s1) steaming the soaked soybeans, and cooling to below 40 ℃ to obtain a steamed material; parching wheat and bran to slight yellow, and pulverizing the steamed material together with the parched wheat and bran;
s2) mixing the seed yeast into the crushed materials in the step 1, uniformly stirring, and then placing the materials added with the seed yeast into a fermentation tank to fill the fermentation tank;
s3) simultaneously communicating the air pipe and the water pipe through a fan, and simultaneously feeding filtered moist air into the fermentation tank from the middle part and the bottom of the fermentation tank;
s4) after fermentation for a period of time, cutting off the communication between the fan and the water pipe through a three-way valve, and placing preheated saline water into the storage tank through the water pipe;
s5) starting a peristaltic pump to spray the saline solution in the storage tank onto the fermented material at the middle lower part of the fermentation tank through the oil spraying pipe, slowly releasing finished soy sauce from the discharge port after continuously spraying for a period of time, and simultaneously continuously and slowly releasing the saline solution from the water pipe into the storage tank;
s6) after oil is continuously sprayed for a period of time, starting a screw conveying pump, and discharging slag at the bottommost part of the fermentation tank from a slag discharge port;
s7) starting the screw conveying pump, and simultaneously supplementing crushed materials without adding seed yeast into the fermentation tank from the feed inlet, so that a soy sauce brewing mode of continuous fermentation, continuous oil spraying and continuous oil discharging can be realized.
