具体实施方式
本公开描述用于控制泡沫的方法。本文所描述的方法具体与食品加工应用相关。在食品加工期间,在生产过程中的各个阶段都可产生泡沫。当在加工期间进行通气(例如通过机械搅动、混合、洗涤、萃取、搅拌、喷射等产生)时,泡沫由表面活性物质(如蛋白质、脂肪酸和糖)的存在引起。泡沫以许多不同的方式损害食品加工过程,并且极大地扰乱加工流程。与不使用本文所描述的方法的类似食品加工相比,本文所描述的方法在限制食品加工应用中产生的泡沫量方面是有效的。在不受理论限制的情况下,预期本公开的方法具有以下特征:(1)限制食品加工中产生的泡沫量(也称为抗泡剂)和(2)使所产生的泡沫降至最低或消除(也称为消泡剂)。如本领域中已知,将食品组合物和泡沫控制剂例如通过混合来组合。

选择泡沫控制剂中所含的任选溶剂以适合于溶解或分散式(1)的组合物。此类溶剂包括烃(芳香族和脂肪族二者)和氧化溶剂(醇、酮、醛、醚、二醇醚、酯和二醇醚酯)。
选择泡沫控制剂中所含的任选表面活性剂或乳化剂以适合于改进泡沫控制剂对食物的润湿性,或形成具有式(1)的组合物的乳液。任选的表面活性剂或乳化剂的量在式(1)的组合物的0.1重量%-30重量%的范围内。
任选的表面活性剂或乳化剂可以是阴离子的、阳离子的或非离子的。合适的阴离子表面活性剂或乳化剂的实例是碱金属、铵和胺皂;此类皂的脂肪酸部分优选地含有至少16个碳原子。皂也可以“原位”形成;换句话说,可将脂肪酸添加到油相中且将碱性材料添加到水相中。
合适的阴离子表面活性剂或乳化剂的其它实例是烷基-芳基磺酸的碱金属盐、二烷基磺基琥珀酸钠、硫酸化或磺化油(例如硫酸化蓖麻油);磺化牛脂和短链石油磺酸的碱金属盐。
合适的阳离子表面活性剂或乳化剂是长链伯、仲或叔胺的盐,如油酰胺乙酸盐、十六烷基胺乙酸盐、二-十二烷基胺乳酸盐、氨基乙基-氨基乙基硬脂酰胺的乙酸盐、二月桂酰基三亚乙基四胺二乙酸盐、1-氨基乙基-2-十七烯基咪唑啉乙酸盐;和季盐,如十六烷基溴化吡啶鎓、十六烷基乙基氯化吗啉鎓和二乙基双十二烷基氯化铵。
合适的非离子表面活性剂或乳化剂的实例是高碳数脂肪醇与环氧乙烷的缩合产物,如油醇与10个环氧乙烷单元的反应产物;烷基酚与环氧乙烷的缩合产物,如异辛基酚与12个环氧乙烷单元的反应产物;高碳数脂肪酸酰胺与5个或更多个环氧乙烷单元的缩合产物;长链脂肪酸的聚乙二醇酯,如四乙二醇单棕榈酸酯、六乙二醇单月桂酸酯、九乙二醇单硬脂酸酯、九乙二醇二油酸酯、十三乙二醇单花生酸酯、二十三乙二醇单山嵛酸酯、二十三乙二醇二山嵛酸酯、如脱水山梨醇三硬脂酸酯的多元醇偏高碳数脂肪酸酯、多元醇偏高碳数脂肪酸酯以及其内酸酐(甘露醇酐,称为Mannitan,和山梨醇酐,称为Sorbitan)的环氧乙烷缩合产物,如与10分子环氧乙烷反应的甘油单棕榈酸酯、与12分子环氧乙烷反应的季戊四醇单油酸酯、与10-15分子环氧乙烷反应的山梨醇酐单硬脂酸酯、与10-15分子环氧乙烷反应的甘露醇酐单棕榈酸酯;其中一个羟基用高碳数脂肪酸酯化并且另一个羟基用低分子醇醚化的长链聚乙二醇,如甲氧基聚乙二醇550单硬脂酸酯(550意指聚乙二醇醚的平均分子量)。可使用这些表面活性剂中的两种或更多种的组合;例如,阳离子可与非离子掺合,或阴离子可与非离子掺合。
泡沫控制剂还可包含一种或多种添加剂。添加剂的实例包括环氧乙烷/环氧丙烷嵌段共聚物、环氧丁烷/环氧丙烷嵌段共聚物、环氧乙烷/环氧丁烷嵌段共聚物、蜡或基于硅酮的材料。
本文所描述的“食品组合物”是泡沫控制剂与食物的组合。食物是马铃薯衍生物或甜菜衍生物或其组合。如本文所使用,衍生物意指加工过的食物。此类方法的实例包括洗涤、切片、发酵、磨碎、压碎、去皮和混合。甜菜衍生物优选地是糖用甜菜衍生物(sugarbeetderivative)。可以在添加泡沫控制剂之前根据一个或多个加工步骤对食物进行预加工。或者,食物可以在加工步骤之间洗涤,从而在加工步骤的一个或多个期间单独添加泡沫控制剂。
将泡沫控制剂以足够的量添加到食物中,以达到所述过程所需的泡沫控制水平。应认识到,不同的食品加工技术导致不同泡沫产生水平,并且因此,需要不同量的泡沫控制剂来达到所需的结果。添加到食物中的泡沫控制剂的量以占泡沫控制剂和食物的组合重量(食品组合物的总重量)的百分比来测量,其中泡沫控制剂的量是食品组合物总重量的0.01重量%到5重量%,优选地是食品组合物总重量的0.1重量%到1重量%。
实例
混合的C8-C10格尔伯特醇的合成:
通过真空将2wt%的氢氧化钠于水中的溶液(50mL)转移到300mL的帕尔反应器(Parr reactor)中。然后将戊醛(48.2g,0.56mol)和丁醛(40.4g,0.56mol)进行预混合,并且随后添加到反应器中。用氮气加压反应器并快速搅拌(900rpm),同时加热到120℃,在达到温度之后,搅拌反应混合物持续两小时,从而引起C8-C10烯醛中间体的形成。在五次氮气加压-放空-真空循环的情况下将C8-C10烯醛中间体装入含有25g镍5887-200催化剂(Nickel 5887-200 catalyst)(购自格雷斯催化剂技术公司(Grace CatalystTechnologies))的500mL注射管中,之后添加到反应器中。在添加期间,将反应控制在约25℃和1000rpm下。当温度逐渐上升到所需的设定点时,确定氢气控制压力(500psig)和时间零点(time zero)。在150℃和500psig-750psig下进行氢化。一旦氢气消耗停止,就确定反应结束。进程结束时,排出C8-C10格尔伯特醇产物并加以过滤以去除催化剂细粒。将此格尔伯特醇混合物在未经纯化的情况下用作泡沫控制剂进行测试(实例5)。
精制混合的C8-C10格尔伯特醇以获得C9格尔伯特醇
使用旋转带蒸馏塔在真空下以约10的回流比从如上文所描述制备的混合C8-C10格尔伯特醇的样品蒸馏C9格尔伯特醇(2-乙基庚-1-醇(2-ethylheptan-1-ol)和2-丙基己-1-醇(2-propylhexan-1-ol))的混合物。将此混合物用作泡沫控制剂进行测试(实例2)
实例1.可商购自西格玛-奥德里奇公司的2-乙基-1-己醇(C8格尔伯特醇)。

泡沫控制性能评估
马铃薯用水洗涤、去皮并切片。将780g切片的马铃薯和520g去离子(DI)水添加到厨房食品加工机中,并加工1分钟。产生马铃薯浆液,将其透过滤纸进行过滤,并将所述液体用于评估泡沫控制剂。这种液体被称为马铃薯液。
类似地,糖用甜菜用水洗涤、去皮并切片。将780g切片的糖用甜菜和520g DI水添加到食品加工机中,并加工1分钟。产生糖用甜菜浆液,将其透过滤纸进行过滤,并将所述液体用于评估泡沫控制剂。这种液体被称为糖用甜菜液。
对于实例和比较实例中所描述的醇中的每一种,制备两个样品。第一样品含有0.5g的相应实例或比较实例中所描述的醇和99.5g的马铃薯液,以得到100g的用于评估的材料。第二样品含有0.5g的相应实例或比较实例中所描述的醇和99.5g的甜菜液,以得到100g的用于评估的材料。制备两个对照样品。第一样品含有100g马铃薯液,而不含任何醇。第二样品含有100g甜菜液,而不含任何醇。
利用喷射管测试来评估格尔伯特醇作为泡沫控制剂的性能。此测试程序的描述在文献中为已知的并且以引用的方式并入本文中:N.D.Denkov,“通过基于油的消泡剂来破坏泡沫的机理(Mechanisms of Foam Destruction by Oil-Based Antifoams)”,《朗缪尔(Langmuir)》2004,20(22),9463-9505。通过测量材料对泡沫高度的影响来评估材料的“泡沫控制效率”。将100g上文所描述的每种液体样品单独添加到直径为5cm的1000mL玻璃圆筒中。将装配有烧结玻璃料的竖直气体喷射管放置在圆筒底部,并从圆筒底部鼓入空气。气流由设置为1的Ametek Lo-Flo 0-10浮点仪控制。在施加气流后的前10分钟期间记录泡沫高度。如果泡沫高度在前10分钟内达到1000mL,那么停止实验。
表1和2分别为随时间变化的实例、比较实例和对照样品的糖用甜菜液和马铃薯液的泡沫体积。在所述表中,实例缩写为“ex.”,且比较实例缩写为“cp.”。泡沫体积的数值单位为mL。如表中所示,对于马铃薯液和糖用甜菜液两者,格尔伯特醇的存在引起比没有格尔伯特醇的比较实例低得多的泡沫含量水平,其中泡沫体积在5分钟内达到至少1000mL。

3.根据权利要求1所述的方法,其中所述泡沫控制剂含有30重量%到100重量%的如式(1)中所示的所述组合物。
4.根据权利要求1到3中任一项所述的方法,其中所述食品组合物中的所述泡沫控制剂的量为0.01重量%到5重量%。
5.根据权利要求1到3中任一项所述的方法,其中所述食品组合物中的所述泡沫控制剂的量为0.1重量%到1重量%。
6.根据权利要求1到5中任一项所述的方法,其中所述泡沫控制剂还包含溶剂。
7.根据权利要求1到6所述的方法,其中所述泡沫控制剂还包含表面活性剂或乳化剂。
8.根据权利要求1到7中任一项所述的方法,其中所述食品加工包含洗涤、切片、发酵、磨碎、压碎、去皮或混合中的一种或多种。
9.根据权利要求1到8中任一项所述的方法,其中所述泡沫控制剂还包含添加剂,所述添加剂包含环氧乙烷/环氧丙烷嵌段共聚物、环氧丁烷/环氧丙烷嵌段共聚物、环氧乙烷/环氧丁烷嵌段共聚物、蜡或基于硅酮的材料。
10.根据权利要求1到9中任一项所述的方法,其中所述食物包含马铃薯衍生物或甜菜衍生物。
12.根据权利要求11所述的食品组合物,其中所述食品组合物中的所述泡沫控制剂的量为0.01重量%到5重量%。
13.根据权利要求11到12中任一项所述的食品组合物,其中所述泡沫控制剂还包含溶剂。
14.根据权利要求11到13中任一项所述的食品组合物,其中所述泡沫控制剂还包含添加剂:环氧乙烷嵌段共聚物、环氧丙烷嵌段共聚物、环氧丁烷嵌段共聚物、蜡或基于硅酮的材料。
15.根据权利要求11到14中任一项所述的食品组合物,其中所述食物包含马铃薯衍生物或甜菜衍生物。
