体饮料,主要以复合益生菌粉、益生元粉、膳食纤维、果粉和木糖醇为主要原料,具有增殖肠道有益菌、维护肠道健康、缓解便秘、减肥降体脂的作用。

本发明属于食品加工领域,尤其涉及一种具有减肥降脂作用的益生菌固体饮料及其制备工艺。
背景技术
2016年,英国著名医学杂志《柳叶刀》发表全球成年人体重调查报告,调查发现中国男性肥胖人数4320万人,女性肥胖人数4640万人,总人数高居世界第一。因此,中国超越美国,成为全球肥胖人口最多的国家。其中原因可归结于,随着人们生活水平的提高,高脂肪、高热量等不健康饮食成了普遍现象;摄入足够能量后,缺乏运动,脂肪蓄积,导致肥胖。肥胖不仅影响身体形态、行动迟缓,更严重的是高血脂、高血压等并发症对身体带来的伤害。与正常人相比,肥胖患者的肠道菌群结构与组成显著不同。在减肥的过程中,肠道双歧杆菌与乳杆菌的数量呈现增加的过程。另有研究显示,肥胖相关菌群改变宿主的能量获取、胰岛素抵抗、炎症及脂肪堆积,其代谢产物可调节中枢食欲及食物奖励信号。所以调节肠道菌群成为一种减脂减重的重要方法。
中国专利申请(CN104473183A)公开了一种减肥益生菌片剂及其制备方法,其主要是通过添加大量益生菌群将植物纤维转化为可溶性纤维素,增强了纤维素的生理活性,进而增加肠道益生菌菌群种类,增强内源和外源益生菌在人体肠道内的定植能力及定植时间,有效抑制肠道有害菌尤其是革兰氏阴性菌的生长及繁殖,从而达到减肥的目的。为了实现上述目的,其减肥益生菌片剂包括11种益生菌,分别为:植物乳杆菌45-55份,长双歧杆菌35-45份,两歧双歧杆菌25-35份,婴儿双歧杆菌25-35份,青春双歧杆菌15-20份,保加利亚乳杆菌15-20份,嗜酸乳杆菌10-15份,干酪乳杆菌8-10份,嗜热链球菌8-10份、酿酒酵母5-10份,产朊假丝酵母菌4-6份。虽然,该益生菌片剂能够起到减肥的效果,但是其片剂中所用微生物种类多,增加了益生菌购买及培养成本;并且在该片剂中还有植物提取物、蛋白粉、茶叶提取物、中草药提取物的加入,这无疑也大大增加了生产成本,不利于产业化生产。
因此,提供一种成分简单、生产成本低,易于产业化生产的减肥产品是目前所亟需的。
发明内容
本发明目的之一是提供一种具有减肥降脂作用的益生菌固体饮料。本发明固体饮料中仅含长双歧杆菌、短双歧杆菌和嗜酸乳杆菌三种益生菌;将三种益生菌进行优化组合后,与本发明固体饮料中其它成分相互配合,能够有效减肥、减少便秘,并且本发明益生菌固体饮料还具有显著的降体脂效果。
本发明的另一目的在于提供一种益生菌固体饮料的制备工艺。将不同的营养物质优化复配后,使用混料机进行干混,制得可常温储存、稳定性好、具有抗肥胖作用的益生菌固体饮料产品。
本发明通过以下技术方案实现:
本发明第一个方面,提供一种具有减肥降脂作用的益生菌固体饮料,包括以下成分及其重量份:复合益生菌粉5~15份、益生元粉40~60份、膳食纤维26~48份、果粉6~16份和木糖醇6~8份。
进一步地,所述复合益生菌粉由以下益生菌冻干粉及其重量百分比组成:长双歧杆菌30~40%、短双歧杆菌30~40%和嗜酸乳杆菌20~40%。
进一步地,所述复合益生菌粉由以下益生菌冻干粉及其重量百分比组成:长双歧杆菌40%、短双歧杆菌40%和嗜酸乳杆菌20%。
进一步地,长双歧杆菌粉活菌数为1×1011cfu/g,短双歧杆菌活菌数为3.2×1011cfu/g,嗜酸乳杆菌活菌数为2×1011cfu/g。
长双歧杆菌是人体肠道中天然存在的乳杆菌之一,更易承受胃酸和胆汁的破坏作用到达小肠的上部并粘附于小肠壁。长双歧杆菌,具有乳酸菌的共有性质,可抑制致病菌、形成菌落优势,调整肠道菌群。短双歧杆菌,对胃酸、胆盐、胆汁和小肠蛋白水解酶具有很强的耐受性。因此,短双歧杆菌可较为容易到达小肠末端。嗜酸乳杆菌进入肠道后可抑制致病菌,调节肠道健康。本发明技术人员发现,将三种益生菌按上述配比混合,能够发挥很好的协同作用,不仅能够调节肠道菌群、促进肠道健康,润肠通便的作用,本发明技术人员发现将本发明三种益生菌与其它营养成分配合使用,具有显著降体脂的效果。
进一步地,所述益生元由低聚木糖和L-阿拉伯糖按重量比20~30:20~40组成。
L-阿拉伯糖在体内有选择性地影响小肠二糖水解酶中消化蔗糖的蔗糖酶,从而抑制了摄入碳水化合物分解速率,降低机体血糖浓度,进而抑制蔗糖的吸收。
低聚木糖是益生元的一种,又称木寡糖,主要是由2-9个木糖分子以β-1,4糖苷键结合而成的低聚糖。低聚木糖可显著增殖肠道有益菌,尤其可高选择性增殖肠道双歧杆菌。其在增殖肠道有益菌的同时,还能促进肠道蠕动,平衡肠道水分,促进肠道健康;低聚木糖还可以增殖口腔的益生菌,抑制有害菌的增殖,减少难闻气体的产生,有明显的去除口臭的作用。
进一步地,所述的膳食纤维为抗性糊精、菊粉、纤维素、半纤维素、果胶、树胶、魔芋胶、海藻多糖、聚葡萄糖、抗性淀粉、抗性低聚糖和改性纤维素中一种或几种。
抗性糊精由淀粉加工而成,是将焙烤糊精的难消化成分用工业技术提取处理并精炼而成的一种低热量葡聚糖,属于低分子水溶性膳食纤维。由于其含有抗人体消化酶(如淀粉酶、葡萄糖淀粉酶等)作用的难消化成分,在消化道中不被消化吸收,可直接进入大肠。因此具有高消化耐受性,低血糖指数、低胰岛素指数、低热量等特性。抗性糊精经肠道微生物发酵的代谢产物短链脂肪酸等可阻止癌细胞的增殖与扩散,有效预防结肠癌。作为一种膳食纤维,抗性糊精可增加粪便体积、促进肠道蠕动,具有缓解便秘的作用。
菊粉是一类天然果粉的聚合物,平均聚合度为10~30。
进一步地,所述果粉为蓝莓粉、香橙粉、椰子粉、蔓越莓粉中一种或几种。
进一步地,所述具有减肥降脂作用的益生菌固体饮料,由以下成分及其重量份组成:复合益生菌粉10份、低聚木糖20份、L-阿拉伯糖40份、菊粉20份、抗性糊精6份、果粉10份和木糖醇6份。
进一步地,所述益生菌固体饮料的水分含量不大于5%。
本发明第二个方面,提供一种益生菌固体饮料的制备工艺,包括以下步骤:
步骤一、将长双歧杆菌、短双歧杆菌和嗜酸乳杆菌进行活化培养,收集活化后的菌体,加入保护剂乳化后经低温真空干燥制得冻干粉;将制得长双歧杆菌、短双歧杆菌与嗜酸乳杆菌冻干粉按重量比为30~40%、30~40%和20~40%混合得复合益生菌粉;
步骤二、将复合益生菌粉、益生元粉、膳食纤维、果粉和木糖醇按比例混合,过80目筛后投入混料机混合均匀;
步骤三、将粉末装小包密封,包装装入大盒、检验并装箱入库即可。
与现有技术相比,本发明具有以下技术优势:
(1)本发明将复合益生菌粉、益生元粉和膳食纤维有效结合起来,相互促进,不仅能够有效减肥、减少便秘,而且还具有很好的降体脂效果。
(2)本发明成分简单、易于制备,降低了生产成本,易于企业产业化生产。

所述具有减肥降脂作用的益生菌固体饮料共5g,由以下成分及其重量份组成:
复合益生菌粉5份、低聚木糖20份、L-阿拉伯糖20份、菊粉40份、抗性糊精6份、果粉6份和木糖醇8份。
所述复合益生菌粉所含益生菌活菌总数为4.9×1010cfu,由以下益生菌冻干粉及其重量百分比组成:长双歧杆菌30%、短双歧杆菌30%和嗜酸乳杆菌40%。
实施例2一种具有减肥降脂作用的益生菌固体饮料
所述具有减肥降脂作用的益生菌固体饮料共5g,由以下成分及其重量份组成:
复合益生菌粉15份、低聚木糖20份、L-阿拉伯糖40份、菊粉36份、抗性糊精12份、果粉6份和木糖醇6份。
所述复合益生菌粉所含益生菌活菌总数为1.2×1011cfu,由以下益生菌冻干粉及其重量百分比组成:长双歧杆菌40%、短双歧杆菌40%和嗜酸乳杆菌20%。
实施例3一种具有减肥降脂作用的益生菌固体饮料
所述具有减肥降脂作用的益生菌固体饮料共5g,由以下成分及其重量份组成:
复合益生菌粉10份、低聚木糖20份、L-阿拉伯糖40份、菊粉20份、抗性糊精6份、果粉10份和木糖醇6份。
所述复合益生菌粉所含益生菌活菌总数为9.3×1010cfu,由以下益生菌冻干粉及其重量百分比组成:长双歧杆菌40%、短双歧杆菌40%和嗜酸乳杆菌20%。
实施例4一种具有减肥降脂作用的益生菌固体饮料的制备工艺
所述益生菌固体饮料的制备工艺,包括以下步骤:
步骤一、将长双歧杆菌、短双歧杆菌和嗜酸乳杆菌进行活化培养,收集活化后的菌体,加入保护剂乳化后经低温真空干燥制得冻干粉;将制得长双歧杆菌、短双歧杆菌与嗜酸乳杆菌冻干粉按重量比为30~40%、30~40%和20~40%混合得复合益生菌粉;
步骤二、将复合益生菌粉、益生元粉、膳食纤维、果粉和木糖醇按比例混合,过80目筛后投入混料机混合均匀;
步骤三、将粉末装小包密封,包装装入大盒、检验并装箱入库即可。
对比例1
与实施例3的区别在于,将长双歧杆菌替换为植物乳杆菌,其它均与实施例1相似。
对比例2
与实施例3的区别在于,不含低聚木糖,L-阿拉伯糖添加量为60份,其它均与实施例1相似。
试验例
1.试验材料:本发明实施例1~3及对比例1~2分别按实施例4方法制得的固体饮料粉。
2.试验方法:
(1)受试对象:自愿参与减重试验的受试人群480人,随机分成具有可比性的对照组、实施例1组、实施例2组、实施例3组、对比例1组、对比例2组,每组受试者80例,便秘者34例。
(2)服用方式:用50mL 37℃左右温水冲调。饭后1h食用。1袋5g,2袋/天。
(3)试验过程:
试食期间患者禁止服用可以抑制乳酸菌活性和腹泻的药物,其他药物和剂量不变。试验前对每一位受试者参照原来生活习惯规定相应的饮食。试验者起始时必须确认体重及体脂含量。实施例1组、实施例2组、实施例3组、对比例1组、对比例2组,分别服用相应实施例制得的益生菌固体饮料,对照组不进行任何处理。每7天记录受试者的体重计体脂含量,必要时可以适当延长。受试者体重及体脂含量测定仪器为同一台。
(4)指标观察服用本发明的一种具有抗肥胖作用的益生菌固体饮料期间,观察患者临床症状(便秘、腹泻等)情况,以及体重计体脂指标。
临床疗效评价:
显效:临床症状消失,大便每日1次或者2次,稳定半个月。
有效:临床症状基本消或明显好转,大便基本正常或次数明显增加。
无效:症状或大便次数无明显改善。
(5)数据分析:数据使用Statistix8软件进行差异性显著分析。
3.试验者基本情况

数据表示为平均值±标准差。a-c在同一行字母中,相同则表示差异不显著(P≥0.05),不同则表示差异显著(P<0.05)。
由表1可见,在对照组、实施例1~3及对比例1~2的体重、体脂含量及体脂占比的差异不显著(P<0.05)。
4.实验结果
试验前后体重及体脂变化测定结果,如表2所示:

从表1可以看出,实施例1~3中,实施例3组体重降低最多且体脂降低也最明显,因而为本发明最佳实施例。对比例1、对比例2体重及体脂减少幅度均小于实施例1~3组。由此可知,本发明三种益生菌组合减肥降体脂效果明显。
表2便秘治疗的临床效果
从表2可以看出,实施例3组中34例便秘者,显效7例,有效21例,无效6例,总有效率82.4%,治疗便秘的效果高于对比例组。
本发明具有减肥降脂作用的益生菌固体饮料,主要以低聚木糖、L-阿拉伯糖、菊粉、复合益生菌粉为主要原料,具有增殖肠道有益菌、维护肠道健康、缓解便秘、减肥降体脂的作用。本发明所描述的实施例3用于人体减脂、减重试验资料,结果显示:5周内受试者平均可减少3.82kg的体重,其中包含1.23kg的脂肪。可见本发明的抗肥胖益生菌固体饮料的减重、减脂效果明显。
