Abstract
本发明公开了食品加工领域的一种助消化益生菌固体饮料及制备方法,助消化益生菌固体饮料由鸡内金、麦芽粉、大枣粉、山楂粉、赤藓糖醇、益生菌和益生元组成;益生菌包括乳双歧杆菌、嗜酸乳杆菌、鼠李糖乳杆菌、发酵乳杆菌、副干酪乳杆菌和植物乳杆菌;益生元包括低聚果糖、异构化乳糖和乳糖醇;采用低温、低湿条件下的无菌干混工艺,原料天然,口感酸甜,用于生产固体饮料,可直接食用,也可温水冲服,适合多种人群,尤其饭后消化不良、积食人群。通过鸡内金、麦芽粉、大枣粉、山楂粉与多种益生元益生菌结合使用,既能保证益生菌摄入后的定植与增殖,保护肠道健康,又能满足改善消化的需求,安全温和,无依赖性。

技术领域
本发明涉及食品加工领域的一种助消化益生菌固体饮料及制备方法。
背景技术
功能性消化不良(functional dyspepsia,FD)是指由胃和十二指肠功能紊乱引起的餐后饱胀感、早饱、中上腹痛及中上腹烧灼感等症状,而无器质性疾病的一组临床综合征。积食是指中医的一个病症,主要是指食过量,损伤脾胃,使乳食停滞于中焦所形成的胃肠疾患,主要表现为腹部胀满,大便干燥或酸臭,矢气臭秽,嗳气酸腐,肚腹胀热。我国因消化不良症状就诊的患者占普通门诊的11%,占消化专科门诊的52%。
鸡内金是鸡的消化系统之一,功效有很多,一般出现消化不良的症状都会用鸡内金来治疗的,可以有效帮助消除积食,帮助健胃。除了有效促进消化,还能加强食欲。
麦芽可用于米面类食物引起的消化不良,帮助人们促进消化。对于肝郁气滞,胸胁胀闷及肝脾不和,麦芽有舒肝和胃的效果。麦芽还可以将体内的多余的废物排出体外,起到润肠通便的作用。
山楂含多种有机酸。口服后增强胃液酸度,提高胃蛋白酶活性,促进蛋白质的消化;山楂味酸,刺激胃黏膜促进胃液分泌;山楂中含脂肪酶,能促进脂肪的消化;山楂含有维生素C等成分,口服可增进食欲。
大枣能健胃理脾,有助于消化。大枣作为药用最早记载于《神农本草经》,被列为上品,此后历代本草多有阐述,具有补脾胃、养血安神、缓和药性的作用,临床常用于脾虚食少、乏力便溏、妇人脏躁等症状的治疗。
益生元是一类膳食补充剂,能够选择性地促进体内有益菌的代谢和增殖,而不刺激有潜在致病性或腐败活性的有害细菌,进而改善宿主健康的不可被人体消化的食品成分。益生元进入人体,主要发挥以下作用:促进肠道内乳杆菌和双歧杆菌的增殖和生长;发酵生成有机酸,肠道内酸碱度降低,肠上皮细胞主动运输和被动运输作用增强,在促进矿物质吸收方面作用显著;对机体脂类代谢起到调节作用;具有较强的免疫刺激作用,可以增强巨噬细胞活性使其产生抗菌素,进而刺激淋巴细胞不断分裂繁殖。
益生菌是一类对宿主有益的活性微生物,是定植于人体肠道、生殖系统内,能产生确切健康功效从而改善宿主微生态平衡、发挥对肠道有益作用的活性有益微生物的总称。
固体饮料是用食品原辅料、食品添加剂等加工制成的粉末状、颗粒状或块状等,因其品种多样,冲调方便、易于贮藏和携带而广受消费者青睐。
近年来,益生菌产品和助消化产品都是热点,但是将益生菌和助消化结合的产品很少,助消化益生菌固体饮料既能满足人们对肠道健康的需求,又能满足人们对消化改善的需求。因此,开发一款安全温和,不生产依赖性的方便携带的助消化产品很有必要。
发明内容
本发明的目的在于通过鸡内金、麦芽粉、大枣粉、山楂粉和多种益生菌益生元组合使用,既能保证益生菌摄入后的定植与增殖,保护肠道健康,又能满足改善消化的需求,安全温和,无依赖性。
为了达到上述目的,本发明通过以下技术方案实现的:
一种助消化益生菌固体饮料,其特征在于:固体饮料由鸡内金、麦芽粉、大枣粉、山楂粉、赤藓糖醇、益生菌和益生元组成;所述益生菌包括乳双歧杆菌、嗜酸乳杆菌、鼠李糖乳杆菌、发酵乳杆菌、副干酪乳杆菌和植物乳杆菌;所述益生元包括低聚果糖、异构化乳糖和乳糖醇;
对上述技术方案作进一步的说明:所述助消化益生菌固体饮料重量百分比为:鸡内金0.5%-2%,麦芽粉1%-2%,大枣粉10%-15%,山楂粉25%-40%,赤藓糖醇10%-15%,乳糖醇15%-25%、低聚果糖 4%-10%,异构化乳糖2%-8%,乳双歧杆菌0.5%-3%,嗜酸乳杆菌 0.5%-3%,鼠李糖乳杆菌0.5%-3%、发酵乳杆菌0.5%-2%、副干酪乳杆菌0.5%-2%、植物乳杆菌0.5%-2%;
对上述技术方案作进一步的说明:所述益生菌活菌数为:乳双歧杆菌1×1011-3×1011CFU/g,嗜酸乳杆菌1×1011-2×1011CFU/g,鼠李糖乳杆菌1×1011-7×1011CFU/g,发酵乳杆菌1×1011-4×1011CFU/g,副干酪乳杆菌1×1011-3×1011CFU/g,植物乳杆菌1×1011-3×1011CFU/g;
对上述技术方案作进一步的说明:所述助消化益生菌固体饮料水分含量不大于5%,水分活度在0.1-0.175之间。
助消化益生菌固体饮料的制备方法包括以下步骤:
1)选取对应的甘油管深冷单菌株,37℃水浴解冻后接种于MRS培养基,37℃过夜培养,取培养液划线接种于MRS琼脂培养基,挑取平板上的单菌落接种于MRS液体培养基培养至对数生长期作为发酵用的菌种。发酵罐采用酸碱中和培养、补料培养等策略进行高密度培养得到高活菌数发酵液,使用碟式或管式离心机离心获得菌泥,菌泥与脱脂乳保护剂混合乳化后进行冻干、粉碎,获得乳双歧杆菌、嗜酸乳杆菌、鼠李糖乳杆菌、发酵乳杆菌、副干酪乳杆菌和植物乳杆菌冻干粉;
2)将各种益生菌冻干粉与鸡内金、麦芽粉、大枣粉、山楂粉、赤藓糖醇、低聚果糖、异构化乳糖和乳糖醇按比例混合均匀,过60目筛,将混合粉末进行小包装;
3)将小包装按照规格要求装入大盒,检验并装箱入库。
本发明具有以下有益效果:
1.本发明所用乳双歧杆菌、鼠李糖乳杆菌、嗜酸乳杆菌等乳酸菌是人体肠道内的生理常驻菌,参与糖、脂等多项机体代谢,产生有机酸,短链脂肪酸等,可以调节机体内环境,起到益生作用。低聚果糖,乳糖醇在口腔、胃及小肠内都很稳定,不会被消化吸收,当进入大肠时,则易被微生物发酵分解。异构化乳糖可以增殖双歧杆菌等有益菌,改善肠道环境提高肠道健康,是一种适用于调节肠道菌群健康的优良益生元,被全球用于治疗慢性便秘和肝性脑病等医疗行业。
2.本发明所用鸡内金、麦芽、山楂和大枣均为药食同源的物质,天然来源,安全温和,无依赖性。且不同成分还具有一些其他的益生功效,如鸡内金还可通淋化石,麦芽还可回乳消胀,山楂还可行气散瘀,化浊降脂,大枣还具有养颜、治疗失眠的功效。
具体实施方式
下面结合实施例对本发明做进一步说明:
实施例1
鸡内金0.05g,麦芽粉0.055g,大枣粉0.4g,山楂粉0.9g,赤藓糖醇0.4g,乳糖醇0.52g,低聚果糖0.3g,异构化乳糖0.15g,乳双歧杆菌0.055g,嗜酸乳杆菌0.04g,鼠李糖乳杆菌0.05g、发酵乳杆菌0.02g、副干酪乳杆菌0.04g、植物乳杆菌0.02g,每份共计3g。
实施例2
鸡内金0.03g,麦芽粉0.06g,大枣粉0.3g,山楂粉0.985g,赤藓糖醇0.4g,乳糖醇0.6g,低聚果糖0.2g,异构化乳糖0.2g,乳双歧杆菌0.04g,嗜酸乳杆菌0.06g,鼠李糖乳杆菌0.045g、发酵乳杆菌0.03g、副干酪乳杆菌0.03g、植物乳杆菌0.02g,每份共计3g。
实施例3
鸡内金0.02g,麦芽粉0.03g,大枣粉0.27g,山楂粉0.67g,赤藓糖醇0.27g,乳糖醇0.38g,低聚果糖0.13g,异构化乳糖0.08g,乳双歧杆菌0.04g,嗜酸乳杆菌0.035g,鼠李糖乳杆菌0.03g、发酵乳杆菌0.01g、副干酪乳杆菌0.025g、植物乳杆菌0.01g,每份共计2g。
本发明实施例1-3所公开的一种助消化益生菌固体饮料是经过以下工艺制备而成的:
1)选取对应的甘油管深冷单菌株,37℃水浴解冻后接种于MRS培养基,37℃过夜培养,取培养液划线接种于MRS琼脂培养基,挑取平板上的单菌落接种于MRS液体培养基培养至对数生长期作为发酵用的菌种。发酵罐采用酸碱中和培养、补料培养等策略进行高密度培养得到高活菌数发酵液,使用碟式或管式离心机离心获得菌泥,菌泥与脱脂乳保护剂混合乳化后进行冻干、粉碎,获得乳双歧杆菌、嗜酸乳杆菌、鼠李糖乳杆菌、发酵乳杆菌、副干酪乳杆菌和植物乳杆菌冻干粉;
2)将各种菌冻干粉与鸡内金、麦芽粉、大枣粉、山楂粉、赤藓糖醇、低聚果糖、异构化乳糖和乳糖醇按比例混合均匀,过60目筛,将混合粉末进行小包装;
3)将小包装按照规格要求装入大盒,检验并装箱入库。
Claims (5)
1.一种助消化益生菌固体饮料,其特征在于:助消化益生菌固体饮料由鸡内金、麦芽粉、大枣粉、山楂粉、赤藓糖醇、益生菌和益生元组成;所述益生菌包括乳双歧杆菌、嗜酸乳杆菌、鼠李糖乳杆菌、发酵乳杆菌、副干酪乳杆菌和植物乳杆菌;所述益生元包括低聚果糖、异构化乳糖和乳糖醇。
2.根据权利要求1所述助消化益生菌固体饮料,其特征在于:所述助消化益生菌固体饮料重量百分比为:鸡内金0.5%-2%,麦芽粉1%-2%,大枣粉10%-15%,山楂粉25%-40%,赤藓糖醇10%-15%,乳糖醇15%-25%,低聚果糖4%-10%,异构化乳糖2%-8%,乳双歧杆菌0.5%-3%,嗜酸乳杆菌0.5%-3%,鼠李糖乳杆菌0.5%-3%,发酵乳杆菌0.5%-2%,副干酪乳杆菌0.5%-2%,植物乳杆菌0.5%-2%。
3.根据权利要求1所述助消化益生菌固体饮料,其特征在于:所述益生菌活菌数为:乳双歧杆菌1×1011-3×1011CFU/g,嗜酸乳杆菌1×1011-2×1011CFU/g,鼠李糖乳杆菌1×1011-7×1011CFU/g,发酵乳杆菌1×1011-4×1011CFU/g,副干酪乳杆菌1×1011-3×1011CFU/g,植物乳杆菌1×1011-3×1011CFU/g。
4.一种如权利要求1所述助消化益生菌固体饮料的制备方法,其特征在于:包括以下步骤:
1)选取对应的甘油管深冷单菌株,37℃水浴解冻后接种于MRS培养基,37℃过夜培养,取培养液划线接种于MRS琼脂培养基,挑取平板上的单菌落接种于MRS液体培养基培养至对数生长期作为发酵用的菌种。发酵罐采用酸碱中和培养、补料培养等策略进行高密度培养得到高活菌数发酵液,使用碟式或管式离心机离心获得菌泥,菌泥与脱脂乳保护剂混合乳化后进行冻干、粉碎,获得乳双歧杆菌、嗜酸乳杆菌、鼠李糖乳杆菌、发酵乳杆菌、副干酪乳杆菌和植物乳杆菌冻干粉;
2)将各种益生菌冻干粉与鸡内金、麦芽粉、大枣粉、山楂粉、赤藓糖醇、低聚果糖、异构化乳糖和乳糖醇按比例混合均匀,过60目筛,将混合粉末进行小包装;
3)将小包装按照规格要求装入大盒,检验并装箱入库。
5.根据权利要求1-4所述助消化益生菌固体饮料,其特征在于,所述助消化益生菌固体饮料水分含量不大于5%,水分活度在0.1-0.175之间。
