The invention has surprisingly found that the addition of bamboo shoot powder which is usually taken as dietary fiber food as an anticaking agent can simultaneously improve the hygroscopicity and the fluidity of the product, thereby not only avoiding the problem that the product absorbs moisture and is agglomerated, but also ensuring that the fluidity of the product just meets the requirements of the production and packaging conditions of solid beverages. A large number of creative tests show that the effect is related to the configuration and the particle size of the bamboo shoot powder, and the anti-caking agent consisting of the bamboo shoot powder with the particle size of 10-30 mu m and the bamboo shoot powder with the particle size of 160-200 mu m in a mass ratio of 1: 1-1.5 has an obvious effect of improving the anti-caking property and the flowability of the seaweed powder solid beverage.
The above effects are presumed to occur because the bamboo shoot powder contains a large amount of dietary fibers after the acid-base extraction method, and the fiber surface has many irregular surface forms such as cracks and pores, thereby increasing the specific surface area of the bamboo shoot powder particles. The normal bamboo shoot powder dietary fiber is a compact long-chain structure, and the bamboo shoot powder with the particle size of 10-30 mu m destroys the long-chain structure of the fiber, so that the whole structure of the bamboo shoot powder becomes bulky and porous, the specific surface area is increased, the moisture absorption of the bamboo shoot powder is further improved, but the water holding capacity is poor due to the excessively small particle size; the dietary fiber in the bamboo shoot powder with the particle size of 160-200 mu m can keep a relatively intact long chain structure, and although the moisture absorption effect is not better than that of the bamboo shoot powder with the particle size of 10-30 mu m, the water holding capacity is better. The combination of the two bamboo shoot powders with different particle sizes can ensure that the anti-caking agent bamboo shoot powder has extremely strong moisture absorption capacity and water holding capacity, on one hand, the anti-caking agent bamboo shoot powder can effectively prevent the solid beverage matrix from absorbing moisture, and on the other hand, the anti-caking agent bamboo shoot powder can be effectively prevented from desorbing, thereby obviously improving the anti-caking property of the product. In addition, the bamboo shoot powder with the particle size of 10-30 microns has extremely strong adsorbability, and the characteristic can enable the bamboo shoot powder to be adsorbed on the surface of solid beverage powder particles, particularly the surface of seaweed calcium with a honeycomb type porous structure, so that the specific surface area of the powder particles is reduced, and the flowability of the product is improved.
The invention has the beneficial effects that:
1. the natural seaweed meal is used as a main calcium source, the compatibility is scientific, the nutrition is comprehensive, the components interact with each other, the absorption and the utilization of the organism to calcium are further improved, the bone mineral density is effectively increased, the calcium supplement effect is obvious, and safe and well-absorbed dietary nutrition supplement food is provided for consumers.
2. The anti-caking agent prepared by the bamboo shoot powder with two different particle sizes is added, so that the anti-caking property and the fluidity of the seaweed powder solid beverage can be effectively improved, the seaweed powder solid beverage is good in taste and is more easily accepted by consumers.
3. The seaweed powder solid beverage provided by the invention is simple in preparation method, easy in raw material obtaining, low in cost and beneficial to large-scale production.
Detailed Description
The present invention will be described in further detail with reference to the following examples. It should not be understood that the scope of the above-described subject matter of the present invention is limited to the following examples.
Example 1 preparation method of bamboo shoot powder
Drying and crushing bamboo shoots, adding deionized water according to the mass ratio of the feed liquid of 1:40, adding 1.0mol/L sodium citrate solution to adjust the pH value to 4, carrying out ultrasonic extraction for 20min under the conditions that the temperature is 70 ℃ and the power is 400W, centrifuging, and taking supernate; adjusting the pH value of the supernatant to 9 by using 0.1mol/L NaOH solution, centrifuging, and taking a precipitate; washing the precipitate with deionized water to neutrality, oven drying, and pulverizing into bamboo shoot powder with particle sizes of 10, 30, 160, 180 and 200 μm.

The preparation method of the seaweed powder solid beverage comprises the following steps:
s1 microencapsulating vitamin D3Mixing with polydextrose to obtain premix;
s2, adding the premix, the seaweed meal, the xylitol, the orange meal and the anticaking agent into a mixer, mixing uniformly, sieving with a 60-mesh sieve, and packaging to obtain the seaweed honey-fried green tea.
Comparative example 1 seaweed powder solid beverage
The difference from example 4 is that no anticaking agent was added, and the remaining components and preparation method refer to example 4.
Comparative example 2 seaweed powder solid beverage
The difference from example 4 is that the anti-caking agent is bamboo shoot powder with a particle size of 180 μm, and the rest of the components and the preparation method thereof refer to example 4.
Comparative example 3 seaweed powder solid beverage
The difference from example 4 is that the anti-caking agent is bamboo shoot powder with a particle size of 10 μm, and the rest components and the preparation method refer to example 4.
Comparative example 4 seaweed powder solid beverage
The difference from the embodiment 4 is that silicon dioxide is used to replace bamboo shoot powder, the using amount of the silicon dioxide is 0.5 part, and the rest components and the preparation method refer to the embodiment 4.
Test example 1 Effect of increasing bone DensityEvaluation of
Animal experiments were conducted according to the functional test method for increasing bone mineral density and calcium absorption experiments in the "health food test and evaluation technical Specification" (2003 edition of Ministry of health).
1. Test materials:
1.1 test samples and materials:
taking the seaweed powder solid beverage prepared in the embodiment 2-4 as a sample; in the test, 50 SPF-grade healthy weaning rats (4 weeks old) are selected, the weight of the rats is 70-80 g, the temperature of a feeding room is 20-25 ℃, and the relative humidity is 40-70%.
1.2 dose design: the recommended dose of the seaweed powder solid beverage for adults (with the weight of 60 kg) to take per day is 8g/60kg.BW, and referring to pharmacological experimental methodology compiled by professor of xu tert-yun, the dose is 0.82g/kg.BW according to the equivalent dose ratio of 6.17 converted from the body surface area between human and animals and the groups of examples 2-4. A basal feed group was set, and a calcium carbonate control group (calcium level was the same as that of example 4 group).
1.3 sample preparation: adding deionized water to 10mL of the seaweed powder solid beverage prepared in the embodiment 2-4, and uniformly preparing a test solution; dissolving calcium carbonate in 10ml of ionized water, and uniformly mixing to prepare a calcium carbonate control group test solution. Each group of drinking water was deionized water.
2. The test method comprises the following steps:
after one week of adaptation period, weaning rats born for 4 weeks were fasted for 12 hours and weighed, and immediately grouped according to body weight, 10 rats in each group were raised in cages. Deionized water was drunk to avoid calcium pick up from drinking water. Gavage and sample feeding are carried out once a day, deionized water is fed to the basal feed group, and the other groups are fed with samples according to dosage design for 3 months. Body weight and body length were recorded once a week for each group of animals. During this period, all rats were fed 6g of normal feed per day 3 times per day.
3. Calcium absorption test
Performing calcium metabolism test for 3 days after feeding for 3 weeks, recording food intake for 3 days, collecting feces for 72 hours, oven drying the rat feces sample in a drying oven at 105 deg.C, cooling in a dryer, and grinding; feed samples were mixed evenly and sieved through a 20 mesh sieve. The calcium content in the feed and the excrement is measured by an atomic absorption spectrophotometry.
Calculated according to the following formula:
the intake of calcium (mg/d) is equal to the calcium content (mg/g) in the feed multiplied by the feed consumption (g/d),
calcium in feces (mg/d) is the calcium content in feces (mg/g) x feces excretion (g/d),
the apparent absorption rate of calcium is (calcium intake-calcium faecalis)/calcium intake x 100%.
4. Measuring the bone density of the femur:
after feeding for 3 months, sacrificed, rats were dissected, the left femur was dissected, the femur was baked to constant weight, and the dry weight of the femur was measured. The Discovery-wi type bone densitometer is used for measuring the bone density of the midpoint of the femur and the distal end of the femur of a rat, and the bone calcium content is measured by an atomic absorption method.
5. The data statistical method comprises the following steps:
performing mean comparison by adopting single-factor variance analysis in SPSS10.0 statistical software, and performing LSD (least squares decomposition) method for pairwise comparison among groups when the variances are uniform; when the variance is uneven, the Tamhane method is adopted for pairwise comparison among the groups.
6. And (3) test results:
6.1 Effect of seaweed powder solid drink of the invention on rat body weight
As can be seen from Table 2, the weight average of the test precursors of the rats in the groups of examples 2-4 was not significantly different from that of the basal feed group and the calcium carbonate control group, and the weight average of the body of the rats in the groups of examples 2-4 was significantly increased after the test (p < 0.05).

6.2 Effect of seaweed powder solid beverage of the invention on calcium absorption of rats
As can be seen from Table 3, compared with the basal feed group and the calcium carbonate control group, the rats in the groups of examples 2-4 have no significant difference in weight and length before the test, and the rats in the groups of examples 2-4 have significant increase in weight and length after the test (p is less than 0.05); meanwhile, the expressed absorption rates of calcium of rats in the groups of examples 2-4 are higher than those of the basal feed group and the calcium carbonate control group, and the difference is significant (p is less than 0.05), which indicates that the seaweed powder solid beverage has higher calcium absorption rate and is better than that of the calcium carbonate control group.

6.3 Effect of seaweed powder solid beverage of the invention on rat femur Dry weight, bone Density and bone calcium content
As can be seen from Table 4, compared with the basal feed group and the calcium carbonate control group, the dry weight of the femur, the bone density and the bone calcium content of the rats in the groups of examples 2-4 are significantly increased (p is less than 0.05) after the test, which indicates that the seaweed powder solid beverage of the invention has a significant calcium supplementing effect and is superior to the calcium carbonate control group.

test example 2, general Performance test
1. Test materials: seaweed meal solid beverages prepared in examples 2 to 4 and comparative examples 1 to 4.
2. The test method comprises the following steps:
(1) anti-caking property: each group was sampled 500g and hermetically packed with common white plastic bags, each bag was 25g, and each group was 20 bags. Placing the bagged tea for 3 months under the conditions that the temperature is 40 ℃ and the humidity is 75%, randomly taking out 5 bags of samples from each group when the bagged tea is placed for 0, 10, 30 and 90 days, sieving the samples by a 60-mesh sieve, and calculating the caking rate.
The caking rate is the mass of product left on the screen/mass of product x 100%.
(2) Fluidity: angle of repose injection, 50g of each group of samples are respectively dropped onto a horizontally placed flat plate along a funnel, after the samples completely drop, the included angle between the inclined plane of the sample pile on the flat plate and the flat plate is tested and recorded as the angle of repose, the operation is repeated three times, and the average value is taken.
3. And (3) test results: the results of the conventional performance tests are shown in Table 5.

As can be seen from Table 3, on day 90, the samples of the groups 2 to 4 and the samples of the groups 1 to 3 of the comparative examples all have caking, but the samples of the groups 2 to 4 have extremely low caking rate and the anti-caking capacity is equivalent to that of the traditional anti-caking agent silicon dioxide.
The flowability of the samples in the groups 2-4 is obviously superior to that of the samples in the groups 1-3 in the comparative examples, which shows that the anti-caking agent prepared by the invention can obviously improve the flowability of the seaweed powder solid beverage; however, the flowability of the samples in the groups 2 to 4 is not as good as that of the sample in the comparative example 4, which shows that the flow aiding effect of the anti-caking agent prepared by the invention is not as good as that of silicon dioxide, however, in the preparation process of the solid beverage, the flowability of the powder is too large, which is not beneficial to the flow rate control of the production package of the product, and the anti-caking agent prepared by the invention just meets the requirements of the production package conditions of the solid beverage.

Claims (7)
1. The seaweed powder solid beverage is characterized by comprising the following components in parts by weight: 18-30 parts of seaweed powder, 30-40 parts of polydextrose, 30-40 parts of xylitol, 8-12 parts of orange powder and microencapsulated vitamin D30.0002 to 0.0007 part by weight.
2. The seaweed meal solid beverage according to claim 1, characterized by comprising the following components in parts by weight: 21 parts of seaweed powder, 34 parts of polydextrose, 35 parts of xylitol, 10 parts of orange powder and microencapsulated vitamin D30.0006 part.
3. The seaweed meal solid beverage according to claim 1 or 2, further comprising 5-12 parts of an anti-caking agent.
4. The seaweed meal solid beverage as claimed in claim 3, wherein the anticaking agent is composed of bamboo shoot powder having a particle size of 10 to 30 μm and bamboo shoot powder having a particle size of 160 to 200 μm.
5. The seaweed meal solid beverage according to claim 4, wherein the mass ratio of the bamboo shoot powder with the particle size of 10-30 μm to the bamboo shoot powder with the particle size of 160-200 μm is 1: 1-1.5.
6. The seaweed powder solid beverage according to claim 4 or 5, wherein the preparation method of the bamboo shoot powder comprises the following steps:
drying and crushing bamboo shoots, adding deionized water according to the mass ratio of feed liquid of 1: 30-50, adding 0.8-1.2 mol/L sodium citrate solution to adjust the pH value to 4-5, carrying out ultrasonic extraction for 15-25 min at the temperature of 60-80 ℃ and the power of 300-500W, centrifuging, and taking supernatant; adjusting the pH value of the supernatant to 8-9 by using 0.05-0.15 mol/L NaOH solution, centrifuging, and taking a precipitate; washing the precipitate with deionized water to neutrality, oven drying, and pulverizing.
7. A method for preparing seaweed meal solid beverage is characterized by comprising the following steps:
s1 microencapsulating vitamin D3Mixing with polydextrose to obtain premix;
s2, adding the premix, seaweed meal, xylitol, orange meal and anticaking agent into a mixer, mixing uniformly, sieving and packaging.
