Abstract

本发明涉及半固体食物替代品。此外,本发明指向用于生产这样的食物替代品的方法。
背景技术
食物替代品及其生产是周知的,其效用也已得到证明。食物替代品一般服务于特定的营养目的。
发明内容
本发明的基本目的是提供一种食物替代品,其能够非常可靠地防止营养不良并且能够由人/患者很好地吸收。附加的目的是要建立特别经济且温和的处理以产生这样的食物替代品。
根据本发明,这个目的通过在独立权利要求1和11中指定的特征来实现。本发明的本质在于,所述食物替代品是半固体并且包含蛋白质和脂肪/油。该食物替代品的稠度优选是凝胶状或胶冻状。这使得该食物替代品容易吞咽。咀嚼该食物替代品可促进唾液流动。所述的该组合物已被发现特别有利于人/患者。所述的该食物替代品的组分特别与成品食物替代品的总重量相关。
该食物替代品主要意在对存在与疾病相关的营养不良/营养不足(其例如由于摄入的食物不足或能量供应不足引起)的人/患者进行膳食治疗。它也可以用于与年龄相关的或与疾病相关的营养不良,例如用于肿瘤恶病质。同样,它也可以用于一般的营养不良人口,例如在危机地区的人口。例如,它也可以在恢复期间及术前术后营养上对能量的需求增加时使用。该食物替代品主要意在补充营养。它可以用在例如当需要减慢体重损失或快速健康地阻止体重损失时。该食物替代品便利地具有高卡路里含量。它便利地包含还可通过正常食物摄取的所有营养物质。特别地,它有利于覆盖每日营养需求。
如果食物替代品是一口大小会是有利的。其最长尺寸例如小于5厘米,更优选为小于2厘米。例如,它是单层或多层的。它可以具有至少一种馅料。备选地,它可以没有馅料。
该食物替代品优选采用成形体的形式。它优选可变形或屈服。它具有例如介于固体和液体之间的韧性稠度,这是例如环境温度为如20℃时的情况。
如果所述基础组合物是/包括果胶质团则是有利的。食物替代品最好基于果胶质。特别地,所述至少一种胶凝剂可导致凝胶化。所述至少一种胶凝剂方便地包括明胶。
包含在所述基础组合物中的淀粉糖浆方便地是从淀粉获得的增稠溶液。如果淀粉糖浆包含葡萄糖并且方便地也包含果糖则是有利的。淀粉糖浆是例如葡萄糖糖浆、葡萄糖-果糖糖浆或者果糖-葡萄糖糖浆。
该食物替代品或淀粉糖浆含有糖类,例如单糖类、二糖类或多糖类。
如果所使用的蛋白质是胶原蛋白肽、乳清蛋白、乳蛋白和/或豌豆蛋白,则是有利的。如果另外添加个别的特别是必要的氨基酸,也是有利的。可方便地使用经平衡的氨基酸组合。优选使用明胶蛋白质溶液。
如果该食物替代品的蛋白质含量是通过定制的蛋白质图谱实现的,会是有利的。所使用的氨基酸优选覆盖个人需求,并且优选满足德国营养学会的要求。
如果将包含中链脂肪酸的MCT脂肪(中链甘油三酯)用作食物替代品中的油脂,会是有利的。
如果该食物替代品包含次级植物物质,例如酚类化合物、类异戊二烯化合物和/或生物碱,会是有利的。
该生产过程方便地适合于大规模生产所述食物替代品。
本发明进一步有利的实施例在从属权利要求中指定。
根据从属权利要求2的食物替代品是真正的能量源并给食用该食物替代品的人/患者提供能量,特别是给大脑和肌肉提供能量。该碳水化合物能够方便地为食用该食物替代品的人/患者保持恒定的血液葡萄糖水平。如果碳水化合物是基础组合物的构成成分则是有利的。
根据从属权利要求3,食物替代品含有糖,特别是5%重量和20%重量之间的糖/蔗糖。糖是基础组合物的构成成分。当食用该食物替代品,糖优选地能够迅速提供能量。糖也能降低食用食物替代品的人/患者的紧张度,并能特别地帮助确保这样的人/患者的能力。
根据从属权利要求4的蛋白质优选地是基础组合物的构成成分。
根据从属权利要求5的明胶优选含有最多90%重量的蛋白质。备选地或附加地,可使用基于多糖类的胶凝剂,特别是基于植物多糖类的胶凝剂,诸如果胶和淀粉。

根据从属权利要求7的至少一种矿物质是必不可少的无机营养物,其特别地形成活体细胞存活的基础。例如,所使用的矿物质可以是磷酸钾、氯化钾、碘化钾、碳酸钙、碳酸镁、氯化镁、氯化钠、柠檬酸钠,磷酸三钙、硫酸锌、磷酸钠、磷酸铁、硫酸铁、硫酸锰、硫酸铜、氯化铬、钼酸钠和/或硒酸钠。
根据从属权利要求8的至少一种微量元素防止营养缺乏性疾病,或特别是营养缺乏性症状。微量元素特别是用于构建骨骼、牙齿、激素和血细胞的优选有机构成成分。所使用的微量元素的示例是锰、钼和/或铬。
根据从属权利要求9的膳食纤维对于健康的饮食是特别重要的。膳食纤维对于人/患者体内的消化有特别有益的效果。它们具有结合水的便利能力。它们还对食用该食物替代品的人/患者的肠道菌群以及在降低心肌梗死和糖尿病的风险方面具有特别有益的效果。膳食纤维优选支持免疫系统。它们是最好的益生元。膳食纤维优选得自低聚糖和/或菊粉。
根据从属要求10,该食物替代品基于果胶质。在室温下,例如在20℃下,它方便地具有弹性的、橡胶状的质地和稠度。如果该食物替代品包括粘性组分,其优选进而给予食物替代品一种柔性凝胶结构体,会是有利的。然而,如果食物替代品是坚实的,也是优选的。而如果它是相对容易变形和/或可分割的,则是有利的。
根据从属权利要求12的油和/或脂肪便利地搅拌到所述基础组合物中,随后该基础组合物优选地被加热。
根据从属权利要求13的至少一种矿物质便利地搅拌到所述基础组合物中,随后该基础组合物优选地被加热。
根据从属权利要求14的至少一种维生素便利地搅拌到所述基础组合物中,随后该基础组合物优选地被加热。该至少一种维生素优选地作为维生素溶液来添加。
如果甜菊糖溶液和/或乳化剂也添加到基础组合物中则是优选的。
根据从属权利要求15,所述过程包括至少一个塑造步骤,用于形成所述半固体食物替代品。
根据从属权利要求16的保护性气体方便地是天然、无臭、无味的。如果保护性气体是氮气和/或二氧化碳,是有利的。特别地,该保护性气体替换了空气中的存在,尤其是空气中的氧气。特别地,使用该保护性气体而非氧气用于对食物替代品块进行发泡。这样的过程产生的食物替代品具有特别长的保存期。
根据从属权利要求17的过程也能使得食物替代品具有非常长的保存期。该保护性气体方便地为自然、无臭、无味的。它优选为氮气和/或二氧化碳。特别地,该保护性气体从包含有至少一个食物替代品的包装中替换了空气,特别是替换了氧气。包装优选为袋型。如果该包装用至少一种膜形成则是有利的。
如果该食物替代品包含欧米珈-3脂肪酸则是有利的。备选地,不含欧米珈-3脂肪酸的配方产品也是可行的。其优选包含着色剂和/或调味剂。
在此使用的术语“上游”和“下游”或类似用语特别地也指被输送的构成成分或团块。

具体实施方式
参照图1、2,其整体示出了用于生产半固体食物替代品的生产线,包括用于保存葡萄糖糖浆G的葡萄糖糖浆储存器1。
该生产线还包括用于保存砂糖Z的砂糖储存器2。
此外,该生产线具有装配有电机驱动的搅拌器单元4的蛋白质溶解容器3。蛋白质溶解容器3用于使用粉状明胶水解物、粉状乳蛋白、粉状豌豆蛋白、作为胶凝剂的粉状明胶、以及氨基酸来生产明胶蛋白质溶液GEL。水可以通过水管线5以受控方式被供给到蛋白质溶解容器3。
该生产线还包括淀粉-半乳糖悬浮物容器6,其具有电机驱动的搅拌器单元7。该淀粉-半乳糖悬浮物容器6用于用半乳糖和淀粉来生产淀粉-半乳糖悬浮物SGS。水可以通过水管线8以受控方式被供给到淀粉-半乳糖悬浮物容器6。
该生产线还包括低聚果糖储存器9,用于保存低聚果糖O。在一个实施例中,备选地也可以没有低聚果糖储存器9或低聚果糖O。
组分平衡器/计量平衡器10位于容器1,2,3,6,和9的下游。
葡萄糖糖浆进料管线11从葡萄糖糖浆储存器1引到组分平衡器10。葡萄糖糖浆进料管线11装配有电机驱动的葡萄糖糖浆进料泵12,用于将葡萄糖糖浆G从葡萄糖糖浆储存器1输送到组分平衡器10。
砂糖进料管线13从砂糖储存器2引到组分平衡器10。砂糖进料管线13装配有电机驱动的砂糖螺旋输送机14,用于将砂糖Z从砂糖储存器2输送到组分平衡器10。
蛋白质溶液进料管线15从蛋白质溶解容器3引到组分平衡器10。蛋白质溶液进料管线15装配有电机驱动的蛋白质溶液进料泵16,用于将明胶-蛋白质溶液GEL从蛋白质溶解容器3输送到组分平衡器10。
淀粉-半乳糖悬浮物进料管线17从淀粉-半乳糖悬浮物容器6引到组分平衡器10。淀粉-半乳糖悬浮物进料管线17装配有电机驱动的淀粉-半乳糖悬浮物进料泵18,用于将淀粉-半乳糖悬浮物SGS从淀粉-半乳糖悬浮物容器6输送到组分平衡器10。
低聚果糖进料管线19从低聚果糖储存器9(如果存在的话)引到组分平衡器10。低聚果糖进料管线19装配有电机驱动的低聚果糖进料泵20,用于将低聚果糖O从低聚果糖储存器9输送到组分平衡器10。
如果至少一个可致动的计量阀安装在各进料泵/螺旋输送机12,14,16,18,20的上游和/或下游的每个进料管线11,13,15,17,19中则是有利的。
组分平衡器10包括电机驱动的搅拌器单元61。在作为组分平衡器10的部件的混合容器21中添加各个构成成分,即葡萄糖糖浆G、砂糖Z、明胶-蛋白质溶液GEL、淀粉-半乳糖悬浮物SGS、和低聚果糖O(如果存在)可以通过搅拌器单元61被混合以形成基础组合物GM。
基础组合物进料管线22从组分平衡器10引到加料容器23。基础组合物进料管线22装配有电机驱动的基础组合物进料泵24,用于将基础组合物GM从组分平衡器10输送到加料容器23。
基础组合物进料管线22还在基础组合物进料泵24的下游装配有基础组合物锅炉单元25和基础组合物真空单元26。基础组合物锅炉单元25能够连续地煮沸基础组合物GM。在该基础组合物真空单元26中,可对送入的经煮沸的基础组合物GM进行抽真空以降低其水分含量和温度。
加料容器23中可以被注入基础组合物GM、脂肪、乳化剂、矿物质、维生素溶液、以及甜菊糖溶液。这些物质在此用搅拌器单元27混合在一起以形成可塑形的食物替代品块ENM。
分配线28从加料容器23引到并行连接的胶质计量设备29和发泡机30。该分配线28装配有食物替代品块进料泵31,用于输送食物替代品块ENM到胶质计量设备29和发泡机30。
胶质计量设备29包括结构相同且并行连接的多个胶质计量装置32。每个胶质计量装置32用于从食物替代品块ENM形成胶质状食物替代品块gENM。每个计量容器33装配有电机驱动的搅拌器单元34。每个计量容器33关联到胶质计量装置32的调味剂进料单元35和着色剂进料单元36。每个计量容器33通过分支线37与分配线28流动连接。
该设备还包括酸溶解单元38,其具有酸容器39,酸容器39装配有电机驱动的搅拌器单元40。酸容器39可被注入酸。该酸溶解单元38用以形成酸溶液SL。可以经由水管线41向酸容器39供水。
从酸容器39引出的是酸进料管线42,其装配有电机驱动的酸进料泵43,用于输送酸溶液SL。酸进料管线42与每个计量容器33流动连接。
装配在发泡机30下游的是发泡计量设备44,其具有结构相同且并行连接的多个发泡计量装置45。每个发泡计量装置45用来从食物替代品块ENM形成泡沫状食物替代品块sENM。每个发泡计量装置包括调味剂进料单元46和着色剂进料单元47。每个发泡计量装置45还具有与发泡机30流动连接的计量泵48。此外,发泡计量装置45的每个调味剂进料单元46和着色剂进料单元47以及酸溶解单元38与相应的计量泵48流动连通。
在每个计量泵48下游的每个发泡计量装置45具有电机驱动的动态混合器49。
位于每个胶质计量装置32下游的是生产线的第一大型塑造机50。位于每个发泡计量装置45下游的是生产线的第二大型塑造机51。在该塑造机中,胶质状和泡沫状食物替代品块gENM和sENM在天然玉米淀粉中塑形。
在第一大型塑造机50和第二大型塑造机51下游,该生产线配备有输送机52,用于输送塑形的食物替代品块gENM和sENM至生产线的干燥室53。干燥室53处于约23℃的温度,相对湿度为35%。
在生产线的粉末大型塑造机54中,经干燥的食物替代品块gENM和sENM被模制和去粉末以形成食物替代品或食物替代品本体/件。该粉末大型塑造机54使用填充有淀粉的箱体。使用至少一个成型印模55来将模制粉末或淀粉形式的食物替代品件冲压到期望的形状。
成形的食物替代品在位于生产线下游的清洁单元56中进行清洁。
在清洁单元56下游装配有蒸汽处理单元57,用于对经清洁的食物替代品进行蒸汽处理。
在蒸汽处理单元57的下游是油鼓58和糖鼓59,两者并行连接并且用于对经过蒸汽处理的食物替代品进行表面处理。
随后是在包装站60对经过表面处理的成品食物替代品进行包装。
下面参照图3对该生产过程进行再次说明。如先前所提及的,葡萄糖糖浆G保存在葡萄糖糖浆储存器1中,而砂糖Z保存在砂糖储存器2中。
蛋白质溶解容器3中保存的是明胶水解物,乳蛋白,豌豆蛋白和作为胶凝剂的明胶,以及氨基酸。加入水,通过搅拌器单元4进行混合以形成随后生成的明胶蛋白质溶液GEL。
淀粉-半乳糖悬浮物容器6中保存的是半乳糖和淀粉。加入水,然后通过搅拌器单元7将它们彼此混合,以形成淀粉-半乳糖悬浮物SGS。
在随后的步骤62中,葡萄糖糖浆G,糖Z,明胶-蛋白质溶液GEL,淀粉半乳糖悬浮物SGS,以及来自低聚果糖储存器9的低聚果糖O(如果存在)然后被送入到组分平衡器10,在其混合容器中由搅拌器单元61进行混合。
此后,在随后的步骤63中,将得到的基础组合物GM在连续工作的基础组合物锅炉单元25中煮沸并且然后在随后的步骤64中在基础组合物真空单元26中进行抽真空。
经煮沸和抽真空处理的基础组合物GM然后在随后的步骤65中进给到加料容器23中。另外将脂肪,乳化剂,矿物质,甜菊糖溶液和维生素溶液供给到加料容器23,在此通过搅拌器单元27将它们彼此混合,以形成食物替代品块ENM。
在随后的步骤66中,将得到的食物替代品块ENM然后进给到胶质计量设备29或进给到发泡机30。
在随后的步骤67中,将食物替代品块ENM、来自调味剂进料单元35的调味剂、来自着色剂进料单元36的着色剂、以及酸溶液SL进给到各计量容器33,在此用相应的搅拌器单元34将它们混合在一起,以形成胶质状食物替代品块gENM。
在随后的步骤68中,每个计量泵48被供以通过发泡机30发泡而成的食物替代品块ENM、来自调味剂进料单元46的调味剂、来自着色剂进料单元47的着色剂以及酸溶液SL。在动态混合器49中生产泡沫状食物替代品块sENM。
此后,在随后的步骤69中,将所得的胶质状食物替代品块gENM供给到第一大型塑造机50中,而所得到的泡沫状食物替代品块sENM被供给到第二大型塑造机51。
在随后的步骤70中,将所塑造的团块在干燥室53中干燥48小时以减少其水分含量。
此后,在随后的步骤71中,在粉末巨型塑造机54中造出从干燥后的团块形成的塑造食物替代品,其为胶质状或者泡沫状。
食物替代品在清洁单元56中进行清洁。清洁后的食物替代品然后在蒸汽处理单元57中进行蒸汽处理。
然后在随后的步骤72中进行表面处理。在糖鼓59中,该食物替代品被处理为带有砂糖。在油鼓58中,对食物替代品交替地上油。
在发泡机30中,使用保护性气体(特别是氮气)对食物替代品块ENM进行发泡/延展。
然后在随后的步骤73中,在包装站60对加糖或上油的食物替代品进行包装。食物替代品在包装站60中包装到包装袋61内。包装站60提供的包装袋61借助于保护性气体源60a而具有保护性气体,特别是氮气氛。
成品食物替代品的蛋白质含量优选在15%重量和25%重量之间,脂肪含量优选在10%重量和15%重量之间,碳水化合物含量优选在35%重量和55%重量之间。
成品半固体食物替代品优选包括葡萄糖糖浆,蛋白质(胶原蛋白肽,乳蛋白,乳清蛋白,豌豆蛋白,氨基酸(例如异亮氨酸,亮氨酸,色氨酸)),棕榈油,棕榈脂肪,椰子油,向日葵油,糖,半乳糖,明胶,豌豆淀粉,酸化剂(乳酸,柠檬酸),矿物质(磷酸钾,碳酸钙,碳酸镁,氯化钠,硫酸锌,磷酸钠,磷酸铁,硫酸锰,硫酸铜,氯化铬,钼酸钠,硒酸钠),低聚果糖,菊粉,乳化剂(食用脂肪酸的单甘油三酯和二甘油三酯),调味剂,着色剂,食料(黑醋栗,黑胡萝卜,甜土豆,萝卜,苹果,姜黄,红花,螺旋藻,焦糖糖浆),涂层(蜂蜡(白色,黄色),巴西棕榈蜡)和维生素(氯化胆碱,维生素C,抗坏血酸棕榈酸酯,烟酰胺,混合生育酚,泛酸钙,维生素E,维生素B6,维生素B1,维生素B2,维生素A棕榈酸酯,叶酸,β-胡萝卜素,生物素,维生素K1,维生素D3,维生素B12),水。可以省略单个构成成分。
可替代地,该食物替代品或其基础组合物不含淀粉糖浆和/或糖类。不含糖类的食物替代品尤其是无糖的,其此外优选包括其他增甜剂/或甜味剂。这样的食物替代品或用于生产这样的食物替代品的相应的过程可形成本发明的单独的主题。
Claims (17)
1.一种半固体食物替代品,其具有:
a)基础组合物(GM),包括:
i)淀粉糖浆(G),特别是葡萄糖糖浆,
ii)糖类,特别是单糖类和二糖类,特别是蔗糖/砂糖(Z),和
iii)至少一种胶凝剂(GEL),
b)10%重量和30%重量之间的蛋白质含量,以及
c)5%重量和20%重量之间的脂肪含量。
2.如权利要求1所述的食物替代品,其特征在于,包括30%重量和60%重量之间的碳水化合物含量。
3.如权利要求1或2所述的食物替代品,其特征在于,包括砂糖(Z),其中所述食物替代品含有5%重量和20%重量之间的砂糖(Z)。

-提供基础组合物(GM),所述基础组合物包括:
--淀粉糖浆(G),特别是葡萄糖糖浆,
--糖类,特别是单糖类和二糖类,特别是蔗糖/砂糖(Z),和
--至少一种胶凝剂(GEL),
-其中,所述半固体食物替代品具有:
--10%重量和30%重量之间的蛋白质含量,以及
--5%重量和20%重量之间的脂肪含量。
12.如权利要求11所述的方法,其特征在于,包括将油和/或脂肪添加到所述基础组合物(GM),特别是添加到经加热的所述基础组合物。

17.如权利要求11至16中任一项所述的方法,其特征在于,包括在具有保护性气体单元(60a)的包装站(60)中对所述食物替代品进行包装,以在保护性气体气氛下包装所述食物替代品。
