Abstract
The invention discloses an amino acid powder-containing complementary food for infants and a preparation method thereof, which comprises the following materials in percentage by weight: 10-30% of compound amino acid powder, 30-50% of solid corn syrup, 20-25% of enzymolysis grain, 10-60% of vegetable fat powder, 1-5% of fructo-oligosaccharide, 1-3% of galacto-oligosaccharide, 0.5-1.0% of DHA algae oil, 0.5-1.0% of arachidonic acid grease, 0.2-1.5% of compound vitamin and 0.5-3.5% of compound mineral; the preparation method is reasonable and convenient to operate, and the infant complementary food containing the amino acid powder is a non-sensitive formula, is suitable for infants with severe protein allergy or multiple food protein allergy, and can be used for diagnosing and treating allergic infants.
Description
Technical Field
The invention relates to the technical field of food, in particular to an infant complementary food containing amino acid powder and a preparation method thereof.
Background
The infant has immature physiological functions, poor digestion and absorption capacity and extremely small stomach capacity, so that the infant has special requirements on high nutrition and easy absorption on nutrition and diet of the infant so as to provide nutrition and energy required by the growth and development of the infant.
According to the current data statistics, about 20% of infants are allergic to protein, the manifestations of the infants are different, and some infants have allergic symptoms such as red and swollen skin, frequent diarrhea, dyspepsia, asthma and the like. Besides breast milk, milk protein is the earliest protein ingested by infants and is also the most common food allergen of infants, and the main allergens in milk are whey protein and casein. Under normal conditions, the intestinal immune system can normally distinguish pathogens from harmless antigens, so that infants can tolerate dietary protein and symbiotic bacteria, intestinal mucosa is the largest immune organ of a human body, but the expected immune effect cannot be achieved due to immature intestinal barrier function of the infants.

The invention aims to overcome the defects of the prior art and provide the infant complementary food containing the amino acid powder and the preparation method thereof, wherein the infant complementary food has the advantages of reasonable preparation method, complete formula and good use effect.
The technical problem to be solved by the invention is realized by adopting the following technical scheme:
an infant complementary food containing amino acid powder comprises the following materials by weight percent: 10-30% of compound amino acid powder, 30-50% of solid corn syrup, 20-25% of enzymolysis grain, 10-60% of vegetable fat powder, 1-5% of fructo-oligosaccharide, 1-3% of galacto-oligosaccharide, 0.5-1.0% of DHA algae oil, 0.5-1.0% of arachidonic acid grease, 0.2-1.5% of compound vitamin and 0.5-3.5% of compound mineral.
Further, the compound vitamin is infant vitamin premix.
Preferably, the vitamin premix is prepared by mixing the following components, by weight, 50% -60% of vitamin E, 25% -30% of vitamin C, 4% -10% of vitamin A, 23% -5% of vitamin D, 1% -2% of nicotinamide, 0.5% -2% of pantothenic acid, 10.1% -0.3% of vitamin K, 10.1% -0.2% of vitamin B, 20.1% -0.2% of vitamin B, 60.1% -0.2% of vitamin B, 10.1% -0.2% of vitamin B, 0.02% -0.05% of folic acid, 0.003% -0.008% of biotin and 25% -0.0005% of vitamin B120.0001% -0.0005%.
Further, the compound mineral is infant mineral premix.
Preferably, the mineral premix is prepared by mixing 25-32 wt% of calcium carbonate, 19-26 wt% of calcium hydrogen phosphate, 17-23 wt% of potassium chloride, 15-18 wt% of magnesium sulfate, 5-10 wt% of sodium citrate, 2-5 wt% of ferrous gluconate, 0.5-0.8 wt% of zinc sulfate, 0.05-0.1 wt% of copper sulfate, 0.01-0.08 wt% of sodium selenite, 0.01-0.05 wt% of manganese sulfate and 0.002-0.008 wt% of potassium iodide.
Preferably, the complex amino acid comprises L-alanine, L-arginine, L-aspartic acid, L-cystine, glycine, L-histidine, L-isoleucine, L-leucine, L-lysine, L-methionine, L-phenylalanine, L-proline, L-serine, L-threonine, L-tryptophan, L-tyrosine, L-valine, L-glutamine.
Furthermore, the grains are made of rice, millet and wheat in any proportion.
Further, the cereal feed additive also comprises alpha-amylase with the enzyme activity of 10000-20000u/g, and the addition amount of the alpha-amylase is 3% -5% of the cereal raw material.
Further, the preparation method of the infant complementary food containing the amino acid powder comprises the following steps:
A. mixing grain raw materials according to a corresponding proportion, and performing enzymolysis on grain particles by using medium-temperature alpha-amylase, wherein the final concentration of the amylase is 2-8 activity units/ml, the enzymolysis temperature is 45-70 ℃, and the time duration is 30-120min, so as to obtain enzymolysis grain;
B. b, sequentially sieving the enzymatic grains obtained in the step A, the composite amino acid powder and the solid corn syrup at the temperature of 16-22 ℃ and the humidity of 45-65%, and pouring the mixture into a three-dimensional mixer according to a preset ratio for primary premixing after ultraviolet sterilization, wherein the premixing time is 15-25min, so as to obtain a mixed material 1;
C. uniformly mixing vegetable fat powder, fructo-oligosaccharide, galacto-oligosaccharide, DHA algae oil, arachidonic acid grease, compound vitamin and compound mineral matter to obtain a mixed solution, preheating to 40 ℃, homogenizing in a high-pressure homogenizer at the homogenizing temperature of 40-50 ℃ and the homogenizing pressure of 15-20MPa, cooling to the temperature of less than or equal to 10 ℃, temporarily storing in a temporary storage tank for less than 12 hours to obtain a mixed material 2;
D. c, carrying out centrifugal spray drying on the mixed material 2 obtained in the step C to obtain a dry powder-shaped mixed material 2;
E. b, sieving the mixed material 1 obtained in the step B by a 30-mesh sieve, adding the sieved mixed material and the dry powder-shaped mixed material 2 obtained in the step D into a high-speed mixer for secondary dry mixing, wherein the rotating speed is 35-45 r/min, the time is 80-100s, and uniformly mixing to obtain the special dietary auxiliary food for the infants;
F. sterilizing infant special dietary auxiliary food at 88-90 deg.C for 15-30 s;
G. and (4) carrying out vacuum packaging on the sterilized infant special dietary auxiliary food to obtain a finished product.
Compared with the prior art, the infant complementary food containing the amino acid powder and the preparation method thereof have the following advantages:
1. the compound amino acid powder is added to supplement nutrition for protein allergens of infants, and the trace elements and mineral substances which are lacked in the raw materials are added for the second time, so that the nutritional value is fully improved, the prepared product is convenient to absorb by the infants, and the compound amino acid powder is suitable for the infants of 6-36 months;
2. the invention is a non-sensitive formula, and a low-sensitive formula is obtained by hydrolyzing protein, namely, the protein structure is modified, so that the most serious milk protein allergy with antigen active substances or a plurality of food protein allergy infants can select the amino acid powder, namely free amino acid, and the amino acid powder can be used for diagnosing and treating milk protein allergy;
3. by adding a proper amount of nutritional supplements such as compound amino acid powder, compound vitamins and compound minerals into the product, the product is beneficial to helping protein-allergic infants to absorb and digest protein and promoting the healthy growth of the infants.

Example 1
An infant complementary food containing amino acid powder comprises the following materials by weight percent: 10% of compound amino acid powder, 30% of solid corn syrup, 20% of enzymolysis grains, 10% of vegetable fat powder, 1% of fructo-oligosaccharide, 1% of galacto-oligosaccharide, 0.5% of DHA algal oil, 0.5% of arachidonic acid grease, 0.2% of compound vitamin and 0.5% of compound mineral substance.
The compound vitamin is infant vitamin premix, which comprises vitamin E50%, vitamin C25%, vitamin A4%, vitamin D23%, nicotinamide 1%, pantothenic acid 0.5%, vitamin K10.1%, vitamin B20.1%, vitamin B60.1% -0.2%, vitamin B10.1%, folic acid 0.02%, biotin 0.003%, and vitamin B120.0001%.
The compound mineral premix is a mineral premix for infants and comprises 25% of calcium carbonate, 19% of calcium hydrophosphate, 17% of potassium chloride, 15% of magnesium sulfate, 5% of sodium citrate, 2% of ferrous gluconate, 0.5% of zinc sulfate, 0.05% of copper sulfate, 0.01% of sodium selenite, 0.01% of manganese sulfate and 0.002% of potassium iodide.
The compound amino acid comprises 3.0 percent of L-alanine, 5.0 percent of L-arginine, 5.0 percent of L-aspartic acid, 2.0 percent of L-cystine, 6.0 percent of glycine, 3.0 percent of L-histidine, 6.0 percent of L-isoleucine, 9.0 percent of L-leucine, 6.5 percent of L-lysine, 1.5 percent of L-methionine, 4.0 percent of L-phenylalanine, 7.0 percent of L-proline, 4.0 percent of L-serine, 3.0 percent of L-threonine, 1.0 percent of L-tryptophan, 3.0 percent of L-tyrosine, 5.0 percent of L-valine and 8.0 percent of L-glutamine.
The grains are prepared from rice, millet and wheat in a ratio of 5:2: 7.
The corn grain feed also comprises alpha-amylase with the enzyme activity of 10000u/g, and the addition amount of the alpha-amylase is 3% of the grain raw material.
A preparation method of an infant complementary food containing amino acid powder comprises the following steps:
A. mixing the grain raw materials according to a corresponding proportion, and performing enzymolysis on grain particles by using medium-temperature alpha-amylase, wherein the final concentration of the amylase is 2 activity units/ml, the enzymolysis temperature is 45 ℃, and the duration is 30min, so as to obtain the enzymolysis grain;
B. b, sequentially sieving the enzymatic hydrolysis grains obtained in the step A, the composite amino acid powder and the solid corn syrup at the temperature of 16 ℃ and the humidity of 45%, performing ultraviolet sterilization, and pouring the mixture into a three-dimensional mixer according to a preset ratio for primary premixing for 15min to obtain a mixed material 1;
C. uniformly mixing vegetable fat powder, fructo-oligosaccharide, galacto-oligosaccharide, DHA algae oil, arachidonic acid grease, vitamin complex and compound mineral substances to obtain a mixed solution, preheating to 40 ℃, homogenizing in a high-pressure homogenizer at the homogenizing temperature of 40 ℃ under the homogenizing pressure of 15MPa, cooling to 5 ℃, temporarily storing in a temporary storage tank for 6 hours to obtain a mixed material 2;
D. c, carrying out centrifugal spray drying on the mixed material 2 obtained in the step C to obtain a dry powder-shaped mixed material 2;
E. b, sieving the mixed material 1 obtained in the step B by a 30-mesh sieve, adding the sieved mixed material and the dry powder-shaped mixed material 2 obtained in the step D into a high-speed mixer for secondary dry mixing, wherein the rotating speed is 35 revolutions per minute and the time is 80 seconds, and uniformly mixing to obtain the special dietary auxiliary food for the infants;
F. sterilizing the special dietary auxiliary food for the infants, wherein the sterilization temperature is controlled to be 88 ℃, and the sterilization time is 15 seconds;
G. and (4) carrying out vacuum packaging on the sterilized infant special dietary auxiliary food to obtain a finished product.
Example 2
An infant complementary food containing amino acid powder comprises the following materials by weight percent: 30% of compound amino acid powder, 50% of solid corn syrup, 25% of enzymolysis grains, 60% of vegetable fat powder, 5% of fructo-oligosaccharide, 3% of galacto-oligosaccharide, 1.0% of DHA algal oil, 1.0% of arachidonic acid grease, 1.5% of compound vitamin and 3.5% of compound mineral.
The compound vitamin is infant vitamin premix, and comprises vitamin E60%, vitamin C30%, vitamin A10%, vitamin D25%, nicotinamide 2%, pantothenic acid 2%, vitamin K10.3%, vitamin B10.2%, vitamin B20.2%, vitamin B60.2%, vitamin B10.2%, folic acid 0.05%, biotin 0.008%, and vitamin B120.0005%.

The compound amino acid comprises 5.0 percent of L-alanine, 7.0 percent of L-arginine, 6.0 percent of L-aspartic acid, 3.5 percent of L-cystine, 7.0 percent of glycine, 5.0 percent of L-histidine, 7.0 percent of L-isoleucine, 11.0 percent of L-leucine, 8.5 percent of L-lysine, 2.5 percent of L-methionine, 6.0 percent of L-phenylalanine, 9.0 percent of L-proline, 5.0 percent of L-serine, 5.0 percent of L-threonine, 3.0 percent of L-tryptophan, 5.0 percent of L-tyrosine, 7.0 percent of L-valine and 10.0 percent of L-glutamine.
The grains are prepared from rice, millet and wheat in a ratio of 8:3: 10.
The corn grain feed also comprises alpha-amylase with enzyme activity of 20000u/g, and the addition amount of the alpha-amylase is 5% of the grain raw material.
A preparation method of an infant complementary food containing amino acid powder comprises the following steps:
A. mixing the grain raw materials according to a corresponding proportion, and performing enzymolysis on grain particles by using medium-temperature alpha-amylase, wherein the final concentration of the amylase is 8 activity units/ml, the enzymolysis temperature is 70 ℃, and the time duration is 120min, so as to obtain the enzymolysis grain;
B. b, sequentially sieving the enzymatic grains obtained in the step A, the composite amino acid powder and the solid corn syrup at the temperature of 22 ℃ and the humidity of 65%, performing ultraviolet sterilization, and pouring the mixture into a three-dimensional mixer according to a preset ratio for primary premixing for 25min to obtain a mixed material 1;
C. uniformly mixing vegetable fat powder, fructo-oligosaccharide, galacto-oligosaccharide, DHA algae oil, arachidonic acid grease, vitamin complex and compound mineral substances to obtain a mixed solution, preheating to 40 ℃, homogenizing in a high-pressure homogenizer at the homogenizing temperature of 50 ℃ and the homogenizing pressure of 20MPa, cooling to 10 ℃, temporarily storing in a temporary storage tank for 12 hours to obtain a mixed material 2;
D. c, carrying out centrifugal spray drying on the mixed material 2 obtained in the step C to obtain a dry powder-shaped mixed material 2;
E. b, sieving the mixed material 1 obtained in the step B by a 30-mesh sieve, adding the sieved mixed material and the dry powder-shaped mixed material 2 obtained in the step D into a high-speed mixer for secondary dry mixing, wherein the rotating speed is 45 revolutions per minute, the time is 100 seconds, and uniformly mixing to obtain the special dietary auxiliary food for the infants;
F. sterilizing the special dietary auxiliary food for the infants, wherein the sterilization temperature is controlled to be 90 ℃, and the sterilization time is controlled to be 30 seconds;
G. and (4) carrying out vacuum packaging on the sterilized infant special dietary auxiliary food to obtain a finished product.
Example 3
An infant complementary food containing amino acid powder comprises the following materials by weight percent: 20% of compound amino acid powder, 40% of solid corn syrup, 22% of enzymolysis grains, 45% of vegetable fat powder, 4% of fructo-oligosaccharide, 2% of galacto-oligosaccharide, 0.7% of DHA algal oil, 0.6% of arachidonic acid grease, 1% of compound vitamin and 2.5% of compound mineral.
The compound vitamin is infant vitamin premix, and comprises vitamin E55%, vitamin C27%, vitamin A7%, vitamin D24%, nicotinamide 1.5%, pantothenic acid 1%, vitamin K10.2%, vitamin B10.15%, vitamin B20.15%, vitamin B60.15%, vitamin B10.15%, folic acid 0.04%, biotin 0.006%, and vitamin B120.0004%.
The compound mineral premix is a mineral premix for infants and comprises 30% of calcium carbonate, 22% of calcium hydrophosphate, 20% of potassium chloride, 17% of magnesium sulfate, 8% of sodium citrate, 4% of ferrous gluconate, 0.6% of zinc sulfate, 0.07% of copper sulfate, 0.06% of sodium selenite, 0.04% of manganese sulfate and 0.006% of potassium iodide.
The compound amino acid comprises 4.0 percent of L-alanine, 6.0 percent of L-arginine, 5.5 percent of L-aspartic acid, 3.0 percent of L-cystine, 6.5 percent of glycine, 4.0 percent of L-histidine, 6.5 percent of L-isoleucine, 10.0 percent of L-leucine, 7.5 percent of L-lysine, 2.0 percent of L-methionine, 5.0 percent of L-phenylalanine, 8.0 percent of L-proline, 4.5 percent of L-serine, 4.0 percent of L-threonine, 2.0 percent of L-tryptophan, 4.0 percent of L-tyrosine, 6.0 percent of L-valine and 9.0 percent of L-glutamine.
The grains are prepared from rice, millet and wheat in a ratio of 6:2.5: 8.
The corn grain feed also comprises alpha-amylase with enzyme activity of 15000u/g, and the addition amount of the alpha-amylase is 4% of the grain raw material.
A preparation method of an infant complementary food containing amino acid powder comprises the following steps:
A. mixing the grain raw materials according to a corresponding proportion, and performing enzymolysis on grain particles by using medium-temperature alpha-amylase, wherein the final concentration of the amylase is 6 activity units/ml, the enzymolysis temperature is 60 ℃, and the duration is 75min, so as to obtain the enzymolysis grain;
B. b, sequentially sieving the enzymatic hydrolysis grains obtained in the step A, the composite amino acid powder and the solid corn syrup by a 100-mesh sieve at the temperature of 20 ℃ and the humidity of 55%, carrying out ultraviolet sterilization, pouring the mixture into a three-dimensional mixer according to a preset proportion, and carrying out primary premixing for 20min to obtain a mixed material 1;
C. uniformly mixing vegetable fat powder, fructo-oligosaccharide, galacto-oligosaccharide, DHA algae oil, arachidonic acid grease, vitamin complex and compound mineral substances to obtain a mixed solution, preheating to 40 ℃, homogenizing in a high-pressure homogenizer at the homogenizing temperature of 45 ℃ and the homogenizing pressure of 18MPa, cooling to 8 ℃, temporarily storing in a temporary storage tank for 10 hours to obtain a mixed material 2;
D. c, carrying out centrifugal spray drying on the mixed material 2 obtained in the step C to obtain a dry powder-shaped mixed material 2;
E. b, sieving the mixed material 1 obtained in the step B by a 30-mesh sieve, adding the sieved mixed material and the dry powder-shaped mixed material 2 obtained in the step D into a high-speed mixer for secondary dry mixing, wherein the rotating speed is 40 revolutions per minute, the time is 90 seconds, and uniformly mixing to obtain the special dietary auxiliary food for the infants;
F. sterilizing the special dietary auxiliary food for the infants, wherein the sterilization temperature is controlled to be 90 ℃, and the sterilization time is controlled to be 25 seconds;
G. and (4) carrying out vacuum packaging on the sterilized infant special dietary auxiliary food to obtain a finished product.

1. An infant complementary food containing amino acid powder is characterized by comprising the following materials in percentage by weight: 10-30% of compound amino acid powder, 30-50% of solid corn syrup, 20-25% of enzymolysis grain, 10-60% of vegetable fat powder, 1-5% of fructo-oligosaccharide, 1-3% of galacto-oligosaccharide, 0.5-1.0% of DHA algae oil, 0.5-1.0% of arachidonic acid grease, 0.2-1.5% of compound vitamin and 0.5-3.5% of compound mineral.
2. The amino acid powder-containing complementary food for infants and young children as claimed in claim 1, wherein the vitamin complex is vitamin premix for infants and young children.

The amino acid powder-containing complementary food for infants, as claimed in claim 2, is characterized in that the vitamin premix is prepared by mixing, by weight, vitamin E50% -60%, vitamin C25% -30%, vitamin A4% -10%, vitamin D23% -5%, nicotinamide 1% -2%, pantothenic acid 0.5% -2%, vitamin K10.1% -0.3%, vitamin B10.1% -0.2%, vitamin B20.1% -0.2%, vitamin B60.1% -0.2%, vitamin B10.1% -0.2%, folic acid 0.02% -0.05%, biotin 0.003% -0.008%, and vitamin B120.0001% -0.0005%.
4. The infant complementary food containing amino acid powder according to claim 3, wherein the compound mineral is infant mineral premix.
5. The amino acid powder-containing complementary food for infants as claimed in claim 4, wherein the mineral premix is prepared by mixing 25% -32% of calcium carbonate, 19% -26% of calcium hydrogen phosphate, 17% -23% of potassium chloride, 15% -18% of magnesium sulfate, 5% -10% of sodium citrate, 2% -5% of ferrous gluconate, 0.5% -0.8% of zinc sulfate, 0.05% -0.1% of copper sulfate, 0.01% -0.08% of sodium selenite, 0.01% -0.05% of manganese sulfate and 0.002% -0.008% of potassium iodide.
6. The amino acid powder-containing infant supplementary food according to claim 5, wherein the complex amino acid comprises L-alanine, L-arginine, L-aspartic acid, L-cystine, glycine, L-histidine, L-isoleucine, L-leucine, L-lysine, L-methionine, L-phenylalanine, L-proline, L-serine, L-threonine, L-tryptophan, L-tyrosine, L-valine, and L-glutamine.
7. The amino acid powder-containing complementary food for infants and young children as claimed in claim 6, wherein the grains are rice, millet and wheat in any proportion.
8. The amino acid powder-containing complementary food for infants and young children as claimed in claim 7, further comprising α -amylase with enzyme activity of 10000-20000u/g, wherein the amount of the α -amylase added is 3% -5% of the cereal raw material.
9. A method for preparing the amino acid powder-containing complementary food for infants and young children according to claims 1 to 8, comprising the steps of:
A. mixing grain raw materials according to a corresponding proportion, and performing enzymolysis on grain particles by using medium-temperature alpha-amylase, wherein the final concentration of the amylase is 2-8 activity units/ml, the enzymolysis temperature is 45-70 ℃, and the time duration is 30-120min, so as to obtain enzymolysis grain;
B. b, sequentially sieving the enzymatic grains obtained in the step A, the composite amino acid powder and the solid corn syrup at the temperature of 16-22 ℃ and the humidity of 45-65%, and pouring the mixture into a three-dimensional mixer according to a preset ratio for primary premixing after ultraviolet sterilization, wherein the premixing time is 15-25min, so as to obtain a mixed material 1;
C. uniformly mixing vegetable fat powder, fructo-oligosaccharide, galacto-oligosaccharide, DHA algae oil, arachidonic acid grease, compound vitamin and compound mineral matter to obtain a mixed solution, preheating to 40 ℃, homogenizing in a high-pressure homogenizer at the homogenizing temperature of 40-50 ℃ and the homogenizing pressure of 15-20MPa, cooling to the temperature of less than or equal to 10 ℃, temporarily storing in a temporary storage tank for less than 12 hours to obtain a mixed material 2;
D. c, carrying out centrifugal spray drying on the mixed material 2 obtained in the step C to obtain a dry powder-shaped mixed material 2;
E. b, sieving the mixed material 1 obtained in the step B by a 30-mesh sieve, adding the sieved mixed material and the dry powder-shaped mixed material 2 obtained in the step D into a high-speed mixer for secondary dry mixing, wherein the rotating speed is 35-45 r/min, the time is 80-100s, and uniformly mixing to obtain the special dietary auxiliary food for the infants;
F. sterilizing infant special dietary auxiliary food at 88-90 deg.C for 15-30 s;
G. and (4) carrying out vacuum packaging on the sterilized infant special dietary auxiliary food to obtain a finished product.
