技术领域
本发明涉及一种用于减少或消除包装在软包装中的感官敏感食品和其包装产品的感官劣化的方法。本发明还涉及感官软包装,其由包含氧化稳定性和非迁移性聚硅氧烷作为滑爽添加剂的聚合物膜制成。所述聚硅氧烷滑爽添加剂的氧化稳定性和非迁移性提供了一种感官软包装,其与包装在其中的感官敏感食品无相互作用并且对所述感官敏感食品是惰性的,特别是:(1)咖啡;(2)啤酒;(3)水;和(4)葡萄酒。
背景技术
用于包装液体的聚烯烃膜描述于美国专利号4,503,102;4,521,437;5,206,075;5,364,486;5,508,051;5,721,025;5,879,768;5,942,579;5,972,443;6,117,4656;6256,966;6,406,765;6,416,833;和6,767,599中。这些专利描述了用于制造包括食品包装在内的用于包装的软包装的聚合物共混物。这些专利以引用的方式并入本文。
在食品包装领域中,包装的正面影响(即附加影响)或包装的负面影响(即走味(scalping))是不期望的结果。换句话说,包装应当对所包装的食品是惰性的或中性的,并且与所述食品无相互作用。特别是,对于诸如葡萄酒的敏感产品或诸如水的中性产品,由包装引起的风味特征的任何变化都是特别有害的。
对于软液体包装,某些添加剂提供了生产这些包装所需的塑料膜的优异的可加工性。降低膜的摩擦系数的常见添加剂被称作“滑爽添加剂”。用于聚乙烯膜的典型的滑爽添加剂包括脂肪酸酰胺。脂肪酸酰胺在膜中不是非常可溶的并且会迁移到膜的表面。脂肪酸酰胺在膜表面处的蜡质层用以降低膜的摩擦系数,从而改善它的可加工性。
然而,这些脂肪酸酰胺中有许多含有不饱和基团,所述不饱和基团容易发生化学氧化。此外,存在于膜表面上并且与液体产品直接接触的这些脂肪酸酰胺具有迁移到液体中的倾向。迁移到液体产品中的被氧化的脂肪酸酰胺会在与膜接触的产品中产生腐臭的异味。这对于使用诸如用于灭菌的臭氧的氧化添加剂(如臭氧水)的产品来说尤其是个问题,这是因为臭氧会氧化脂肪酸酰胺。

发明内容
本发明涉及防止包装食品的感官特性的劣化,在所述包装食品中保持感官特性很重要。本发明还涉及这样的包装食品,其显示出更低的使它们的感官特性劣化的倾向。
本发明涉及一种用于减少包装在软包装中的食品的感官劣化的方法,所述方法包括提供所述软包装,其中所述软包装由包含聚乙烯的膜制成,其中所述聚乙烯包含至少一种抗氧化性滑爽添加剂。
在一个实施方式中,本发明还涉及本文所述的方法,其中所述食品是感官敏感食品。在又一个实施方式中,本发明涉及本文所述的方法,其中所述感官敏感食品是液体。在一个实施方式中,本发明涉及上述方法,其中所述液体是咖啡、葡萄酒、水或啤酒。

本发明涉及作为感官敏感食品的流动食品和非流动食品。下文对感官敏感食品进行了定义。
如本文所用的术语“流动产品”涵盖了在重力下可流动或可以被泵送的材料。流动产品包括流体、液体、半液体、糊状物和其组合,在它们中含有或不含颗粒。流动产品包括食品。这样的材料包括液体,例如牛奶、水、汁液、果汁、油;乳液,例如冰淇淋混合物、软人造黄油;糊状物,例如肉酱、奶酪、酱汁和花生酱;腌制食品,例如果酱、馅饼馅料和桔柑酱;果冻;面团;碎肉,例如香肠肉;粉末,例如明胶粉;粒状固体,例如坚果、糖和盐;果泥;浓缩物;混合物;和这样的材料。本文所述的发明对于流动食品特别有用。
非流动产品意指一般较大的固体,例如不被认为是颗粒或颗粒物质的固体。虽然本发明适用于流动产品和非流动产品这两者,但是本发明是关于流动产品来论述的。所述论述同样也适用于非流动产品。
“感官特性”意指与味觉、视觉、嗅觉和触觉有关的食品方面。
“感官敏感食品”意指这样的食品,其中保持感官特征很重要。这样的食品可以是固体、液体、糊状物或固体和液体的共混物。优选的是,“感官敏感食品”是液体。在一个实施方式中,本发明中的感官敏感食品指的是咖啡、啤酒、水和葡萄酒。
“软容器”或“软包装”意指用于食品的包装,其一般由聚合物膜,如聚乙烯膜制成。这样的膜可以具有一层或多层。软容器的壁可以具有一个膜(包含一层或多层)或多个膜(每一个膜包含一层或多层)。在本公开内容中,“软容器”和“软包装”应当被理解为可互换的术语。

“盒中袋”或BiB意指用于储存和运输液体的一种类型的软容器。它由坚固的囊状物(或塑料袋)组成,所述囊状物通常由几层聚合物膜制成,被放在瓦楞纸盒内。所述袋被提供给灌装公司,所述灌装公司然后将对空的预制袋进行灌装。用其产品对所述袋进行灌装的公司一般会去除龙头,对所述袋进行灌装(例如用葡萄酒)并且更换龙头,然后将所述袋放置在盒中。所述袋可作为用于半自动机器的单件使用或作为连卷袋使用,其中这些袋在每一个之间具有穿孔。这些用于自动化灌装系统上,其中在所述袋被自动灌装之前或之后所述袋被在线分开。根据最终用途,有许多选择方案可以用于袋上,而不是龙头上。所述袋可以在从冷藏产品温度到85℃下被灌装。
盒中袋包装可以使用立式成型-灌装-封口机(VFFS机)技术制成,其中从膜卷在线制造所述袋,然后插入FlexTap,然后在一体式旋转头灌装机上灌装。
聚硅氧烷滑爽添加剂
本发明的感官软容器,如盒中袋容器,是由聚合物膜制成的,所述聚合物膜特别使用聚硅氧烷和滑爽添加剂,而不是脂肪酸酰胺。
在化学上,有机硅聚合物是非常稳健的并且在食品包装的通常存在的条件下几乎没有或没有氧化的倾向。因此,它们是用于对感官敏感食品用膜进行改性的理想候选者。
利用常见的滑爽剂的膜配方有给诸如葡萄酒和水的敏感产品增添异味的倾向。非常期望具有由这样的聚合物膜配方制成的软容器,所述配方具有摩擦系数(COF)低的优势,但是没有异味的缺点。此外,其它滑爽添加剂具有迁移到感官敏感食品中的倾向。滑爽添加剂氧化并且迁移到食品中的倾向会产生腐臭的异味和/或降低感官敏感的包装食品的质量和口感。有机硅聚合物添加剂提供了这个问题的解决方案。
正是脂肪酸酰胺作为滑爽添加剂才会在口感和气味的感官特性方面造成这个问题。用作聚乙烯膜的滑爽剂的脂肪酸酰胺是通过来自诸如牛脂和植物油的天然来源的脂肪酸的胺化而制得的。例如,公知的用于聚乙烯的滑爽剂是芥酸酰胺(CAS 112-84-5),这是一种具有一个不饱和基团的22碳结构。用于聚合物改性的其它常见的酰胺是山嵛酸酰胺和硬脂酰胺。类似于它们的脂肪酸母体,这些酰胺容易发生氧化,从而产生“腐臭”异味,这在诸如水和葡萄酒的中性或敏感内容物中是特别明显的。所述氧化可以通过膜的正常老化而发生或可以是在灌装中使用的氧化过程(例如臭氧化)的结果。
由Si-O单元的主链组成的有机硅聚合物或聚硅氧烷具有极强的抗氧化性。用于改变PE膜的表面摩擦力的高分子量硅氧烷聚合物可以提供膜COF的充分降低,同时避免了使用更传统的脂肪酸酰胺带来的问题。将感官敏感食品包装在用包含聚硅氧烷滑爽添加剂的膜制成的软容器中保留了所包装的食品的感官特性,更特别是咖啡、啤酒、水和葡萄酒。水包括臭氧水。
使用诸如来自陶氏化学公司(Dow Chemical Co.)的MB25-35的聚硅氧烷滑爽添加剂提供了PE膜以实现具有良好加工性、稳健性和耐屈挠龟裂性的袋子,但是避免了对感官敏感食品的负面影响。除了氧化稳定性之外,硅氧烷的高分子量也意味着它们将不会迁移到产品中。
在一个实施方式中,本发明提供了(1)一种用于制造感官软容器的方法和(2)由所述方法制造的所述感官软容器。
在另一个实施方式中,本发明涉及包装在感官软容器中的感官敏感食品。在一个实施方式中,本发明涉及这样的成品食品包装的制造方法。换句话说,在另一个实施方式中,本发明还提供了一种感官软容器,其包含以下四种感官敏感食品之一,即:(1)咖啡;(2)啤酒;(3)水;和(4)葡萄酒。
在一个实施方式中,本发明涉及感官软容器的制造方法,所述感官软容器是“盒中袋”或小袋(参见例如美国专利号4,796,788和3,173,579中的描述,这两者均以引用的方式并入本文)。
在一个实施方式中,本发明涉及感官软容器的制造方法,所述方法包括例如(A)提供具有表现出感官特性的聚合物膜的四个面板的软容器。在一个实施方式中,这四个面板形成(i)主体部分;(ii)颈部和从颈部延伸的扩口部分;(iii)主体部分与颈部之间的渐缩过渡部分;和(iv)颈部具有减小的宽度,扩口部分具有扩大端;并且扩口部分的宽度从颈部到扩口扩大端(即扩口部分的扩大端)逐渐增加。所述方法包括(B)将配件从扩大端插入到扩口部分中。
感官软容器
所述方法包括提供感官软容器。在一个实施方式中,所述软容器由四个面板制成。在制造过程中,当将一个以上膜材料幅材密封在一起时形成所述面板。类似地,可以使用一个、两个、或更多个幅材来制造每一个对应的面板(即袋中袋构造或囊状物构造)。类似地,也可以制备多层膜。
在一个实施方式中,这四个面板可以各自由单独的膜材料幅材构成。每一个膜材料幅材的组成和结构可以是相同的或不同的。可选地,也可以使用一个膜材料幅材来制造所有四个面板以及顶部和底部区段。在另一个实施方式中,可以使用两个以上幅材来制造每一个面板。
感官软容器的构造材料可以包含食品级塑料。例如,可以使用尼龙;聚丙烯;聚乙烯,如线性低密度聚乙烯(LLDPE)、高密度聚乙烯(HDPE)和/或低密度聚乙烯(LDPE),如随后所论述。感官软容器的膜可以具有足以在制造、配送、产品保质期和顾客使用期间维持产品和包装完整性的厚度和阻隔特性。
在一个实施方式中,软多层膜具有100微米,或200微米,或250微米至300微米,或350微米,或400微米的厚度。在一个实施方式中,膜材料在软容器内提供适当的气氛以维持至少约180天的产品保质期。此外,可能期望使用具有耐油性和/或耐化学性的构造材料,特别是在密封层中,但不仅限于密封层。软多层膜可以是可印刷的或相容的以接收压敏标签或其它类型的标签以用于在软容器上显示标记。
在一个实施方式中,每一个面板由具有至少一层或至少两层或至少三层的软多层膜制成。软多层膜是有弹性的、软的、可变形的和柔韧的。用于每一个面板的软多层膜的结构和组成可以是相同的或不同的。例如,这四个面板中的每一个可以由单独的幅材制成,每一个幅材具有独特的结构和/或独特的组成、表面处理或印刷。可选地,这四个面板中的每一个可以具有相同的结构和相同的组成。在一个实施方式中,每一个面板是具有相同结构和相同组成的软多层膜。

用于密封层的合适的聚合物材料的非限制性实例包括烯烃类聚合物(包括任何线性/支化的乙烯/C3-C10α-烯烃共聚物)、丙烯类聚合物(包括塑性体和弹性体、无规丙烯共聚物、丙烯均聚物和丙烯抗冲共聚物)、乙烯类聚合物(包括塑性体和弹性体、高密度聚乙烯(“HDPE”)、低密度聚乙烯(“LDPE”)、线性低密度聚乙烯(“LLDPE”)、中密度聚乙烯(“MDPE”)、乙烯-丙烯酸或乙烯-甲基丙烯酸和它们与锌盐、钠盐、锂盐、钾盐、镁盐的离聚物、乙烯乙酸乙烯酯共聚物和其共混物。
用于外层的合适的聚合物材料的非限制性实例包括用于制造用于层压的双轴或单轴取向膜以及共挤出膜的那些。一些非限制性聚合物材料实例是双轴取向的聚对苯二甲酸乙二醇酯(OPET)、单轴取向的尼龙(MON)、双轴取向的尼龙(BON)和双轴取向的聚丙烯(BOPP)。可用于构造膜层以获得结构益处的其它聚合物材料是聚丙烯(如丙烯均聚物、无规丙烯共聚物、丙烯抗冲共聚物、热塑性聚丙烯(TPO)等、丙烯类塑性体(例如VERSIFYTM或VISTAMAXTM))、聚酰胺(如尼龙6、尼龙6,6、尼龙6,66、尼龙6,12、尼龙12等)、聚乙烯降冰片烯、环烯烃共聚物、聚丙烯腈、聚酯、共聚酯(如PETG)、纤维素酯、聚乙烯和乙烯的共聚物(例如基于乙烯辛烯共聚物的LLDPE,如DOWLEXTM)、其共混物和其多层组合。
用于接合层的合适的聚合物材料的非限制性实例包括官能化的乙烯类聚合物,如乙烯-乙酸乙烯酯(“EVA”)、具有接枝到聚烯烃(如任何聚乙烯、乙烯共聚物或聚丙烯)的顺丁烯二酸酐的聚合物和乙烯丙烯酸酯共聚物,如乙烯丙烯酸甲酯(“EMA”)、含有缩水甘油基的乙烯共聚物、丙烯和乙烯类烯烃嵌段共聚物INFUSETM。可从陶氏化学公司获得的烯烃嵌段共聚物和INTUNETM(可从陶氏化学公司获得的PP类烯烃嵌段共聚物)和其共混物。
软多层膜可以包括另外的层,其可以有助于结构完整性或提供特定的性能。可以通过直接方式或通过使用适当的接合层将另外的层添加到相邻的聚合物层。可以为结构添加可以提供另外的机械性能,如刚度或不透明性的聚合物以及可以提供阻气特性或耐化学性的聚合物。
用于任选的阻隔层的合适的材料的非限制性实例包括偏二氯乙烯和丙烯酸甲酯、甲基丙烯酸甲酯或偏二氯乙烯的共聚物(例如可从陶氏化学公司获得的莎纶树脂);乙烯基乙烯乙烯醇(EVOH)、金属箔(如铝箔)。可选地,当用于层压多层膜中时,改性的聚合物膜,如在诸如BON、OPET或OPP的膜上气相沉积的铝或氧化硅可以用于获得阻隔特性。

(ii)外层,其由具有第二熔融温度(Tm2)的聚合物材料构成,其中Tm2-Tm1>40℃。
术语“Tm2-Tm1”是外层中的聚合物的熔融温度与密封层中的聚合物的熔融温度之间的差,并且也被称为ΔTm。在一个实施方式中,ΔTm是41℃或50℃或75℃或100℃至125℃或150℃或175℃或200℃。

在一个实施方式中,所述软多层膜是七层共挤出膜,其具有密封层,所述密封层由乙烯类聚合物或乙烯和α-烯烃单体(如1-丁烯、1-己烯或1-辛烯)的线性或基本线性聚合物或单位点催化的线性或基本线性聚合物构成,所述聚合物具有90℃至104℃的Tm。所述外层是具有170℃至270℃的Tm的聚酰胺。所述膜具有40℃至200℃的ΔTm。所述膜具有由与密封层中的乙烯类聚合物不同的第二乙烯类聚合物构成的内层(第一内层)。所述膜具有由与外层中的聚酰胺相同或不同的聚酰胺构成的内层(第二内层)。所述七层膜具有100微米至250微米的厚度。
在一个实施方式中,所述软容器具有以下体积:0.050升(L),或0.1L,或0.15L,或0.2L,或0.25升(L),或0.5L,或0.75L,或1.0L,或1.5L,或2.5L,或3L,或3.5L,或4.0L,或4.5L,或5.0L至6.0L,或7.0L,或8.0L,或9.0L,或10.0L,或20L,或30L。
所述感官软容器用于储存流动物质,即咖啡、啤酒、水或葡萄酒。水包括臭氧水。

Claims (19)

1.一种用于减少被包装在感官软容器中的食品的感官劣化的方法,所述方法包括提供所述感官软容器,其中所述感官软容器由包含聚乙烯的膜制成,其中所述聚乙烯包含至少一种抗氧化性和非迁移性滑爽添加剂聚硅氧烷。
2.根据权利要求1所述的方法,其中所述食品是感官敏感食品。
3.根据权利要求2所述的方法,其中所述感官敏感食品是液体。
4.根据权利要求3所述的方法,其中所述液体是咖啡、啤酒、水或葡萄酒。
5.根据权利要求1所述的方法,其中所述软包装是小袋、袋或盒中袋。
6.根据权利要求1所述的方法,其中所述抗氧化性滑爽添加剂是包含聚乙烯和分散在聚乙烯中的超高分子量硅氧烷聚合物的母料。
7.根据权利要求1所述的方法,其中所述包含聚乙烯的膜包含不止一层。
8.根据权利要求7所述的方法,其中所述抗氧化性滑爽添加剂被添加至多层膜的外层。
9.根据权利要求1所述的方法,其中所述聚乙烯包含LLDPE。
10.根据权利要求1所述的方法,其中所述膜不包括有机滑爽添加剂。
11.一种具有减少的感官劣化的包装食品,其包含感官敏感食品,其中所述感官敏感食品被包装在感官软容器中,其中所述感官软容器由包含聚乙烯的膜制成,其中所述聚乙烯包含至少一种抗氧化性和非迁移性滑爽添加剂聚硅氧烷。
12.根据权利要求11所述的包装食品,其中所述感官敏感食品是液体。
13.根据权利要求12所述的包装食品,其中所述液体是咖啡、啤酒、水或葡萄酒。
14.根据权利要求11所述的包装食品,其中所述软包装是小袋、袋或盒中袋。
15.根据权利要求11所述的包装食品,其中所述抗氧化性滑爽添加剂是包含聚乙烯和分散在聚乙烯中的超高分子量硅氧烷聚合物的母料。
16.根据权利要求11所述的包装食品,其中所述包含聚乙烯的膜包含不止一层。
17.根据权利要求16所述的包装食品,其中所述抗氧化性滑爽添加剂被添加至多层膜的外层。
18.根据权利要求11所述的包装食品,其中所述聚乙烯包含LLDPE。
19.根据权利要求11所述的包装食品,其中所述膜不包括有机滑爽添加剂。
