Abstract
The invention relates to a preparation method of detoxified linseed powder and debitterized linseed oil, which belongs to the field of vegetable oil processing and comprises the following steps of ① placing flaxseeds in a superheated steam device for processing, cooling to 30-50 ℃, ② squeezing and filtering the product obtained in the step ① at a low temperature to obtain virgin linseed oil and flaxseed cake pulp, ③ treating the virgin linseed oil in a high-voltage pulse electric field, carrying out fine filtration after adsorption by an adsorbent to obtain debitterized flaxseed oil, and ④ crushing and sieving the flaxseed cake pulp to obtain the detoxified flaxseed powder.

Technical Field
The invention relates to a preparation method of detoxified linseed powder and debitterized linseed oil, belonging to the field of vegetable oil processing.
Background
The linseed oil is rich in α -linolenic acid, which is beneficial to human health, although the heat of the linseed and the linseed oil is continuously high in recent years, the market potential is huge, the prospect is wide, but the application and popularization of the linseed oil still have the following disadvantages:
1) flaxseed contains cyanogenic glucoside substances, and is easy to remain in flaxseed oil and flaxseed cake meal after being squeezed at low temperature, so that the edible safety is influenced;
2) linseed oil is easy to precipitate and is turbid, flaxseed contains flaxseed gum, and after being squeezed, the flaxseed gum is suspended in grease to generate precipitate substances along with the prolonging of time, so that the grease is turbid, and the quality of the grease is influenced;
3) the problem of bitterness of linseed oil is considered to be caused mainly by the fact that the linseed oil contains bitter cyclic peptide substances with immunosuppressive action, such as cyclic octapeptide, and the bitter taste of the bitter peptide is mostly caused by hydrophobic residues;
4) the processing mode is that α -linolenic acid in flaxseed and flaxseed oil is very active, and an improper processing mode can cause the decomposition of α -linolenic acid in flaxseed oil, so that the nutritional performance of a product is influenced.

The present invention solves the above problems by a novel preparation method.
The invention provides a preparation method of detoxified linseed powder and debitterized linseed oil, which comprises the following steps of ① placing flaxseeds in a superheated steam device for processing, cooling to 30-50 ℃, ② squeezing and filtering the product obtained in the step ① at a low temperature to obtain virgin flaxseed oil and flaxseed cake pulp, ③ treating the virgin flaxseed oil in a high-voltage pulse electric field, carrying out fine filtration after adsorption by an adsorbent to obtain the debitterized flaxseed oil, and ④ crushing and sieving the flaxseed cake pulp to obtain the detoxified linseed powder.
The low-temperature pressing is pressing at the temperature of below 65 ℃.
The fine filtration is hollow fiber filtration with the filtration precision of 5 mu m or 1 mu m.
The invention preferably selects the step ①, wherein the superheated steam temperature is 130-190 ℃, the steam pressure is 0.2-1MPa, and the treatment time is 4-12 s.
In the preferred method of the present invention, in the step ③, the electric field intensity of the high voltage pulse is 20-35kV/cm, the pulse width is 10-30 μ s, and the number of pulses is 10-20.
Preferably, in step ①, the flaxseed is obtained by screening raw materials, dehulling, and secondary screening.
The invention preferably selects the raw materials comprising stone removal, magnetic separation, color separation and classification.
In the present invention, preferably, in the step ③, the adsorbent is activated carbon.
The present invention is preferably that in said step ④, the powder is sieved through a 60 mesh sieve.
Compared with the prior art, the invention has the beneficial effects that:
the method firstly peels the flaxseeds to remove impurities and dust attached to the surfaces of the flaxseeds, improves the cleanliness of the flaxseeds and removes most of colloid at the same time.
The method adopts superheated steam to treat the flaxseeds, so that toxic substances are passivated quickly on one hand, and the aim of detoxification is fulfilled; on the other hand, the flaxseed can be quickly cured and flavored. Because the processing time is extremely short, the original color and nutrition of the flaxseeds are effectively reserved, so that the quality of grease and flaxseed cakes obtained by subsequent pressing is not influenced, the adverse effect of the traditional oil pressing mode on the aspect of physicochemical properties is avoided, and because of the special property of superheated steam, the moisture content of the processed flaxseeds is not increased, and drying is not needed. In addition, the superheated steam can effectively sterilize the flaxseeds, thereby avoiding the breeding of microorganisms of the finished flaxseed powder.
The method adopts a high-voltage pulse electric field to treat the linseed oil, and effectively degrades bitter and bitter precursor substances (bitter peptides and proteins) under the action of a strong electric field to obtain the linseed oil without bitter.
The method has the advantages of simple steps, short time consumption, low energy consumption, high efficiency and low cost.
Compared with the common cold pressing method for preparing the linseed oil, the linseed oil prepared by the method disclosed by the invention has the advantages that the oil extraction rate is obviously improved, the oil fragrance is strong, no bitter taste exists, the clarity and the transparency are realized, no precipitate exists, and no bitter taste exists and no precipitate exists after the linseed oil is placed for a period of time.
The linseed powder prepared by the method disclosed by the invention is good in color, non-toxic, mellow in smell and qualified in microorganism detection indexes, and can be used as a brewing or baking product, so that high additional economic value is generated.

Example 1
A preparation method of detoxified flaxseed powder and debitterized flaxseed oil comprises the following steps:
① removing stones, magnetic separating, color selecting, grading, shelling, and sieving to obtain semen Lini, placing semen Lini in superheated steam device at 140 deg.C and steam pressure of 0.5MPa for 9s, and cooling to 50 deg.C;
② squeezing the product obtained in step ① at low temperature, filtering to obtain virgin oleum Lini and semen Lini cake;
③ placing the virgin oleum Lini in a high voltage pulse electric field with electric field intensity of 25kV/cm, pulse width of 20 μ s and number of pulses of 16, and fine filtering to obtain debitterized oleum Lini after adsorption with active carbon;
④ pulverizing semen Lini cake, and sieving with 60 mesh sieve to obtain detoxified semen Lini powder.
Example 2
A preparation method of detoxified flaxseed powder and debitterized flaxseed oil comprises the following steps:
① removing stones, magnetic separating, color selecting, grading, shelling, and sieving to obtain semen Lini, placing semen Lini in superheated steam device at 160 deg.C and 0.4MPa for 7s, and cooling to 40 deg.C;
② squeezing the product obtained in step ① at low temperature, filtering to obtain virgin oleum Lini and semen Lini cake;
③ placing the virgin oleum Lini in a high voltage pulse electric field with electric field intensity of 20kV/cm, pulse width of 15 μ s and number of pulses of 12, and fine filtering to obtain debitterized oleum Lini after adsorption with active carbon;
④ pulverizing semen Lini cake, and sieving with 60 mesh sieve to obtain detoxified semen Lini powder.
Comparative example 1
Partial indexes of the linseed oil obtained by adopting a common cold pressing method are detected, and the results are compared with the linseed oil obtained by the method disclosed by the invention and shown in table 1.

As shown in table 1, the acid value, peroxide number and trans-fatty acid content of linseed oil prepared by the method described in example 1 are substantially the same as those of a common cold pressing method, but the oil yield is significantly improved, the fragrance is strong, and no bitterness and precipitation are generated after long-term storage.

① treating semen Lini in superheated steam device, and cooling to 30-50 deg.C;
② squeezing the product obtained in step ① at low temperature, filtering to obtain virgin oleum Lini and semen Lini cake;
