Adding ground coffee bean into water at a weight ratio of 1:15, extracting under 2Mpa at 85 deg.C until the weight of solid in water is 67% of the weight of ground coffee bean, and extracting.
The extract was concentrated under vacuum at-55 deg.C and 82.7Kpa to a 40% concentration.
Drying the concentrated solution by spray drying to obtain solid granular selenium-rich herbaceous coffee, wherein the hot air temperature of the spray drying method is 115 ℃.
EXAMPLE III
The embodiment of the invention provides a preparation method of instant selenium-rich herbaceous coffee, which adopts the selenium-rich herbaceous coffee beans as raw materials and comprises the following steps:
removing impurities, broken beans, shrunken grains and mildewed beans in the coffee beans, washing the coffee beans with purified water, and drying for later use.
Sequentially roasting the dried coffee beans at 150 ℃ in a first stage to raise the temperature to 200 ℃, wherein the heating rate is 6 ℃/min, roasting at 200 ℃ in a second stage to lower the temperature to 135 ℃, wherein the cooling rate is 17 ℃/min, roasting at 135 ℃ in a third stage to raise the temperature to 170 ℃, wherein the heating rate is 9 ℃/min, and adding linseed oil in the third stage.
Grinding the roasted coffee beans to a powder having a particle size of about 0.6 mm.
Adding ground coffee bean into water at a weight ratio of 1:12, extracting under 1.9Mpa at 88 deg.C until the weight of solid in water is 77% of the weight of ground coffee bean, and extracting the extractive solution.
The extract was concentrated at-45 ℃ under vacuum at 90Kpa to a concentration of 39%.
Drying the concentrated solution by spray drying to obtain solid granular selenium-rich herbaceous coffee, wherein the hot air temperature of the spray drying method is 120 ℃.
The nutrient components of the instant selenium-rich herbaceous coffee prepared by the embodiment of the invention comprise: 395 kilojoules (kj) per 20 g of energy, 0.8 g (g) per 20 g of protein, 4 g (g) per 20 g of fat, 16 mg (mg) per 20 g of carbohydrate and 15 ug (ug) per 20 g of selenium, and the selenium-enriched functional food has good color, fragrance and taste and is a new resource of health-care functional food.
According to the instant selenium-rich herbaceous coffee and the preparation method thereof, coffee beans are roasted by a sectional heating mode, and wild vegetable oil is added in the third stage, so that the best effect of the color, the fragrance and the taste of the coffee beans is achieved. Extracting water-soluble components from the coffee beans at a certain temperature and pressure, and controlling the extraction rate to make the extracted coffee have optimal taste. Vacuum concentration of the extract at low temperature prevents loss of aroma and selenium from the coffee. The spray drying method can prepare instant coffee granules on the premise of keeping aromatic substances in the coffee to the maximum extent, and is convenient to drink.

Claims (10)
1. Selenium-rich herbaceous coffee beans are characterized by containing selenium, and the content of the selenium in the coffee beans is more than 70 mug/100 g.
2. A method for preparing instant selenium-enriched herbaceous coffee, characterized in that the selenium-enriched herbaceous coffee beans of claim 1 are used as raw materials, comprising:
removing impurities, broken beans, shrunken grains and mildewed beans in the coffee beans, cleaning the coffee beans with purified water, and drying for later use;
sequentially roasting the dried coffee beans at 150 ℃ in a first stage to increase the temperature to 200 ℃, roasting at 200 ℃ in a second stage to decrease the temperature to 135 ℃, roasting at 135 ℃ in a third stage to increase the temperature to 170 ℃, and adding wild vegetable oil in the third stage;
grinding the roasted coffee beans to powder with a particle size of 0.45-1.25 mm;
adding the ground coffee beans into an extraction solvent, extracting under certain pressure and temperature until the weight of solid matters in the extraction solvent is 67-77% of the weight of the ground coffee beans, and extracting an extract;
vacuum concentrating the extractive solution at-45-55 deg.C to obtain 38-40% concentrated solution;
and drying the concentrated solution by adopting a spray drying method to obtain the solid granular selenium-rich herbaceous coffee.
3. The method of claim 2, wherein washing coffee beans with purified water and drying the coffee beans for use comprises:
standing in water for 18-36 hr to ferment;
flushing the fermented coffee beans by using running water until the surfaces of the coffee beans are smooth and clean;
spreading the washed coffee beans, and drying in natural light for 10-20 days to make the water content of the coffee beans less than 12% and the drying temperature of 22-28 deg.C.
4. The method of preparing instant selenium-enriched herbaceous coffee as claimed in claim 2, wherein the temperature rising rate of the first stage is 5-7 ℃/min, the temperature lowering rate of the second stage is 15-19 ℃/min, and the temperature rising rate of the third stage is 8-10 ℃/min.
5. The method of preparing instant selenium-enriched herbaceous coffee according to claim 2, wherein the wild vegetable oil is one of tea oil, sea buckthorn oil and linseed oil.
6. The method of preparing instant selenium-enriched herbaceous coffee as set forth in claim 2, wherein the roasted coffee beans are ground into a powder having a particle size of 0.6-0.8 mm.
7. The method for preparing instant selenium-enriched herbaceous coffee as claimed in claim 2, wherein the pressure of extraction is 1.8-2Mpa, the temperature is 85-90 ℃, and the weight ratio of the ground coffee beans to the extraction solvent is 1 (11-15).
8. The method of claim 2, wherein the vacuum concentration is at a pressure of about 82.7Kpa to about 90.6 Kpa.
9. The method of claim 2, wherein the hot air temperature of the spray drying method is 110-120 ℃.
10. Instant selenium-enriched herbaceous coffee, characterized in that it is prepared by the preparation method according to any one of claims 2-9.
