Abstract
本发明提供了一种鱼油微囊粉剂及其制备方法,涉及食品及饲料制剂技术领域,鱼油微囊粉剂由各种鱼油微囊粉、乳化剂、抗结剂、充填剂制成;制备方法包括以下步骤:(1)单双甘油酯、抗坏血酸棕榈酸酯、维生素E溶于鱼油中,得到油悬液A;(2)酪蛋白酸钠、麦芽糊精、蔗糖溶解于水中制成溶液B;(3)溶液A、溶液B置于高速剪切机中,用磷酸氢二钾调节溶液pH值至7.0‑7.5;进行剪切乳化,制得鱼油乳化液液;(4)乳化液在均质机30MPa‑40MPa压力下均质,均质后得到鱼油微囊液;(5)将制得鱼油微囊粉和抗结剂混匀后,制得鱼油微囊粉。本发明制备得到的鱼油微囊粉,可以做为食品、饲料添加的辅料,为鱼油在食品、饲料行业中提供了更广泛、便捷的应用。

本发明涉及食品及饲料制剂技术领域,具体涉及鱼油微囊粉剂及其制备方法。
背景技术
鱼油是从鱼类中提取的油脂, 与其他动物油脂以饱和脂肪酸为主不同, 鱼油含有丰富的多不饱和脂肪酸, 主要成分有EPA (二十碳五烯酸) 、DHA (二十二碳六烯酸) ,以及人体必需脂肪酸—花生四烯酸、亚麻酸和亚油酸等。高品质或经深加工的鱼油主要用于食品、保健品以及药品。鱼油具有鱼腥味和易于被氧化的性质, 在应用上受到了一定的局限性。
微囊技术可有效的将鱼油包埋,使鱼油的腥味被包埋在微囊内部,能够消除大部分鱼油的腥味,也能有效的隔绝氧气,避免鱼油被氧化,造成营养成份的损失。
发明内容
本发明提供了一种鱼油微囊粉及其制备方法,鲭鱼、鲱鱼、金枪鱼、比目鱼、鲑鱼、鳕鱼油、鲸脂等鱼油与乳化剂酪蛋白酸钠混合做为油相,用麦芽糊精、蔗糖与水昆合形成水相,作为包埋剂,经乳化、均质后形成均匀的鱼油微囊,经喷雾干燥后制成鱼油微囊粉。这种鱼油微囊粉可有效的保护鱼油中的不饱和脂肪酸被氧化变质,造成营养成份的损失,并能有效的隔绝鱼油的鱼腥味。
为实现上述发明的目的,本发明采取的技术方案如下:
一种鱼油微囊粉剂,由各种鱼油微囊粉、乳化剂、抗结剂、充填剂制成,所述鱼油微囊粉中含有以下重量百分比的组分:鱼油30%-60%,酪蛋白酸钠8%-13%,维生素E 0.1%-0.2%,抗坏血酸棕榈酸酯0.05%-0.2%,单双甘油酯0.05%-0.2%,麦芽糊精18%-26%,蔗糖14%-21%,维生素C钠0.5%-0.3%,磷酸氢二钾0.5%-1.5%。
本发明中鱼油粉微囊剂的制备方法,包括以下步骤:
(1)取鱼油400-600g,加入单双甘油酯0.5-2g,维生素E 1-2g,抗坏血酸棕榈酸酯0.5-2g,加热到50-70℃,搅拌混合均匀,得到溶液A,备用;
(2)取麦芽糊精180-260g、蔗糖140-210g,抗坏血酸钠0.5-3g,酪蛋白酸钠80-130g溶于2500mL纯化水中制成溶液B,备用;
(3)将溶液A、溶液B置于高速剪切机中,用磷酸氢二钾将pH值调至7.0-7.5之间,用高速剪切机充分乳化,乳化时间30-60min,使之达到完全乳化,制成鱼油乳化液,备用;
(4)将鱼油乳化液倒入高压均质机,调整均质压力30-40MPa,均质后得到鱼油微囊液,备用;
(5)将制得鱼油微囊乳液进行喷雾干燥,得到鱼油微囊粉,备用;
(6)将鱼油微囊粉和5-9g润滑剂,得到鱼油微囊粉;
优选地,步骤(1)中,制备溶液A的过程中,控制在50-70℃。
优选地,步骤(1)中,所述鱼油、单双甘油酯、维生素E与抗坏血酸棕榈酸酯的质量体积比为400-600:140-210:0.5-2:1-2:0.5-2g/g。
优选地,步骤(2)中,所述麦芽糊精、蔗糖、抗坏血酸钠、酪蛋白酸钠与纯化水的质量体积比为180-260:140-210:0.5-3:80-130:2500 g/mL。优选地,步骤(3)中,将高速剪切机中的物料温度控制在35-40℃。

本发明中制备的鱼油微囊粉剂的表面油含量小于1%。
本发明中制备得到的鱼油微囊粉剂符合GB 13432—2013预包装食品营养标签通则食品安全国家标准的各项规定,鱼油含量大于标示量的80%。
本发明的有益效果是:
本发明中,鲭鱼、鲱鱼、金枪鱼、比目鱼、鲑鱼、鳕鱼油、鲸脂等鱼油与乳化剂酪蛋白酸钠等混合做为油相,用麦芽糊精、蔗糖等与水混合形成水相,作为包埋剂,经乳化、均质后形成均匀的鱼油微囊,经喷雾干燥后制成鱼油微囊粉。这种鱼油微囊粉可有效的保护鱼油中的不饱和脂肪酸被氧化变质,造成营养成份的损失,并能有效的隔绝鱼油的鱼腥味。
本发明制备鱼油微囊粉的方法步骤简单,易于操作,能有效的保存鱼油中的不饱和脂肪酸不受到破坏。鱼油、酪蛋白酸钠、麦芽糊精、蔗糖之间的质量配比严格控制在本发明限定的配比范围内,之后混合乳化后喷雾干燥,使得到的鱼油微囊粉中微囊粒径大小均一,微囊形状规整,且产品的稳定性明显增加。本发明制备得到的鱼油微囊粉剂,对鱼油的包埋率很高,表面油的含量低于1%,有效抑制鱼油的氧化变质,提高产品的保质期,并且溶解后很快的分解,快速释放有效成分,最大限度的提高了鱼油的利用率。
具体实施方式
下面结合实例对本发明作进一步的具体描述。显然,所描述的实施例仅仅是本发明的一部分实施例,而不是全部的实施例。基于本发明中的实施例,本领域普通技术人员在没有做出创造性劳动前提下所获得的所有其他实施例,都属于本发明保护的范围。
实施例1:
一种鱼油微囊粉剂的制备
(1)取金枪鱼油400g,单双甘油酯1g,维生素E 1.2g,抗坏血酸棕榈酸酯0.6g,加热到50-70℃,搅拌混合均匀,得到溶液A,备用。
(2)取麦芽糊精180g、蔗糖140g,加入酪蛋白酸钠80g,抗坏血酸钠0.8g溶于2500mL纯化水中制成溶液B,备用。
(3)将溶液A、溶液B置于高速剪切机中,用磷酸氢二钾将pH值调至7.0-7.5之间,用高速剪切机充分乳化,乳化时间30-60min,使之达到完全乳化,制成鱼油乳化液,备用。
(4)将鱼油乳化液倒入高压均质机,调整均质压力30-40MPa,均质后得到鱼油微囊液,备用。
(5)将制得鱼油微囊乳液进行喷雾干燥,得到鱼油微囊粉,备用。
(6)将鱼油微囊粉和5g润滑剂,得到鱼油微囊粉。
实施例2:
一种鱼油微囊粉剂的制备
(1)取鲑鱼油450g,加入单双甘油酯1.5g,维生素E 1.5g,抗坏血酸棕榈酸酯0.8g,加热到50-70℃,搅拌混合均匀,得到溶液A,备用。
(2)取麦芽糊精245g、蔗糖189g,抗坏血酸钠1.2g, 酪蛋白酸钠80g溶于2500mL纯化水中制成溶液B,备用。
(3)将溶液A、溶液B置于高速剪切机中,用柠檬酸将pH值调至5.0-6.5之间,用高速剪切机充分乳化,乳化时间30-60min,使之达到完全乳化,制成鱼油乳化液,备用。
(4)将鱼油乳化液倒入高压均质机,调整均质压力30-40MPa,均质后得到鱼油微囊液,备用。
(5)将制得鱼油微囊乳液进行喷雾干燥,得到鱼油微囊粉,备用。
(6)将鱼油微囊粉和5g润滑剂,得到鱼油微囊粉。
实施例3:
一种鱼油微囊粉剂的制备
(1)取鳕鱼油400g,加入单双甘油酯1.5g,维生素E 1.0g,抗坏血酸棕榈酸酯1.2g,加热到50-70℃,搅拌混合均匀,得到溶液A,备用。
(2)取麦芽糊精220g、蔗糖172g,酪蛋白酸钠80g钠1.0g,酪蛋白酸钠100g溶于2500mL纯化水中制成溶液B,备用。
(3)将溶液A、溶液B置于高速剪切机中,用柠檬酸将pH值调至5.0-6.5之间,用高速剪切机充分乳化,乳化时间30-60min,使之达到完全乳化,制成鱼油乳化液,备用。
(4)将鱼油乳化液倒入高压均质机,调整均质压力30-40MPa,均质后得到鱼油微囊液,备用。
(5)将制得鱼油微囊乳液进行喷雾干燥,得到鱼油微囊粉,备用。
(6)将鱼油微囊粉和8g润滑剂,得到鱼油微囊粉。
尽管本发明的实施方案已公开如上,但其并不仅仅限于说明书和实施方式中所列运用,它完全可以被适用于各种适合本发明的领域,对于熟悉本领域的人员而言,对于本领域的普通技术人员而言,在不脱离本发明的原理和精神情况下可以对这些实施例进行多种变化、修改、替换和变型,因此在不背离权利要求及等同范围所限定的一般概念下,本发明并不限于特定的细节。
Claims (10)
1.一种鱼油微囊粉剂,其特征在于,由鲭鱼、鲱鱼、金枪鱼、比目鱼、鲑鱼、鳕鱼油、鲸脂等鱼油微囊粉、乳化剂、抗结剂、充填剂制成,所述鱼油微囊粉中含有以下重量百分比的组分:鱼油30%-60%,酪蛋白酸钠8%-13%,维生素E 0.1%-0.2%,抗坏血酸棕榈酸酯0.05%-0.2%,单双甘油酯0.05%-0.2%,麦芽糊精18%-26%,蔗糖14%-21%,维生素C钠0.05%-0.3%,磷酸氢二钾0.5%-1.5%。
2.如权利要求1所述的鱼油微囊粉剂,其特征在于,所述鱼油微囊粉剂的平均粒径均20-500nm。
3.如权利要求1所述的鱼油微囊粉剂,其特征在于,所述抗结剂为二氧化硅、硬脂酸镁、滑石粉、磷酸钙中的至少一种。
4.一种如权利要求1-3中任一项所述的鱼油微囊粉剂的制备方法,其特征在于,包括以下步骤:
(1)取鱼油400-600g,加入单双甘油酯0.5-2g,维生素E 1-2g,抗坏血酸棕榈酸酯0.5-2g,加热到50-70℃,搅拌混合均匀,得到溶液A,备用;
(2)取麦芽糊精180-260g、蔗糖140-210g,抗坏血酸钠0.5-3g,酪蛋白酸钠80-130g溶于2500mL纯化水中制成溶液B,备用;
(3)将溶液A、溶液B置于高速剪切机中,用磷酸氢二钾将pH值调至7.0-7.5之间,用高速剪切机充分乳化,乳化时间30-60min,使之达到完全乳化,制成鱼油乳化液,备用;
(4)将鱼油乳化液倒入高压均质机,调整均质压力30-40MPa,均质后得到鱼油微囊液,备用;
(5)将制得鱼油微囊乳液进行喷雾干燥,得到鱼油微囊粉,备用;
(6)将鱼油微囊粉和5-9g润滑剂,得到鱼油微囊粉。
5.如权利要求4所述鱼油微囊粉的制备方法,其特征在于,步骤(1)中,制备溶液A的过程中,控制在50-70℃。
6.权利要求4所述鱼油微囊粉的制备方法,其特征在于,步骤(1)中,所述鱼油、单双甘油酯、维生素E 及抗坏血酸棕榈酸酯的质量体积比为400-600:140-210:0.5-2:1-2:0.5-2g/g。
7.权利要求4所述鱼油微囊粉的制备方法,其特征在于,步骤(2)中,所述麦芽糊精、蔗糖、抗坏血酸钠、酪蛋白酸钠与纯化水的质量体积比为180-260:140-210:0.5-3:80-130:2500 g/mL。
8.权利要求4所述鱼油微囊粉的制备方法,其特征在于,步骤(3)中,将高速剪切机中的物料温度控制在35-40℃。
9.权利要求4所述鱼油微囊粉的制备方法,其特征在于,步骤(3)中,将高速剪切机的转速为10000转/分。
10.权利要求4所述鱼油微囊粉的制备方法,其特征在于,步骤(4)中,高压均质机的压力控制在30-40MPa;高压均质机中的料液温度控制在35-45℃。
