Abstract
本发明提供了一种富含魔芋寡糖的瘦身饮料及其制备方法。以魔芋精粉为原料,碱溶处理后得到富含魔芋寡糖的溶液体系,添加一定比例的辅料进行调制。产品具有低热量、低脂肪和高纤维素的特点,有减肥健身、治病抗癌等功效。采用碱溶水解的方式使多糖降解为寡糖,这样可以大大降低溶液的粘稠度,并且研究表明魔芋寡糖与魔芋多糖有相同的功能作用,所以在既降低了溶液粘度的同时有保证了原料的功效作用,魔芋寡糖饮料能更好地发挥魔芋降脂降糖的作用,作为一种瘦身饮料来进行推广,这也更加符合时代食品发展的潮流和趋势。

本发明是一种富含魔芋寡糖的瘦身饮料及其制备方法,属于食品加工技术领域。
背景技术
魔芋,别名蒟蒻,为多年生天南星科草本植物,是目前发现的、唯一能大量提供葡甘露聚糖的经济作物。魔芋主要成份是葡甘露聚糖,它不仅含有人体所需的10多种氨基酸和多种微量元素,更具有低蛋白、低脂肪、高纤维、吸水性强、膨胀率高等特性,药用功效方面具有降血脂、降血糖、降血压、排毒、减肥、美容、保健、通便润肠胃等多种疗效。目前魔芋在食品中的应用主要是利用魔芋里高含量的葡甘聚糖,其可以作为食品中天然健康的增稠剂,所以魔芋在饮料中的研究可以说是一个全新的研究点,为了克服魔芋中葡甘聚糖的粘稠度,本发明采用碱溶水解的方式使多糖降解为寡糖,这样可以大大降低溶液的粘稠度,并且研究表明魔芋寡糖与魔芋多糖有相同的功能作用,所以在既降低了溶液粘度的同时有保证了原料的功效作用,魔芋寡糖饮料能更好地发挥魔芋降脂降糖的作用,作为一种保健饮料来进行推广,这也更加符合时代食品发展的潮流和趋势更加健康、更加营养。
发明内容
本发明的目的之一是提供一种富含魔芋寡糖的瘦身饮料及其制备方法。以魔芋精粉为原料,碱溶处理后得到富含魔芋寡糖的溶液体系,添加一定比例的辅料进行调制。产品具有低热量、低脂肪和高纤维素的特点,有减肥健身、治病抗癌等功效。
本发明提供了一种富含魔芋寡糖的瘦身饮料及其制备方法,包括以下步骤:以魔芋精粉为原料,用食品级碳酸钠溶液溶解,振荡至魔芋精粉完全溶解,之后得到富含魔芋寡糖的溶液体系,加入食用碱或柠檬酸,将溶液的pH调整到7.0的数值范围内,使后续反应中断,稳定溶液状态。将中和处理后的溶液进行离心处理,得到澄清的上清液。将适量比例的白砂糖、柠檬酸、稳定剂加入上清液中,搅拌使其均匀溶解。将混合好的溶液倒入均质机中,在25MPa的压力下进行均质处理,以便提高饮料的稳定性,使口感更佳。
进一步的,所述的一种富含魔芋寡糖的瘦身饮料及其制备方法,溶液中魔芋精粉的添加量为0.5%。
进一步的,所述的一种富含魔芋寡糖的瘦身饮料及其制备方法,采用pH为8的食用碱碳酸钠溶液溶解魔芋精粉液。
进一步的,所述的一种富含魔芋寡糖的瘦身饮料及其制备方法,碱溶解的时间为2小时。
进一步的,所述的一种富含魔芋寡糖的瘦身饮料及其制备方法,中和后加入6%的白砂糖、0.01%的柠檬酸进行调配。
进一步的,所述的一种富含魔芋寡糖的瘦身饮料及其制备方法,添加的稳定剂为CMC和海藻酸钠,其添加量为0.04%。
本产品的有益效果在于:魔芋寡糖饮料添加香精等添加剂,低糖含量,放心饮用,含有丰富的膳食纤维,在肠道内膳食纤维能加强肠道蠕动,促使排便,缩短食物在肠道内的停留时间还含有可溶性膳食纤维,这种纤维对抑制餐后血糖升高很有效,因而是糖尿病患者的理想降糖饮料,应用后可减轻胰岛负担,而且有减肥健身、治病抗癌等功效。

实施例子
以魔芋精粉为原料,用食品级pH8的碳酸钠溶液溶解,200转,室温振荡2小时至魔芋精粉完全溶解,之后得到富含魔芋寡糖的溶液体系,加入柠檬酸,将溶液的pH调整到7.0的数值范围内,使后续反应中断,稳定溶液状态。将中和处理后的溶液进行离心处理(10000转,10分钟),得到澄清的上清液。将6%的白砂糖、0.01%柠檬酸、0.04%的稳定剂CMC和海藻酸钠加入上清液中,搅拌使其均匀溶解。将混合好的溶液倒入均质机中,在25MPa的压力下进行均质处理,以便提高饮料的稳定性,使口感更佳。
本发明提供了一种富含魔芋寡糖的瘦身饮料及其制备方法,科学合理、简单易行,能有效地阻止人体肠道对脂肪的吸收,达到瘦身减肥的目的,在医药、食品领域中均具有广阔的市场前景。

Claims (6)
1.一种富含魔芋寡糖的瘦身饮料及其制备方法其特征在于:具体制备步骤如下:
以魔芋精粉为原料,用食品级碳酸钠溶液溶解,振荡至魔芋精粉完全溶解,之后得到富含魔芋寡糖的溶液体系,加入食用碱或柠檬酸,将溶液的pH调整到7.0的数值范围内,使后续反应中断,稳定溶液状态。将中和处理后的溶液进行离心处理,得到澄清的上清液。将适量比例的白砂糖、柠檬酸、稳定剂加入上清液中,搅拌使其均匀溶解。将混合好的溶液倒入均质机中,在25MPa的压力下进行均质处理,以便提高饮料的稳定性,使口感更佳。
2.如权利要求1所述的一种富含魔芋寡糖的瘦身饮料及其制备方法,溶液中魔芋精粉的添加量为0.5%。
3.如权利要求1所述的一种富含魔芋寡糖的瘦身饮料及其制备方法,采用pH为8的食用碱碳酸钠溶液溶解魔芋精粉液。
4.如权利要求1所述的一种富含魔芋寡糖的瘦身饮料及其制备方法,碱溶解的时间为2小时。
5.如权利要求1所述的一种富含魔芋寡糖的瘦身饮料及其制备方法,中和后加入6%的白砂糖、0.01%的柠檬酸进行调配。
6.如权利要求1所述的一种富含魔芋寡糖的瘦身饮料及其制备方法,添加的稳定剂为CMC和海藻酸钠,其添加量为0.04%。
