Abstract
本发明涉及特殊医学用途配方食品技术领域,尤其涉及一种添加特定海洋寡肽的全营养肿瘤配方食品及其制备方法。包括以下质量百分比的组分:海洋寡肽6‑8g,乳清蛋白10‑15g,麦芽糊精20‑28g,异麦芽酮糖醇22‑25g,膳食纤维6‑10g,深海脱腥鱼油2‑4g,植物油10‑14g,谷氨酰胺1‑2g,中长链脂肪酸3‑8g,大豆磷脂0.6‑1.2g,矿物质2.00‑2.50g,维生素100‑400mg。本发明制备的特殊医学用途配方食品不仅具有较高的营养价值,而且还能满足人们对乳状液产品的感官需求,无腥味、无苦味、无异味,具有该产品特殊的香味;产品状态均一稳定,放置一段时间后不分层不絮凝不结块,弥补了传统技术的不足之处。

技术领域
本发明涉及特殊医学用途配方食品技术领域,尤其涉及一种添加特定海洋寡肽的全营养肿瘤配方食品及其制备方法。
背景技术
近年来,我国恶性肿瘤死亡率不断上升,并趋近世界较高水平,成为我国居民生命健康的重大威胁。研究表明,癌症病患中有40%-80%都存在营养不良的问题,造成代谢失衡、体重减轻,进而加重机体营养不良状况。恶性肿瘤患者出现一系列生理代谢的变化,表现为肌肉蛋白利用较快、蛋白质更新速率增加、癌组织中蛋白质的转换率可达50-90%、长期的负氮平衡,最终导致蛋白质-热能营养不良、免疫力低下及对手术后抗肿瘤治疗的耐受力下降,甚至体内无足够的能量、蛋白质及其他营养素来维持生命活动,增加了肿瘤人群的死亡率。
特殊医学用途配方食品是为了满足进食受限、消化吸收障碍、代谢紊乱或特定疾病状态人群对营养素或膳食的特殊需要,专门加工配制而成的配方食品。营养是生命的物质基础,在肿瘤患者治疗过程中给予糖类、蛋白质、维生素等的营养补充,有利于改善机体因摄食障碍引起的负氮平衡和营养不良的状态。临床上更多地采用肠外营养(输入营养液)的方式对肿瘤患者进行营养补充,而长期的肠外营养易造成肠道绒毛萎缩、并发感染,加重对机体的危害。因此,国内外临床营养家一致认为,制备易于消化吸收的特殊营养食品,并通过肠内营养途径对肿瘤患者进行营养补充,是一种最符合生理代谢特征、简单易行又经济安全的辅助治疗方法。
蛋白质是人体必需的营养素,对肿瘤患者进行蛋白质补充有利于维持正氮平衡,但由于肿瘤患者合成代谢减慢、分解代谢加快,同时食欲减退、胃肠的消化吸收能力减弱,完整的蛋白质不易被利用。因此,保证患者的营养摄入,尤其是以小分子肽为主要的蛋白源的摄入,是患者康复的基本保证。海洋寡肽作为一种优质蛋白,必需氨基酸化学评分较高,可满足人体的氨基酸需求,其次小分子在肠道内的吸收更迅速,且渗透压低,易被机体利用迅速为患者提供充足的蛋白质供应。经研究报道鳕鱼寡肽具有众多的生理活性,具有抗氧化活性、降低胆固醇、抑制血压升高、增强免疫力等多种生理活性,鳕鱼免疫活性肽不仅能增强机体的免疫力,在体内起着重要免疫调节作用,而且还能刺激机体淋巴细胞的增殖,增强免疫力以及降低肿瘤的发生率和死亡率等多种生理活性。
目前,国内外公司相继推出一系列的特殊医学用途配方产品。德国瑞素和瑞能的适合肿瘤病人的配方食品、雅培亲护和达能的纽荃星的针对早产/低出生体重婴儿的配方食品、杭州贝因美的无乳糖配方和乳蛋白部分水解配方的圣元优博敏佳等,各种各样的特殊医学用途配方食品陆续上市。但是市场上针对肿瘤人群的产品却很少,大多都是自行配餐,或是在注重营养的基础上将具有抗肿瘤功能的活性物质或传统中药成分经过简单混合而成。市场上尚未出现完全针对肿瘤患者营养需求设计搭配的全营养配方产品,进而改善患者体内的负氮平衡和营养不良状态,提高机体免疫力,抵抗肿瘤治疗的副作用。由此可见,市场上适合肿瘤患者的产品大多不是全营养配方,单独使用不能完全满足肿瘤人群的营养需求。
发明内容
本发明要解决的技术问题是市场上适合肿瘤患者的产品大多不是全营养配方,单独使用不能完全满足肿瘤人群的营养需求。
为解决上述问题,本发明通过提供一种添加特定酶切位点和特定肽段的海洋寡肽的全营养特殊医学用途配方食品,以鳕鱼寡肽和乳清蛋白作为蛋白源基质,鳕鱼寡肽具有较高的生物利用度,可被患者快速消化吸收,且氨基酸比例符合人体必需氨基酸需求。根据2013年出版的《特殊医学用途配方食品通则》的要求以及肿瘤患者的营养需求,添加合适比例的完全蛋白质、碳水化合物、膳食纤维、脂肪、维生素、矿物质等。通过本发明制备的全营养特殊医学用途配方食品能够满足肿瘤患者初期的正常营养需求,不添加任何附加药物活性成分,可完全代餐,纠正肿瘤患者体内负氮平衡及营养物质摄取和吸收障碍。
为达到上述目的,本发明通过以下技术方案实现:一种添加特定海洋寡肽的全营养肿瘤配方食品,由以下质量百分比的各组分组成:海洋寡肽6-8g,乳清蛋白10-15g,麦芽糊精20-28g,异麦芽酮糖醇22-25g,膳食纤维6-10g,深海脱腥鱼油2-4g,植物油10-14g,谷氨酰胺1-2g,中长链脂肪酸3-8g,大豆磷脂0.6-1.2g,矿物质2.00-2.50g,维生素100-400mg,余量为水(200-350mL)。
进一步的,所述海洋寡肽为特定酶切位点和特定肽段的鳕鱼低聚肽,并且其分子量为300-800Da。
进一步的,所述鳕鱼低聚肽的制备方法如下:将鳕鱼鱼肉用柠檬酸钠、碳酸氢钠和氯化钠脱苦脱腥后,经过胰酶和碱性蛋白酶进行可控性水解,超滤后得到分子量在300-800Da的寡肽,其中Glu-Glu-Glu、Glu-Asp-Met、Glu-Asp-Asp、Glu-Asp和Asp-Lys的片段反复出现在鳕鱼肽的特征肽序列中,并多以Lys和Met为特征性肽的末端氨基酸。该条件下水解的寡肽分子量较小,可不经消化直接被人体吸收,生物利用率高,在吸收和利用上优于游离氨基酸和完整的蛋白质,并且该特征性片段已被证明具有明显的增强机体免疫力的作用,在应用于蛋白质补充的食品中,对于肿瘤患者尤其是良好的蛋白源补充剂。所以经由本发明方法制备得到的鳕鱼低聚肽同时具有功能特性(增强免疫力)和易吸收特性(分子量在300-800Da)的优异特性。
其中,可控水解的方式例如但不限于以下方式,以得到特征性的肽段组成和分子量为结果:
1)建立并训练人工神经网络,包括网络训练样本的制备、参数确定以及网络的训练步骤;
2)确定酶解系统中初始的底物浓度、初始加酶浓度;
3)利用生物传感器监测水解反应中的特定的氨基酸:每隔一定时间,将固定体积的酶解液注射到生物传感器内,利用特定氨基酸的氧化酶电极进行检测;
4)将初始底物浓度、初始加酶浓度、特定氨基酸浓度等参数输入到训练好的人工神经网络,得出水解产物的水解度,从而实现免疫活性肽的在线监测,实现可控性水解。

进一步的,所述维生素包括占所述医学用途配方食品质量百分比0.1-0.4%。维生素A 400-796ugRE、维生素D 5.0-8.6μg、维生素E 6.0-7.0mg、维生素K 25-28.4μgα-TE、维生素B1 0.9-1.8mg、维生素B2 0.9-1.6mg、维生素B6 0.9-1.1mg、维生素B12 1.3-1.34μg、烟酸4.5-5.5mg、叶酸120-150μg、泛酸3.5-5.0mg、维生素C 80-362mg、生物素12-19μg。
进一步的,一种上述添加特定海洋寡肽的全营养肿瘤配方食品的制备方法,包括以下步骤:
(1)溶解:用蒸馏水分别将麦芽糊精、异麦芽酮糖醇和膳食纤维(即碳水化合物)混合溶解;将海洋寡肽、乳清蛋白和谷氨酰胺(即蛋白质)混合溶解;将中长链脂肪酸溶解;将维生素和矿物质混合溶解;有利于混合过程中蛋白质和碳水化合物充分发生糖基化作用形成稳定的糖蛋白水解物,对于脂肪和维生素形成一种保护作用,减少其损失。
(2)水相混合:将步骤(1)分别溶解的四个溶液进行混合,低速搅打,在脉冲电场的作用下进行预处理,使之充分混合并成均一稳定的溶液;
(3)油相混合:将深海脱腥鱼油和植物油混合,然后向其中加入大豆磷脂,使之充分混合;
(4)水相油相混合:将步骤(2)中的溶液在高速剪切乳化机中进行高速剪切,并慢慢加入步骤(3)中的溶液,使之分散均匀,上层无油滴漂浮;
(5)高压均质:将步骤(4)中的混合物在高压均质机中均质后,即获得新鲜的乳液;
(6)灌装、杀菌:将步骤(5)中的乳液分装到耐高温高压的玻璃瓶中,拧紧瓶盖备用;然后进行反压杀菌,杀菌后样品呈现均匀乳状液体,无分层现象。
进一步的,步骤(1)中的蒸馏水的温度为50-80℃,干物质与蒸馏水的比例为1:3-1:4.5。
进一步的,将步骤(2)获得的混合物在50-80℃,160-200r/min的调速搅拌机中搅拌20-30min,脉冲电场预处理选择6个连续处理腔,脉冲宽度2us,脉冲频率200Hz;选择电场强度分别为25-35kV/cm,各电场强度下分别处理120-240μs。在此条件下,蛋白的乳化性和泡沫稳定性等功能性质较好,对于整个乳化体系稳定性的保持具有重要作用,较强的电场会使极化的蛋白分子之间相互吸引重新聚集,使其变性程度增大,不利于体系的稳定性。

本发明将现代研究进展、肿瘤营养学理论与临床营养学等理论相结合,研制了一种采用食源性深海鱼低聚肽为主要氮的补充来源,糖类、脂肪、维生素、矿物质等混合配制的一种全营养特殊医学用途配方食品,适合于肿瘤患者的营养补充。
本配方食品的特性和对机体的功能作用表现在以下几个方面:
1)全营养特性
本发明制备的肿瘤全营养特殊医学用途配方食品可完全代餐,能够满足肿瘤患者的能量需求以及正常的营养需求,不添加任何药物成分,通过各营养组分之间的协调配合补充肿瘤患者的营养缺失,维持机体各营养素的平衡。此外,鳕鱼低聚肽是一种优质蛋白,必须氨基酸评分较高,可满足人体的氨基酸需求并改善患者体内的负氮平衡及营养吸收障碍。
2)高效吸收性和提高免疫力的功能
本发明以具有特定肽段的鳕鱼低聚肽作为主要蛋白质来源,分子量300-800Da,并有研究表明,鳕鱼低聚肽具有较高的生物利用度,低聚肽在肠道内的吸收更迅速,且渗透压低,即使消化功能较弱的人也容易被吸收并被机体利用为患者提供充足的蛋白质供应,鳕鱼低聚肽是一种优质蛋白,必需氨基酸化学评分较高,可满足人体的氨基酸需求。其次,经研究报道鳕鱼低聚肽具有众多的生理活性,具有抗氧化活性、降低胆固醇、抑制血压升高、增强免疫力等多种生理活性,鳕鱼免疫活性肽不仅能增强机体的免疫力,在体内起着重要免疫调节作用,而且还能刺激机体淋巴细胞的增殖,降低肿瘤的发生率增强免疫力等多种生理活性提高机体免疫功能的作用。目前国内外学者研究阐明,生物活性肽的抗肿瘤作用是通过增强机体特异性和非特异性免疫功能、促进细胞活性因子生成、抗自由基与辐射损伤、促进癌细胞凋亡及直接作用于肿瘤细胞等多种机制而实现的。
3)改善胃肠道功能
本发明选择低聚果糖和菊粉作为膳食纤维来源,因其能够调节肠道菌群,增殖双歧杆菌,调节肠道内平衡,并且具有增强机体免疫力、降血压、降低血清胆固醇、防止便秘等功能,而补充低聚肽可在基本不增加肠道负担的情况下,迅速纠正负氮平衡,改善患者的体质。
4)产品状态均匀稳定,具有较高的稳定性
本发明选择大豆磷脂对油脂进行乳化,油料液中的大颗粒物质经过挤压碰撞,破碎成粒径小而均匀的颗粒;乳清蛋白和鳕鱼肽为主要的蛋白乳化剂,通过蛋白和多糖之间形成糖蛋白复合物,发生交联作用,进而将乳化后的油脂进行包裹,形成均匀稳定的乳液;样品在脉冲电场下预处理,增加样品表面电荷,充分暴露蛋白质和多糖小分子,使其充分混合,形成乳化效果好的体系;样品经过剪切乳化和高压均质后形成产品均匀稳定,并且放置后没有油层析出,无絮状沉淀,无分层,产品稳定性较好。
由此,本发明以添加特定酶切位点和特定肽段的鳕鱼寡肽为蛋白源的营养成分,研发针对肿瘤人群的全营养特殊医学用途配方食品,纠正患者体内的负氮平衡,改善营养不良、吸收障碍等症状。

鳕鱼低聚肽7g,乳清蛋白15g,麦芽糊精25g,异麦芽酮糖醇25g,低聚果糖3g,菊粉3g,深海脱腥鱼油2g,植物油10g,谷氨酰胺1g,中长链脂肪酸5g,大豆磷脂1.05g,复合矿物质2.46g,维生素96.26mg。
矿物质的添加量参照《特殊医学用途配方食品通则》执行,其中,每100g医学用途配方食品成品中矿物质的添加量为:钠540mg、钾550mg、铜450μg、镁90mg、铁7.5mg、锌7mg、锰1.2mg、钙550mg、磷260mg、碘50μg、氯450mg、硒20μg,铬15μg,钼25μg。

(1)溶解:用70℃蒸馏水按照1:3.5(m/v)的比例分别溶解碳水化合物、蛋白质和中长链脂肪酸,使之混合均匀;
(2)水相混合:将步骤(1)分别溶解的三个溶液进行混合,保持70℃,200r/min搅拌20min,脉冲电场强度25kV/cm,处理240μs;
(3)油相混合:在油脂中加入3‰大豆磷脂,充分混合;
(4)水相油相混合:将步骤(2)中的溶液利用高速剪切乳化机8000r/min剪切3min,并慢慢加入步骤(3)中的溶液,使之分散均匀,上层无油滴漂浮;
(5)高压均质:将步骤(4)中的混合物在高压均质机中进行均质,均质压力30MPa,循环3次,获得新鲜的乳液;
(6)灌装:将步骤(5)中的乳液分装到耐高温高压的玻璃瓶中,拧紧瓶盖备用;

矿物质的添加量参照《特殊医学用途配方食品通则》执行,其中,每100g医学用途配方食品成品中矿物质的添加量为:钠450mg、钾480mg、铜200μg、镁80mg、铁6.5mg、锌4.5mg、锰1.1mg、钙450mg、磷270mg、碘30μg、氯500mg、硒20μg,铬15μg,钼25μg。
维生素的添加量参照《特殊医学用途配方食品通则》执行,其中,每100g医学用途配方食品成品中维生素的添加量为:维生素A 500μgRE、维生素D 7μg、维生素E 6.5mg、维生素K 25μgα-TE、维生素B1 0.4mg、维生素B2 0.4mg、维生素B6 0.6mg、维生素B12 1.0μg、烟酸4mg、叶酸100μg、泛酸2mg、维生素C100mg、生物素10μg。
针对肿瘤患者的含海洋低聚肽的特殊医学用途配方食品的制备方法,包括以下步骤:
(1)溶解:用80℃蒸馏水按照1:3.5(m/v)的比例分别溶解碳水化合物、蛋白质和中长链脂肪酸,使之混合均匀;
(2)水相混合:将步骤(1)分别溶解的三个溶液进行混合,保持80℃,200r/min搅拌30min,脉冲电场强度25kV/cm,处理200μs;
(3)油脂的溶解:在油脂中加入3‰大豆磷脂,充分混合;
(4)油相的混合:将步骤(2)中的溶液利用高速剪切乳化机9000r/min剪切3min,并慢慢加入步骤(3)中的溶液,使之分散均匀,上层无油滴漂浮;
(5)高压均质:将步骤(4)中的混合物在高压均质机中进行均质,均质压力30MPa,循环6次,获得新鲜的乳液;
(6)灌装:将步骤(5)中的乳液分装到耐高温高压的玻璃瓶中,拧紧瓶盖备用;

矿物质的添加量参照《特殊医学用途配方食品通则》执行,其中,每100g医学用途配方食品成品中矿物质的添加量为:钠540mg、钾550mg、铜450μg、镁90mg、铁7.5mg、锌7mg、锰1.2mg、钙550mg、磷260mg、碘50μg、氯450mg、硒20μg,铬15μg,钼25μg。
维生素的添加量参照《特殊医学用途配方食品通则》执行,其中,每100g医学用途配方食品成品中维生素的添加量为:维生素A 795μgRE、维生素D 8.6μg、维生素E 7.0mg、维生素K 28.4μgα-TE、维生素B1 1.84mg、维生素B2 1.58mg、维生素B6 1.06mg、维生素B12 1.34μg、烟酸4.5mg、叶酸120μg、泛酸3.5mg、维生素C 362mg、生物素12μg。
针对肿瘤患者的含海洋低聚肽的特殊医学用途配方食品的制备方法,包括以下步骤:
(1)溶解:用70℃蒸馏水按照1:3.5(m/v)的比例分别溶解碳水化合物、蛋白质和中长链脂肪酸,使之混合均匀;
(2)水相混合:将步骤(1)分别溶解的三个溶液进行混合,保持70℃,200r/min搅拌20min,脉冲电场强度25kV/cm,处理240μs;
(3)油脂的溶解:在油脂中加入3‰大豆磷脂,充分混合;
(4)油相的混合:将步骤(2)中的溶液利用高速剪切乳化机8000r/min剪切3min,并慢慢加入步骤(3)中的溶液,使之分散均匀,上层无油滴漂浮;
(5)高压均质:将步骤(4)中的混合物在高压均质机中进行二次均质,均质压力30MPa,循环3次,获得新鲜的乳液;
(6)灌装:将步骤(5)中的乳液分装到耐高温高压的玻璃瓶中,拧紧瓶盖备用;
(7)杀菌:步骤(6)中的乳液进行反压杀菌121℃,15min,杀菌后样品呈现均匀乳状液体,无分层现象。
相关指标的测定方法及结果讨论:
一、测定方法:
(1)肽指纹图谱的测定
使用Agilent G6540 Q-TOF高分辨率质谱仪(Agilent Corporation,USA)测定鳕鱼肉中的肽指纹序列。多肽的碎片信息经收集后进行氨基酸序列的从头计算分析,并将结果与UniProt多肽数据库中的多肽信息进行搜库比对。质谱仪具体参数如下:

(2)样品直观状态图:
分别测定了样品杀菌后的状态图,可以直观的反映样品的状态。
(3)热敏性维生素含量及损失率的测定
根据国家标准分别测定了杀菌后配方中的热敏性维生素的含量,包括:维生素A(GB 5009.82-2016)、维生素E(GB 5009.82-2016)、维生素C(GB 5413.18-2010)、维生素B1(GB 5009.84-2016)、维生素B2(GB 5009.85-2016)的含量。
二、结果分析:
(1)肽指纹图谱分析:
多肽的氨基酸序列对于其生物活性的评价有十分重要的意义。由表2所示。鳕鱼肽的肽指纹图谱组成分析显示多肽序列中富含Glu、Asp和Lys,Glu-Glu-Glu、Glu-Asp-Met、Glu-Asp-Asp、Glu-Asp和Asp-Lys的片段反复出现在鳕鱼肽的特征肽序列中,并多以Lys和Met为特征性肽的末端氨基酸,此外,在鳕鱼鱼肉特征肽的中间发现了支链氨基酸残基重复出现,这可能与加入酶的特异性的酶切位点有关。

(2)不同热处理温度下终乳液宏观图片对比:
样品的直观状态能够最直接的反映出乳液的稳定性如图1所示,由图可知,制备的特殊医学用途配方食品均呈现浅黄色、均一的状态,所有样品均未出现分层现象。当热处理温度在50℃-80℃时,样品流动性较好,未出现肉眼观察到的絮状沉淀,但当热处理温度在90℃时,样品出现了絮凝、结块现象,并且样品颜色变黄、变稠。这说明实施例1中的热处理温度为70℃,此时体系处于一个稳定的乳化体系下,并未出现破乳、乳析等不良现象,有利于乳液的稳定。
(3)不同料液比终乳液宏观图片对比:
如图2所示,所有样品均未出现分层现象。当样品浓度相对较小,料液比在1:3-1:4.5之间时,样品流动性较好,产品状态均一,未出现肉眼观察到的絮状沉淀以及结块、聚集等现象。但当料液比1:2.5时,样品出现了絮凝、结块现象,并且样品颜色变黄、变稠。这说明样品浓度太大,导致乳液体系中大分子发生聚集现象,形成较大的聚集体,从而破坏体系的乳化效果,直接影响乳液的稳定。比对实施例1和实施例2中,样品的料液比均达到合适的浓度。
(4)不同热处理温度对维生素损失的影响:
如图3所示,不同热处理温度条件下维生素均会出现不同程度的损失,并且由于反压杀菌温度较高对维生素造成损失较大。维生素损失率随着热处理温度的增大而呈现增大的趋势,其中,VB2的损失最小,这是因为VB1是非热敏性元素,温度对其损失率影响不大,但是其他维生素对于温度的影响损失率较大。本发明实施例1采用热处理温度70℃,配方产品维生素损失VA、VE、VC、VB1、VB2损失率分别为22.64%,25.65%,35.04%,14.36%,12.29%,因此实施例3根据维生素的损失率以及贮藏后的损失率进行调整,使得配方中的维生素满足肿瘤病人需求。
最后需要说明,以上实施例虽然描述了本发明的具体实施方式,但是并非限制本发明;本领域的技术人员应当理解,这些仅是举例说明,本发明的保护范围是由所附权利要求书所限定的。而一切进行修改或等同替换,其均应包含在本发明的保护范围中。
Claims (10)
1.一种添加特定海洋寡肽的全营养肿瘤配方食品,包括以下质量百分比的组分:海洋寡肽6-8g,乳清蛋白10-15g,麦芽糊精20-28g,异麦芽酮糖醇22-25g,膳食纤维6-10g,深海脱腥鱼油2-4g,植物油10-14g,谷氨酰胺1-2g,中长链脂肪酸3-8g,大豆磷脂0.6-1.2g,矿物质2.00-2.50g,维生素100-400mg。
2.如权利要求1所述的添加特定海洋寡肽的全营养肿瘤配方食品,其特征在于:所述海洋寡肽为具有特定酶切位点和特定肽段的鳕鱼低聚肽,并且分子量为300-800Da。
3.如权利要求2所述的添加特定海洋寡肽的全营养肿瘤配方食品,其特征在于:所述鳕鱼低聚肽的制备方法如下:将鳕鱼鱼肉用柠檬酸钠、碳酸氢钠和氯化钠脱苦脱腥后,经过胰酶和碱性蛋白酶进行可控性水解,超滤后得到分子量在300-800Da的寡肽,其中Glu-Glu-Glu、Glu-Asp-Met、Glu-Asp-Asp、Glu-Asp和Asp-Lys的片段反复出现在鳕鱼肽的特征肽序列中,并多以Lys和Met为特征性肽的末端氨基酸。
4.如权利要求1所述的添加特定海洋寡肽的全营养肿瘤配方食品,其特征在于:所述植物油为大豆油和橄榄油;所述膳食纤维为菊粉和低聚果糖。
5.如权利要求1所述的添加特定海洋寡肽的全营养肿瘤配方食品,其特征在于:所述矿物质为该矿物质的无机化合物;所述矿物质包括占所述医学用途配方食品质量百分比为2-2.5%。钠300-450mg、钾550-680mg、铜200-470μg、镁90-110μg、铁6.0-7.5mg、锌3.0-7.0mg、锰0.2-1.2mg、钙300-550mg、磷260-390mg、碘50-65μg、氯450-500mg、硒20-35μg,钼25-38μg,氟0-0.8mg;
所述维生素包括占所述医学用途配方食品质量百分比0.1-0.4%;维生素A400-796ugRE、维生素D 5.0-8.6μg、维生素E 6.0-7.0mg、维生素K 25-28.4μgα-TE、维生素B10.9-1.8mg、维生素B2 0.9-1.6mg、维生素B6 0.9-1.1mg、维生素B12 1.3-1.34μg、烟酸4.5-5.5mg、叶酸120-150μg、泛酸3.5-5.0mg、维生素C 80-362mg、生物素12-19μg。
6.一种权利要求1中所述添加特定海洋寡肽的全营养肿瘤配方食品的制备方法,其特征在于包括以下步骤:
(1)溶解:用蒸馏水分别将麦芽糊精、异麦芽酮糖醇和膳食纤维混合溶解;将海洋寡肽、乳清蛋白和谷氨酰胺混合溶解;将中长链脂肪酸溶解;将维生素和矿物质混合溶解;
(2)水相混合:将步骤(1)分别溶解的四个溶液进行混合,低速搅打,在脉冲电场的作用下进行预处理;
(3)油相混合:将深海脱腥鱼油和植物油混合,然后向其中加入大豆磷脂,使之充分混合;
(4)水相油相混合:将步骤(2)中的溶液在高速剪切乳化机中进行高速剪切,并慢慢加入步骤(3)中的溶液,使之分散均匀,上层无油滴漂浮;
(5)高压均质:将步骤(4)中的混合物在高压均质机中均质后,即获得新鲜的乳液;
(6)灌装、杀菌:将步骤(5)中的乳液灌装;然后进行反压杀菌。
7.如权利要求6所述的全营养肿瘤配方食品的制备方法,其特征在于:步骤(1)中的蒸馏水的温度为50-80℃,干物质与蒸馏水的比例为1:3-1:4.5。
8.如权利要求6所述的全营养肿瘤配方食品的制备方法,其特征在于:将步骤(2)获得的混合物在50-80℃,160-200r/min的调速搅拌机中搅拌20-30min,脉冲电场预处理选择6个连续处理腔,脉冲宽度2us,脉冲频率200Hz;选择电场强度分别为25-35kV/cm,各电场强度下分别处理120-240μs。
9.如权利要求6所述的全营养肿瘤配方食品的制备方法,其特征在于:步骤(3)中的大豆磷脂的HLB值为8-12,添加量为体系总体积的2-5‰。
10.如权利要求6所述的全营养肿瘤配方食品的制备方法,其特征在于:步骤(4)中的高速剪切机的速度为6000-10000r/min,时间3-5min;步骤(5)中高压均质机的压力为30-60Mpa,均质次数为3-6次。
