本发明属于奶制品技术领域,更具体的说是涉及一种保护肠胃的奶粉及其制备方法。
背景技术
消化不良是所有肠胃不适的总称,是一种由胃动力障碍所引起的疾病,也包括胃蠕动不好的胃轻瘫和食道反流病,会反复或持续性上腹疼痛或自觉上腹不适,常在餐后加重,是消化系统疾病的一个症候群,消化不良还可能是胃、小肠或大肠出毛病的一个症状,也可能本身就是一种疾病。一般表现为进食后腹部饱胀、反酸、嗳气,食欲不振、有的患者也有恶心、呕吐、腹痛、舌苔厚腻等症状。
牛奶营养丰富、食用方便,而且物美价廉,人称“白色血液”,是最理想的天然食品。牛奶组成复杂,至少有100多种,主要成份有水、脂肪、磷脂、蛋白质、乳糖、无机盐等。牛奶中的蛋白质主要是酪蛋白、白蛋白、球蛋白、乳蛋白等,所含的20多种氨基酸中有8种是必需氨基酸,奶蛋白质是全价的蛋白质,它的消化率高达98%。乳脂肪是高质量的脂肪,品质很好,它的消化率在95%以上,而且含有大量的脂溶性维生素。奶中的乳糖是半乳糖和乳糖,是最容易消化吸收的糖类,有助于保护肠胃,牛奶还含有丰富的矿物质、钙、磷、铁、锌、铜、锰、钼,最难得的是消化系统疾病,牛奶中钙磷比例合适,非常利于钙的吸收,能够增强人体免疫力,减少肠胃疾病的发生。
益生菌是指对人体有益的微生物,肠胃病是人体的有益菌组成的菌膜屏障遭到破坏,有害菌及其分泌的毒素侵蚀肠胃黏膜,引发各种肠胃不适,益生菌能有效调理肠胃,增强肠蠕动能力,使人体始终处于菌群平衡状态,从而有效改善或缓解肠胃病带来的困扰,市场上常见的益生菌奶产品主要为发酵乳或乳饮料等液态乳制品,保质期较短,食用不方便,因此研发一种食用方便,运输方便,能够有效保护肠胃的奶粉是本领域技术人员亟需解决的问题。

有鉴于此,本发明提供了一种保护肠胃的奶粉。
为了实现上述目的,本发明采用如下技术方案:
一种保护肠胃的奶粉,包括以下重量份的原料:脱脂奶粉600-800份,全脂奶粉150-200份,牛初乳粉50-100份,固体玉米糖浆2-5份,乳糖2-5份,低聚半乳糖1-3份,乳铁蛋白0.3-0.7份,牛磺酸0.2-0.5份,复合益生菌冻干粉0.2-2份;
上述复合益生菌冻干粉包括动物双歧杆菌和嗜酸乳杆菌,上述动物双歧杆菌的含量为1×106-1×107CFU/g,上述嗜酸乳杆菌的含量为1×106-1×107CFU/g。
本发明的有益效果:
脱脂奶粉脂肪含量很低,易消化,具有保护肠胃的作用,但是,其营养成分不均衡,因此,本发明将其和全脂奶粉复配使用,使奶粉营养成分更加均衡。
全脂奶粉蛋白质凝块细小、柔软,易于消化,本发明添加全脂奶粉作为原料之一,使本发明奶粉更易吸收。
牛初乳粉里面含有大量的免疫因子,增强人体免疫力,减少肠道疾病的发生。
固体玉米糖浆质体清亮、透明、口感温和纯正,低甜度,有麦芽香味等诸多优点。
乳铁蛋白不仅参与铁的转运,而且具有广谱抗菌、抗氧化、抗癌、调节免疫系统等强大生物功能。
乳糖中的β-双糖对肠道起到很好的一个调节作用,它利于肠道中乳酸菌等益菌群的繁殖,抑制肠道内有害菌群的生长,对人体消化系统起到一个调节的作用,利于肠道健康,同时产生丰富的B族维生素,利于促进肠道的蠕动,增加人体免疫力。
低聚半乳糖是人体肠道中双歧杆菌、嗜酸乳酸杆菌等有益菌极好的营养源和有效的增殖因子,可以改善人体肠胃的消化吸收功能。
双歧杆菌在人体肠内发酵后可产生乳酸和醋酸,能提高钙、磷、铁的利用率,促进铁和维生素D的吸收,双歧杆菌可以产生维生素B1、B2、B6、B12及丙氨酸、缬氨酸、天冬氨酸和苏氨酸等人体必需的营养物质。
嗜酸乳酸杆菌能调整肠道内菌群平衡,抑制肠道内不良微生物增殖,嗜酸乳杆菌和双歧杆菌混合组成发酵剂,在肠道内发酵后产生乳酸和醋酸,能提高钙、磷、铁的利用率,促进铁和维生素的吸收,产生维生素K和维生素B,还可以减少胆固醇的吸收,具有抑制有害细菌生长的功能,不仅能调节体内菌群失调,还能减少体内毒素的生成,减轻肝脏解毒负担。
牛磺酸具有调节体内渗透压,降血糖,提高免疫能力的功效。

进一步,还包括:复合维生素,以100g上述保护肠胃的奶粉计,上述复合维生素包括:L-抗坏血酸钠25-98mg,dl-α-醋酸生育酚15-45mg,醋酸维生素A0.5-0.8mg,胆钙化醇6-12μg,盐酸吡哆醇0.8-1.5mg。

本发明还提供一种保护肠胃的奶粉的制备方法,包括以下步骤:
(1)按照上述一种保护肠胃的奶粉中各原料的重量份数和重量称取各原料;
(2)将固体玉米糖浆、乳糖、低聚半乳糖、乳铁蛋白、牛磺酸混合均匀,然后粉碎,制得预混粉;
(3)将脱脂奶粉、全脂奶粉、牛初乳粉、复合益生菌冻干粉加入预混粉中,混合均匀,制得上述保护肠胃的奶粉。
本发明的有益效果:本发明制备方法工艺简单,容易操作,生产成本低廉,适合广泛生产和应用。
进一步,上述步骤(2)为:将固体玉米糖浆、乳糖、低聚半乳糖、乳铁蛋白、牛磺酸、复合矿物质混合均匀,然后粉碎,制得预混粉。
进一步,上述步骤(2)中,混合时间为20-30分钟,混合转速为50-60转/分钟。

(1)称取脱脂奶粉600克,全脂奶粉150克,牛初乳粉50克,固体玉米糖浆2克,乳糖2克,低聚半乳糖1克,乳铁蛋白0.3克,牛磺酸0.2克,复合益生菌冻干粉0.2克,复合益生菌冻干粉包括动物双歧杆菌和嗜酸乳杆菌,动物双歧杆菌的含量为1×106CFU/g,嗜酸乳杆菌的含量为1×106CFU/g,复合维生素以100g保护肠胃的奶粉计包括:L-抗坏血酸钠25mg,dl-α-醋酸生育酚15mg,醋酸维生素A0.5mg,胆钙化醇6μg,盐酸吡哆醇0.8mg,复合矿物质以100g所述保护肠胃的奶粉计包括:焦磷酸铁2mg,硫酸锌10mg;
(2)将固体玉米糖浆、乳糖、低聚半乳糖、乳铁蛋白、牛磺酸、复合矿物质混合均匀,混合时间为20分钟,混合转速为50转/分钟,然后粉碎至过60目筛,制得预混粉;
(3)将脱脂奶粉、全脂奶粉、牛初乳粉、复合益生菌冻干粉、复合维生素加入预混粉中,混合均匀,混合时间为50秒,混合转速为30转/分钟,制得所述保护肠胃的奶粉。
实施例2
保护肠胃的奶粉的制备方法,包括以下步骤:
(1)称取脱脂奶粉700克,全脂奶粉180克,牛初乳粉70克,固体玉米糖浆3克,乳糖3克,低聚半乳糖2克,乳铁蛋白0.4克,牛磺酸0.3克,复合益生菌冻干粉1克,复合益生菌冻干粉包括动物双歧杆菌和嗜酸乳杆菌,动物双歧杆菌的含量为1×106CFU/g,嗜酸乳杆菌的含量为1×106CFU/g,复合维生素以100g保护肠胃的奶粉计包括:L-抗坏血酸钠55mg,dl-α-醋酸生育酚30mg,醋酸维生素A0.6mg,胆钙化醇10μg,盐酸吡哆醇1.1mg,复合矿物质以100g所述保护肠胃的奶粉计包括:焦磷酸铁3mg,硫酸锌12mg;
(2)将固体玉米糖浆、乳糖、低聚半乳糖、乳铁蛋白、牛磺酸、复合矿物质混合均匀,混合时间为25分钟,混合转速为55转/分钟,然后粉碎至过60目筛,制得预混粉;
(3)将脱脂奶粉、全脂奶粉、牛初乳粉、复合益生菌冻干粉、复合维生素加入预混粉中,混合均匀,混合时间为55秒,混合转速为35转/分钟,制得所述保护肠胃的奶粉。
实施例3
保护肠胃的奶粉的制备方法,包括以下步骤:
(1)称取脱脂奶粉800克,全脂奶粉200克,牛初乳粉100克,固体玉米糖浆5克,乳糖5克,低聚半乳糖3克,乳铁蛋白0.7克,牛磺酸0.5克,复合益生菌冻干粉2克,复合益生菌冻干粉包括动物双歧杆菌和嗜酸乳杆菌,动物双歧杆菌的含量为1×107CFU/g,嗜酸乳杆菌的含量为1×107CFU/g,复合维生素以100g保护肠胃的奶粉计包括:L-抗坏血酸钠98mg,dl-α-醋酸生育酚45mg,醋酸维生素A0.8mg,胆钙化醇12μg,盐酸吡哆醇1.5mg,复合矿物质以100g所述保护肠胃的奶粉计包括:焦磷酸铁4mg,硫酸锌15mg;
(2)将固体玉米糖浆、乳糖、低聚半乳糖、乳铁蛋白、牛磺酸、复合矿物质混合均匀,混合时间为30分钟,混合转速为60转/分钟,然后粉碎至过70目筛,制得预混粉;
(3)将脱脂奶粉、全脂奶粉、牛初乳粉、复合益生菌冻干粉、复合维生素加入预混粉中,混合均匀,混合时间为60秒,混合转速为40转/分钟,制得所述保护肠胃的奶粉。
实施例4
保护肠胃的奶粉的制备方法,包括以下步骤:
(1)称取脱脂奶粉600克,全脂奶粉150克,牛初乳粉50克,固体玉米糖浆2克,乳糖2克,低聚半乳糖1克,乳铁蛋白0.3克,牛磺酸0.2克,复合益生菌冻干粉0.2克,复合益生菌冻干粉包括动物双歧杆菌和嗜酸乳杆菌,动物双歧杆菌的含量为1×106CFU/g,嗜酸乳杆菌的含量为1×106CFU/g;
(2)将固体玉米糖浆、乳糖、低聚半乳糖、乳铁蛋白、牛磺酸混合均匀,混合时间为20分钟,混合转速为50转/分钟,然后粉碎至过60目筛,制得预混粉;
(3)将脱脂奶粉、全脂奶粉、牛初乳粉、复合益生菌冻干粉加入预混粉中,混合均匀,混合时间为50秒,混合转速为30转/分钟,制得所述保护肠胃的奶粉。
实施例5
保护肠胃的奶粉的制备方法,包括以下步骤:
(1)称取脱脂奶粉700克,全脂奶粉180克,牛初乳粉70克,固体玉米糖浆3克,乳糖3克,低聚半乳糖2克,乳铁蛋白0.4克,牛磺酸0.3克,复合益生菌冻干粉1克,复合益生菌冻干粉包括动物双歧杆菌和嗜酸乳杆菌,动物双歧杆菌的含量为1×106CFU/g,嗜酸乳杆菌的含量为1×106CFU/g;
(2)将固体玉米糖浆、乳糖、低聚半乳糖、乳铁蛋白、牛磺酸混合均匀,混合时间为25分钟,混合转速为55转/分钟,然后粉碎至过60目筛,制得预混粉;
(3)将脱脂奶粉、全脂奶粉、牛初乳粉、复合益生菌冻干粉加入预混粉中,混合均匀,混合时间为55秒,混合转速为35转/分钟,制得所述保护肠胃的奶粉。
实施例6
保护肠胃的奶粉的制备方法,包括以下步骤:
(1)称取脱脂奶粉800克,全脂奶粉200克,牛初乳粉100克,固体玉米糖浆5克,乳糖5克,低聚半乳糖3克,乳铁蛋白0.7克,牛磺酸0.5克,复合益生菌冻干粉2克,复合益生菌冻干粉包括动物双歧杆菌和嗜酸乳杆菌,动物双歧杆菌的含量为1×107CFU/g,嗜酸乳杆菌的含量为1×107CFU/g;
(2)将固体玉米糖浆、乳糖、低聚半乳糖、乳铁蛋白、牛磺酸混合均匀,混合时间为30分钟,混合转速为60转/分钟,然后粉碎至过70目筛,制得预混粉;
(3)将脱脂奶粉、全脂奶粉、牛初乳粉、复合益生菌冻干粉加入预混粉中,混合均匀,混合时间为60秒,混合转速为40转/分钟,制得所述保护肠胃的奶粉。
以实施例3保护肠胃的奶粉为例,营养成分见表1:

效果实验:
挑选男性50例,女性50例,年龄为18-50岁,分成两组,每组男性25例,女性25例,两组研究对象年龄比例分布均衡,试验组食用实施例3奶粉,每天早中晚各食用100克奶粉,对照组不食用奶粉,观察天数为10天,实验前后,都没有发现其他的不良反应。
观察两组实验人员的粪便频率、性状、颜色,作为评估分析指标,试验结果:
1、粪便情况:
对照组:大便总次数1125次,人均2.25次/天,其中糊状便489次(占43.5%),黄软便396次(占35.2%),成形便112次(占10.0%),稀水样便128次(占11.38%)。
试验组:大便总次数1825次,人均3.65次/天,其中糊状便963次(占56.65%),黄软便786次(42.96%),成形便46次(占1.82%),稀水样便30次(占0.91%)。

从表2可以看出,食用本发明奶粉后,食用者的平均每日大便次数明显较高,糊状便、黄软便比例显著较高,稀水样便与成形便显著比例较小,因此本发明保护肠胃的奶粉对于改善肠道健康与通畅,促进腹泻康复的效果明显。
实施例1-2的试验结果结论与实施例3相同,不再赘述,对所公开的实施例的说明,使本领域专业技术人员能够实现或使用本发明。对这些实施例的多种修改对本领域的专业技术人员来说将是显而易见的,本文中所定义的一般原理可以在不脱离本发明的精神或范围的情况下,在其它实施例中实现。因此,本发明将不会被限制于本文所示的这些实施例,而是要符合与本文所公开的原理和新颖特点相一致的最宽的范围。
Claims (9)
1.一种保护肠胃的奶粉,其特征在于,包括以下重量份的原料:脱脂奶粉600-800份,全脂奶粉150-200份,牛初乳粉50-100份,固体玉米糖浆2-5份,乳糖2-5份,低聚半乳糖1-3份,乳铁蛋白0.3-0.7份,牛磺酸0.2-0.5份,复合益生菌冻干粉0.2-2份;
所述复合益生菌冻干粉包括动物双歧杆菌和嗜酸乳杆菌,所述动物双歧杆菌的含量为1×106-1×107CFU/g,所述嗜酸乳杆菌的含量为1×106-1×107CFU/g。
2.根据权利要求1所述一种保护肠胃的奶粉,其特征在于,还包括:复合维生素,以100g所述保护肠胃的奶粉计,所述复合维生素包括:L-抗坏血酸钠25-98mg,dl-α-醋酸生育酚15-45mg,醋酸维生素A0.5-0.8mg,胆钙化醇6-12μg,盐酸吡哆醇0.8-1.5mg。
3.根据权利要求1所述一种保护肠胃的奶粉,其特征在于,还包括:复合矿物质,以100g所述保护肠胃的奶粉计,所述复合矿物质包括:焦磷酸铁2-4mg,硫酸锌10-15mg。
4.一种保护肠胃的奶粉的制备方法,其特征在于,包括以下步骤:
(1)按照权利要求1-3任一项所述一种保护肠胃的奶粉称取各原料;
(2)将固体玉米糖浆、乳糖、低聚半乳糖、乳铁蛋白、牛磺酸混合均匀,然后粉碎,制得预混粉;
(3)将脱脂奶粉、全脂奶粉、牛初乳粉、复合益生菌冻干粉加入预混粉中,混合均匀,制得所述保护肠胃的奶粉。
5.根据权利要求4所述一种保护肠胃的奶粉的制备方法,其特征在于,所述步骤(2)为:将固体玉米糖浆、乳糖、低聚半乳糖、乳铁蛋白、牛磺酸、复合矿物质混合均匀,然后粉碎,制得预混粉。
6.根据权利要求5所述一种保护肠胃的奶粉的制备方法,其特征在于,所述步骤(2)中,混合时间为20-30分钟,混合转速为50-60转/分钟。
7.根据权利要求5所述一种保护肠胃的奶粉的制备方法,其特征在于,所述步骤(2)中,粉碎至过60-70目筛。
8.根据权利要求4所述一种保护肠胃的奶粉的制备方法,其特征在于,所述步骤(3)为:将脱脂奶粉、全脂奶粉、牛初乳粉、复合益生菌冻干粉、复合维生素加入预混粉中,混合均匀,制得所述保护肠胃的奶粉。
9.根据权利要求8所述一种保护肠胃的奶粉的制备方法,其特征在于,所述步骤(3)中,混合时间为50-60秒,混合转速为30-40转/分钟。
