Abstract
The invention discloses a formula milk powder for pregnant and lying-in women and a preparation method thereof, wherein the formula milk powder comprises 30-55% of skim milk powder, 30-55% of whole milk powder, 1-8% of inulin, 1-8% of galacto-oligosaccharide, 1-6% of hydrolyzed whey protein powder, 0.2-1.2% of calcium carbonate, 0.1-1.1% of docosahexaenoic acid grease, 0.1-1% of lactose, 0.1-0.8% of mineral substances, 0.1-0.7% of vitamins and 0.02% of bifidobacterium lactis HN019 freeze-dried powder. The milk powder disclosed by the invention takes inulin and galactooligosaccharide as the strengthening factors of bifidobacterium lactis HN019, so that the concentration of bifidobacterium lactis in the excrement of pregnant women is increased, constipation is prevented or relieved, intestinal tract peristalsis is stimulated, the excrement wettability is increased, the intestinal tract flora balance and intestinal tract health are maintained, and the absorption of microelements such as vitamin B1 and zinc by pregnant and lying-in women is improved. The experimental result shows that the pregnant woman feces are obtained after eating the milk powderThe concentration of Bifidobacterium in feces reaches 1010Above cfu/g, the concentration of bifidobacteria in intestinal tract is obviously increased. The formula and the process of the milk powder can also effectively improve the wall sticking problem in the spray drying stage.
Description
Technical Field
The invention relates to the technical field of dairy products, in particular to formula milk powder for pregnant and lying-in women and a preparation method thereof.
Background
The milk powder for pregnant and lying-in women is developed according to the nutrient components required by mothers and infants in the pregnancy, is rich in various nutrients, and can provide sufficient nutrition for expectant mothers and fetus baby. The milk powder can be taken by pregnant women to avoid malnutrition of the pregnant women and the baby fetus, and promote health of the pregnant women and normal development of the baby fetus. The intestinal problems of constipation, flatulence and the like often occur due to the change of physique of women during pregnancy, corresponding nutrients are added into the milk powder for pregnant and lying-in women in the market at present mainly according to the nutritional requirements of the pregnant and lying-in women, and the trouble of the pregnant and lying-in women can be effectively solved from the aspects of improving intestinal flora, promoting digestion and absorption and the like.
Spray drying is generally adopted in the milk powder processing process, the wall sticking phenomenon is a common problem which is difficult to solve in the spray drying process, the wall sticking phenomenon not only causes material loss and reduces product quality, but also can cause the termination of the spray drying process and even production accidents in serious cases. From the research on the wall sticking problem at present, most scholars at home and abroad solve the wall sticking problem of the material from the aspects of hardware such as the atomization angle, the inner wall roughness and the like of the dryer, but the parameters of the dryer are usually determined by manufacturers and are not easy to change, and few people solve the wall sticking problem from the material angle at present.
Disclosure of Invention
In view of the defects of the prior art, the invention provides a pregnant and lying-in woman formula milk powder and a preparation method thereof.
The technical scheme adopted by the invention is as follows:
the formula milk powder for pregnant and lying-in women is characterized by comprising the following components in percentage by mass: 30-55% of skim milk powder, 30-55% of full cream milk powder, 1-8% of inulin, 1-8% of galacto-oligosaccharide, 1-6% of hydrolyzed whey protein powder, 0.2-1.2% of calcium carbonate, 0.1-1.1% of docosahexaenoic acid grease, 0.1-1% of lactose, 0.1-0.8% of mineral substances, 0.1-0.7% of vitamins and HN 0190.02% of bifidobacterium lactis. Each gram of freeze-dried powder contains bifidobacterium lactis HN019 (0.8-1) x 105cfu
Preferably, the minerals comprise: magnesium oxide, ferric pyrophosphate and zinc oxide. The mass ratio of the three is preferably 1 (2-3) to 2-5.
Preferably, the vitamins comprise L-ascorbic acid, D- α -tocopheryl acetate, nicotinamide, D-calcium pantothenate, pyridoxine hydrochloride, thiamine hydrochloride, riboflavin, retinyl acetate, folic acid, cholecalciferol and cyanocobalamine, and the mass ratio of the components is preferably 1 (3-5) to (2-4) to (2-3) to (1-6) to (0.7-1.2) to (2-3) to (3-8) to (1.0-1.5) to (2-4).
The invention provides a preparation method of a formula milk powder for pregnant and lying-in women, which comprises the following steps: adding water into skim milk powder and whole milk powder to mix into reduced milk, wherein the mass ratio of the milk powder to the water is 1 (2-3), adding inulin, galacto-oligosaccharide, hydrolyzed whey protein powder, docosahexaenoic acid grease, lactose and bifidobacterium lactis HN019 freeze-dried powder into the reduced milk, uniformly mixing, pasteurizing, evaporating at 60-70 ℃ until the volume is reduced by 20-30%, homogenizing, spray drying, adding mineral substances and vitamins, dry mixing, sieving and packaging.
The invention also provides another preferable preparation method, and the method is found to enable the material to form a semi-embedding-like effect, has a certain protection effect on the bifidobacterium lactis, and changes the viscosity and the particle size of the material, thereby improving the wall adhesion problem. The method comprises the following steps:
heating water to 55-60 ℃, adding inulin, galacto-oligosaccharide, lactose and hydrolyzed whey protein powder, uniformly mixing, adding docosahexaenoic acid grease and bifidobacterium lactis HN019, mixing, drying under reduced pressure until the volume is reduced by 10-20%, keeping the liquid temperature at 45-50 ℃, adding skim milk powder and whole milk powder, uniformly mixing, pasteurizing, evaporating at 60-70 ℃ until the volume is reduced by 20-30%, homogenizing, spray drying, adding mineral substances and vitamins, dry mixing, sieving and packaging.
The invention has the following beneficial effects:
1) the milk powder disclosed by the invention is added with bifidobacterium lactis HN019, inulin and Galactooligosaccharide (GOS), and the inulin and the galactooligosaccharide are used as strengthening factors of the bifidobacterium lactis HN019, so that the concentration of the bifidobacterium lactis in excrement of pregnant women is increased, constipation is prevented or relieved, intestinal peristalsis is stimulated, the excrement wettability is increased, the balance of intestinal flora and the health of intestinal tracts are maintained, and the absorption of trace elements such as vitamin B1 and zinc by the pregnant and lying-in women is improved. The experimental result shows that after the milk powder is eaten, the concentration of the bifidobacteria in the excrement of the pregnant women reaches 1010cfu/g above, compared with 10 before eating8cfu/g, the bifidobacteria concentration in the intestinal tract was significantly increased. The formula of the milk powder can also effectively improve the wall sticking problem in the spray drying stage.
2) The invention improves the wall sticking phenomenon in the process of spray drying of the milk powder from the aspects of material selection, processing method and the like. The micro morphology of the milk powder particles prepared by the method is basically consistent, the milk powder particles are spherical or quasi-spherical, the particle size is distributed in the range of 20-30 um, the particle dispersibility is good, the obvious particle agglomeration phenomenon is avoided, the wall adhesion rate can be reduced to 0.8%, and the water content is reduced to 2.2%. In addition, the invention also avoids the problems of nutrient loss and the reduction of the survival rate of the bifidobacterium lactis HN019 caused by the preparation process, and experimental results show that the method can successfully maintain higher viable count of the bifidobacterium and 1.7 multiplied by 10 viable count in milk powder7CFU/100g。
3) According to the GB19644-2010 food safety national standard milk powder, the milk powder is tested, and the result shows that all indexes meet the requirements.

The present invention will be described in further detail with reference to the following embodiments.
In the examples and comparative examples, the addition amount of Bifidobacterium lactis in milk powder was 1.8X 107CFU/100g。
Example 1
The formula milk powder for pregnant and lying-in women comprises the following components in percentage by mass: 30% of skim milk powder, 55% of whole milk powder, 8% of inulin, 1.84% of galacto-oligosaccharide, 1% of hydrolyzed whey protein powder, 1.2% of calcium carbonate, 1.1% of docosahexaenoic acid grease, 1% of lactose, 0.74% of minerals, 0.1% of vitamins and 0.02% of bifidobacterium lactis HN019 freeze-dried powder.
Minerals: magnesium oxide, ferric pyrophosphate and zinc oxide (1:3: 5).
Vitamins L-ascorbic acid, D- α -tocopheryl acetate, niacinamide, calcium D-pantothenate, pyridoxine hydrochloride, thiamine hydrochloride, riboflavin, retinyl acetate, folic acid, cholecalciferol and cyanocobalamin (1:3:3:2:2:1:0.7:2:3:1.0: 2).
Example 2
The formula milk powder for pregnant and lying-in women comprises the following components in percentage by mass: 55% of skim milk powder, 30% of whole milk powder, 1% of inulin, 6.78% of galacto-oligosaccharide, 6% of hydrolyzed whey protein powder, 0.2% of calcium carbonate, 0.1% of docosahexaenoic acid grease, 0.1% of lactose, 0.1% of mineral substances, 0.7% of vitamins and 0.02% of bifidobacterium lactis HN019 freeze-dried powder.
Minerals: magnesium oxide, ferric pyrophosphate and zinc oxide (1:2: 2).
The vitamin comprises L-ascorbic acid, D- α -tocopheryl acetate, nicotinamide, D-calcium pantothenate, pyridoxine hydrochloride, thiamine hydrochloride, riboflavin, retinyl acetate, folic acid, cholecalciferol and cyanocobalamine, and the mass ratio of the components is (1:5:5:4:3:6:1.2:3:8:1.5: 4).
The preparation method of the embodiment 1-2 comprises the following steps:
adding water into the skim milk powder and the whole milk powder to mix into reduced milk, wherein the mass ratio of the milk powder to the water is 1:2, adding inulin, galacto-oligosaccharide, hydrolyzed whey protein powder, docosahexaenoic acid grease, lactose and bifidobacterium lactis HN019 freeze-dried powder into the reduced milk, uniformly mixing, pasteurizing, evaporating at 70 ℃ until the volume is reduced by 20%, homogenizing, spray drying, adding mineral substances and vitamins, dry mixing, sieving and packaging.
Example 3
The preparation method of example 1 is as follows:
adding water into the skim milk powder and the whole milk powder to mix into reduced milk, wherein the mass ratio of the milk powder to the water is 1:3, adding inulin, galacto-oligosaccharide, hydrolyzed whey protein powder, docosahexaenoic acid grease, lactose and bifidobacterium lactis HN019 freeze-dried powder into the reduced milk, uniformly mixing, pasteurizing, evaporating at 60 ℃ until the volume is reduced by 30%, homogenizing, spray drying, adding mineral substances and vitamins, dry mixing, sieving and packaging.
Example 4
The preparation method of example 1 was replaced by:
heating water to 55 deg.C, adding inulin, galacto-oligosaccharide, lactose and hydrolyzed whey protein powder, mixing, adding docosahexaenoic acid oil and Bifidobacterium lactis HN019 lyophilized powder, mixing, drying under reduced pressure until volume is reduced by 20%, maintaining liquid temperature at 45 deg.C, adding skimmed milk powder and whole milk powder, mixing, pasteurizing, evaporating at 70 deg.C until volume is reduced by 30%, homogenizing, spray drying, adding minerals and vitamins, dry mixing, sieving, and packaging.
Example 5
The preparation method of example 1 is as follows:
heating water to 60 ℃, adding inulin, galacto-oligosaccharide, lactose and hydrolyzed whey protein powder, uniformly mixing, adding docosahexaenoic acid oil and bifidobacterium lactis HN019 freeze-dried powder, mixing, drying under reduced pressure until the volume is reduced by 10%, keeping the liquid temperature at 50 ℃, adding skim milk powder and whole milk powder, uniformly mixing, pasteurizing, evaporating at 60 ℃ until the volume is reduced by 20%, homogenizing, spray drying, adding mineral substances and vitamins, dry mixing, sieving and packaging.

The formula milk powder for pregnant and lying-in women comprises the following components in percentage by mass: 30% of skim milk powder, 55% of whole milk powder, 9% of inulin, 1% of galacto-oligosaccharide, 1% of hydrolyzed whey protein powder, 0.2% of calcium carbonate, 0.58% of docosahexaenoic acid grease, 3% of lactose, 0.1% of minerals, 0.1% of vitamins and HN 0190.02% of bifidobacterium lactis.

Experimental example 1
The milk powder was prepared by using the example and comparative example respectively, the wall sticking rate and the water content were calculated in the spray drying stage, and the average value was taken 10 times repeatedly, and the results are shown in table 1.
The spray drying process comprises the following steps: spray drying is carried out by adopting a TPG-5 spray dryer, wherein the spray drying condition is that the air inlet temperature is 180 ℃, the feeding speed is 11.0mL/min, and the rotating speed is 25000 rpm.

During spray drying, as the temperature increases, the droplets change from a glassy state to a rubbery state and a viscous state, and when in the viscous state, severe wall sticking or agglomeration of the particles occurs. The milk powder material contains lactose and other substances, and the substances are easily transformed from a glass state to a viscous state along with the rise of temperature, so that wall sticking is easily caused. Higher drying temperatures also lead to inactivation of bifidobacterium lactis. Lower temperature can lead to incomplete drying, higher water content of the granules and more serious wall sticking phenomenon. The invention reduces the wall sticking phenomenon in the spray drying process by improving the milk powder raw material and the processing technology. The results in table 1 show that the wall adhesion rate can be reduced to 0.8% and the water content can be reduced to 2.2% by adopting the scheme of the invention. In addition, the embodiment 5 and the embodiment 6 can successfully maintain higher viable count of the bifidobacteria by improving the preparation method, and the method has minimal influence on the activity of the bifidobacteria.
Experimental example 2 detection of Bifidobacterium in intestinal tract
Subject: selecting pregnant women which are healthy, have no chronic basic diseases and no special medicines, have the gestational period of 12-24 weeks and the age of 25-35 years, taking 20 persons as a group, randomly grouping, and recommending the groups to use the milk powder of the examples and the comparative examples respectively.
The usage and dosage are as follows: 60-70 g of the composition is taken with warm boiled water at 40-50 ℃ every day for 7 days.
The detection method comprises the following steps:

The consumption of the milk powder of the comparative example can also affect the intestinal flora, but the concentration of the bifidobacteria is obviously lower than that of the milk powder of the invention.

Claims (7)
1. The formula milk powder for pregnant and lying-in women is characterized by comprising the following components in percentage by mass: 30-55% of skim milk powder, 30-55% of full cream milk powder, 1-8% of inulin, 1-8% of galacto-oligosaccharide, 1-6% of hydrolyzed whey protein powder, 0.2-1.2% of calcium carbonate, 0.1-1.1% of docosahexaenoic acid grease, 0.1-1% of lactose, 0.1-0.8% of mineral substances, 0.1-0.7% of vitamins and 0.02% of bifidobacterium lactis HN019 freeze-dried powder; each gram of freeze-dried powder contains bifidobacterium lactis HN019 (0.8-1) x 105cfu。
2. Maternal formula according to claim 1, wherein said minerals comprise: magnesium oxide, ferric pyrophosphate and zinc oxide.

The maternal formula milk powder according to claim 4, wherein the mass ratio of L-ascorbic acid, D- α -tocopheryl acetate, nicotinamide, D-calcium pantothenate, pyridoxine hydrochloride, thiamine hydrochloride, riboflavin, retinyl acetate, folic acid, cholecalciferol and cyanocobalamine is 1 (3-5), (2-4), (2-3), (1-6), (0.7-1.2), (2-3), (3-8), (1.0-1.5) and (2-4).

The method for preparing the pregnant and lying-in woman formula milk powder according to any one of claims 1 to 5, wherein the method comprises the following steps: adding water into skim milk powder and whole milk powder to mix into reduced milk, wherein the mass ratio of the milk powder to the water is 1 (2-3), adding inulin, galacto-oligosaccharide, hydrolyzed whey protein powder, docosahexaenoic acid grease, lactose and bifidobacterium lactis HN019 freeze-dried powder into the reduced milk, uniformly mixing, pasteurizing, evaporating at 60-70 ℃ until the volume is reduced by 20-30%, homogenizing, spray drying, adding mineral substances and vitamins, dry mixing, sieving and packaging.
7. The method for preparing the pregnant and lying-in woman formula milk powder according to any one of claims 1 to 5, wherein the method comprises the following steps:
