3) the problem of bitterness of linseed oil is considered to be caused mainly by the fact that the linseed oil contains bitter cyclic peptide substances with immunosuppressive action, such as cyclic octapeptide, and the bitter taste of the bitter peptide is mostly caused by hydrophobic residues;
4) the processing mode is that α -linolenic acid in flaxseed and flaxseed oil is very active, and an improper processing mode can cause the decomposition of α -linolenic acid in flaxseed oil, so that the nutritional performance of a product is influenced.
