Abstract
本发明提供了一种水果益生菌膳食纤维粉固体饮料及其制备方法,包括20~40份果粉、40~80份益生元和1~10份益生菌,其中,果粉包括蔓越莓冻干粉、樱桃冻干粉、车厘子冻干粉、红心火龙果冻干粉、百香果冻干粉、紫葡萄冻干粉、黑加仑冻干粉;本发明提供的固体饮料中果粉采用微波干燥‑冷冻干燥的方法制备而成,不仅可有效保持水果的色泽,且能保持水果的营养组分,实现0添加色素、香精、防腐剂、蔗糖和脂肪,不仅可实现对营养的补充,还能实现调节人体体重和身形效果。

背景技术
根据世界卫生组织(WHO)于2017年发布的统计数据结果显示,全世界超过19亿的成年人超重,其中超过6.5亿人属于肥胖,占世界成年人数的13%。《中国居民营养与慢性病状况报告(2015年)》显示,我国18岁及以上成人超重率为30.1%,肥胖率为11.9%,与2002年相比,超重率和肥胖率分别上升7.3%和4.8%。肥胖人数逐年增加主要是因为能量摄入过多、久坐等不健康生活方式造成。脂肪在体内异常或过度堆积,从而导致一系列相关的健康问题。目前的许多研究证明,超重和肥胖是心血管疾病、血脂异常、高血压、糖耐量异常、2型糖尿病、其他代谢性疾病的重要危险因素之一。同时慢病的发病率也与日俱增,带来沉重的疾病负担,已经成为危害我国国民健康的头号威胁。
“药食同源”是中华原创医学之中对人类最有价值的贡献之一,五谷杂粮,有益于人类而无害于身体,因而性“中”,这是中华原创医学选择食品最主要的标准,这个标准是建立在“以人为本”的基础中医历来强调“药疗不如食疗”,食疗成为现代人追求返朴归真、健康饮食的最佳选择,以食物为药物具有以下几大突出的优点:一、长期使用药物治病往往会产生各种副作用和依赖性,而且还可能对人体的健康造成影响;而食疗相对安全有效,毒副作用小;二、食疗使用的都是我们日常生活中常见的食物,价格低廉,让我们在日常用餐中便可达到调理的目的,这是昂贵的医药费所无法比拟的;三、食物为药还具有无痛苦的优点,让人们在享受美食的过程中祛除病痛,避免了打针、吃药,甚至手术之苦。
因此,提供一种将饮食、养生相结合的水果益生菌膳食纤维粉固体饮料,以达到解决肥胖人群的问题的目的,这对于肥胖的人群来说,具有重要的意义。

本发明所要解决的技术问题是提供一种水果益生菌膳食纤维粉固体饮料及其制备方法,实现0添加色素、香精、防腐剂、蔗糖和脂肪,不仅可实现对营养的补充,还能实现调节人体体重和身形,从而解决现有的技术难题。

取蔓越莓、樱桃、车厘子、红心火龙果、百香果、紫葡萄、黑加仑分别清洗晾干后,去皮去籽;将蔓越莓、樱桃、车厘子、红心火龙果、百香果、紫葡萄、黑加仑分别在真空状态下微波干燥,取出,进行冷冻干燥;重复微波-冷冻干燥处理;干燥完成后相互混合粉碎至100~200目,得到果粉。
进一步地,所述微波干燥在500~600MHz、45~55℃下干燥5~10min。
进一步地,所述冷冻干燥在-10~0℃进行8~10min.

有益效果:
本发明中的益生元促进益生菌的增殖,进而益生菌加速药效的吸收;益生菌中富含的多种活性因子和生物免疫因子以及多种维生素,同时根据肥胖的体质特征,添加天然、原生态的多种水果食材,集食疗、预防、调理瘦身三重功效于一体的独特优势。
本发明的水果原粉在制备过程中通过惰性气体保护下进行重复微波-冷冻干燥处理,在有效去除水分情况下,保持了新鲜果特有的果香,保留水果原本的营养组分和色泽,同时确保水果原粉在后续贮存过程不易出现霉化;各水果原粉相互协调,在提供人体抗衰老所需营养组分同时促进肠胃蠕动;本发明中益生菌能修复或维持肠道健康,调节肠内微生态平衡,促进微量元素的吸收,增强脾胃运动功能,促进人体对水果原粉的消化吸收,促进人体所需营养物质的转化,利于气血的生成;本发明中益生元可促进益生菌的代谢和增殖,从而改善人体健康,促进人体胃肠道内的益生菌生态环境,促进对水果原粉吸收同时,改善人体本身对营养物质的吸收。
相比现有技术仅采用益生菌和营养物质配伍,本发明还提供益生元,有效改善人体胃肠道内的微生态,提高对水果益生菌膳食纤维粉固体饮料的营养物质的转化和吸收;
试验表明,本发明的水果益生菌膳食纤维粉固体饮料通过饮食调节恢复人体平衡,达到稳定健康状态,保持体形,长期达到瘦身及减小致肥胖相关病症发展的作用。

一种水果益生菌膳食纤维粉固体饮料的制备方法,制备过程如下:
取蔓越莓、樱桃、车厘子、红心火龙果、百香果、紫葡萄、黑加仑分别清洗晾干后,去皮去籽,分别在真空状态下在600MHz、45℃下微波干燥5min,取出,-10℃分别进行冷冻干燥8min;重复微波-冷冻干燥处理6次,干燥完成后相互混合粉碎至100~200目,得到果粉;
取果粉、益生菌、益生元相互混合均匀,真空包装即得。
试验方案
研究对象
3周龄雄性大鼠分为两组,每组3只,分为对照组和实验组。先统一喂食脂肪含量为70%的高脂饲料,连续喂食4周,继续喂食相同的高脂饲料,其中一组用本发明实施例制备的水果益生菌膳食纤维粉固体饮料用水溶解后进行灌胃,另一组灌注水,具体如下:
将水果益生菌膳食纤维粉固体饮料与水按1:3质量比溶解后灌胃,每日进行两次灌胃饲喂。对照组灌注同体积水。
定期称取大鼠体重(g)并记录,结果如下表1所示。

从表1数据可知,在高脂饲料喂养的情况下,服用本发明制备的水果益生菌膳食纤维粉固体饮料不仅可实现体重减少,可利于体形保持,长期服用具有瘦身效果。
虽然,上文中已经用一般性说明、具体实施方式及试验,对本发明作了详尽的描述,但在本发明基础上,可以对之作一些修改或改进,这对本领域技术人员而言是显而易见的。因此,在不偏离本发明精神的基础上所做的这些修改或改进,均属于本发明要求保护的范围。
Claims (10)
1.一种水果益生菌膳食纤维粉固体饮料,其特征在于,按重量份数计,包括20~40份果粉、40~80份益生元和1~10份益生菌,所述水果益生菌膳食纤维粉固体饮料中活性益生菌数量>1000亿CFU。
2.根据权利要求1所述水果益生菌膳食纤维粉固体饮料,其特征在于,所述果粉包括蔓越莓冻干粉、樱桃冻干粉、车厘子冻干粉、红心火龙果冻干粉、百香果冻干粉、紫葡萄冻干粉、黑加仑冻干粉中的一种或多种组合。
3.根据权利要求2所述水果益生菌膳食纤维粉固体饮料,其特征在于,所述果粉,按重量份数计,包括蔓越莓冻干粉10~15份、樱桃冻干粉10~15份、车厘子冻干粉10~15份、红心火龙果冻干粉10~15份、百香果冻干粉10~15份、紫葡萄冻干粉10~15份、黑加仑冻干粉10~15份中的一种或多种组合。
4.根据权利要求1所述水果益生菌膳食纤维粉固体饮料,其特征在于,所述益生元,按重量份数计,包括乳糖醇6~10份、海藻糖1~5份、大豆低聚糖1~5份、抗性糊精1~15份、棉籽糖1~5份、低聚木糖10~15份、低聚异麦芽糖1~9份、低聚果糖1~5份、低聚半乳糖0~5份、壳寡糖5~10份、水苏糖1~10份、菊糖10~15份、芦荟多糖5~15份、魔芋多糖0~5份中的一种或多种组合。
5.根据权利要求1所述水果益生菌膳食纤维粉固体饮料,其特征在于,所述益生菌包括动物双歧杆菌、鼠李糖乳杆菌、副干酪乳杆菌、嗜酸乳杆菌、乳双歧杆菌、植物乳感觉、罗伊氏乳杆菌、长双歧杆菌、卷曲乳杆菌、发酵乳杆菌、约氏乳杆菌、凝结芽孢杆菌、罗伊氏乳杆菌、肠膜明串珠菌肠膜亚种嗜酸乳杆菌、乳双歧杆菌、乳酸片球菌中的一种或多种组合。
6.根据权利要求5所述水果益生菌膳食纤维粉固体饮料,其特征在于,所述益生菌,按重量份数计,包括动物双歧杆菌5~10份、鼠李糖乳杆菌5~10份、副干酪乳杆菌5~10份、嗜酸乳杆菌5~10份、乳双歧杆菌5~10份、植物乳杆菌5~10份、罗伊氏乳杆菌5~10份、长双歧杆菌5~10份。
7.根据权利要求5所述水果益生菌膳食纤维粉固体饮料,其特征在于,所述益生菌,按重量份数计,包括动物双歧杆菌5~10份、鼠李糖乳杆菌5~10份、副干酪乳杆菌5~10份、嗜酸乳杆菌5~10份、乳双歧杆菌5~10份、植物乳杆菌5~10份、罗伊氏乳杆菌5~10份、长双歧杆菌5~10份、卷曲乳杆菌5~10份、发酵乳杆菌5~10份、约氏乳杆菌5~10份、凝结芽孢杆菌5~10份、罗伊氏乳杆菌5~10份、肠膜明串珠菌肠膜亚种嗜酸乳杆菌5~10份、乳双歧杆菌5~10份、乳酸片球菌5~10份。
8.一种权利要求1~7任一项所述水果益生菌膳食纤维粉固体饮料的制备方法,其特征在于,取果粉、益生菌、益生元相互混合均匀,真空包装即得。
9.根据权利要求8所述水果益生菌膳食纤维粉固体饮料的制备方法,其特征在于,所述果粉制备过程如下:
取蔓越莓、樱桃、车厘子、红心火龙果、百香果、紫葡萄、黑加仑分别清洗晾干后,去皮去籽;将蔓越莓、樱桃、车厘子、红心火龙果、百香果、紫葡萄、黑加仑分别在真空状态下微波干燥,取出,进行冷冻干燥;重复微波-冷冻干燥处理;干燥完成后相互混合粉碎至100~200目,得到果粉。
10.根据权利要求9所述水果益生菌膳食纤维粉固体饮料的制备方法,其特征在于,所述微波干燥在500~600MHz、45~55℃下干燥5~10min;
所述冷冻干燥在-10~0℃进行8~10min;
所述重复微波-冷冻干燥处理5~10次。
