The specific embodiment is as follows:
example 1: a preparation process of instant abalone comprises the following steps:

in an anaerobic environment, the abalone surface is rapidly dehydrated and shaped under far infrared or ultra-high temperature conditions.

curing is divided into a step of softening the abalone in the early stage and a step of cooking the abalone in the later stage to cure the abalone.

after 30 days of normal temperature storage, the TVB-N value is measured according to the method of GB5009.228-2016 (determination of volatile basic nitrogen in food safety national Standard food), and the national freshness limit index is smaller than 35mg/100g.
Sensory evaluation (morphology and mouthfeel of instant abalone): the instant abalone prepared in the examples and the comparative examples was tasted by a sensory panel composed of 3 food professionals, and the taste, mouthfeel and texture of the instant abalone were evaluated by a "blind method".

According to the characterization of the examples and the comparative examples, the instant abalone obtained by the production method of the instant abalone can keep good freshness after being stored for 30 days at normal temperature, and the form of the instant abalone also keeps the original complete form, so that the instant abalone tastes delicious and elastic. Compared with the embodiment 3, the abalone in the comparative example 1 is not subjected to rapid dehydration and shaping treatment in the production process, so that the surface of the obtained abalone cannot be kept in a flat state, and air cannot be completely pumped out when packaging and sealing are carried out, so that the obtained instant abalone has short fresh-keeping period, is deformed and not intact, and cannot well keep the original form, and the taste of the instant abalone is general; comparative example 2 compared with example 2, abalone was not subjected to softening treatment after shaping, which would affect the taste of instant abalone; comparative example 3 compared with example 3, abalone was not sterilized after packaging, which would affect the freshness and taste of instant abalone; comparative example 4 compared with example 3, abalone was sterilized at high temperature, and the processing at high temperature affected the morphology of abalone, and the taste of abalone, and the freshness of instant abalone was not long as the freshness of instant abalone obtained by irradiation sterilization in this application.
Example 2: abalone cleaning device:
the abalone cleaning device comprises a conveying part 1, an elastic extrusion part 2 and a cleaning part 3 are sequentially arranged along the abalone conveying direction, the elastic extrusion part 2 is used for removing abalone body surface mucus, the cleaning part 3 comprises a brushing mechanism 31 and a flushing mechanism 32, the conveying part 1 comprises a plurality of conveying belts 11, and a turnover part 4 for overturning abalone is arranged between the conveying belts 11; the elastic pressing portion 2 and the cleaning portion 3 are disposed above the transporting portion 1.
As shown in fig. 2-4, the elastic extrusion part 2 includes a first extrusion plate 21 and a second extrusion plate 22 which are correspondingly arranged, and a gap 23 is arranged between the first extrusion plate 21 and the second extrusion plate 22; the side of the first extrusion plate 21 far away from the second extrusion plate 22 is provided with a plurality of first elastic pieces 24, and the side of the second extrusion plate 22 far away from the first extrusion plate 21 is provided with a plurality of second elastic pieces 25. According to the abalone transporting direction, one end of the first extrusion plate 21, which is close to the second extrusion plate 22, is inclined forward, and one end of the second extrusion plate 22, which is close to the first extrusion plate 21, is inclined forward; the elastic extrusion part 2 is also provided with a sliding rail, which comprises a first sliding rail 261 matched with the first extrusion plate 21 and a second sliding rail matched with the second extrusion plate 22. The side of the first extrusion plate 21 close to the second extrusion plate 22 and the side of the second extrusion plate 22 close to the first extrusion plate 21 are provided with corresponding arc teeth 27.
As shown in fig. 1, the abalone cleaning device further includes a frame, the conveyor belt 11 is disposed on the frame, the conveyor belt 11 includes a first conveyor belt 111 and a second conveyor belt 112, and a turnover part 4 is disposed between the first conveyor belt 111 and the second conveyor belt 112; the brushing mechanism 31 includes a first brushing part 33 provided in cooperation with the first conveying belt 111, and further includes a second brushing part 34 provided in cooperation with the second conveying belt 112. The first brushing part 33 comprises a first supporting frame 331, the second brushing part 34 comprises a second supporting frame 341, and the frame 5 is provided with a first slideway 51 for lifting the first supporting frame 331 and a second slideway 52 for lifting the second supporting frame 341; as shown in fig. 6, a plurality of rotating brushes 35 are provided on one side of the first supporting frame 331 and the second supporting frame 341 near the transporting portion 1. The flushing mechanism 32 comprises a first flushing part 36, a second flushing part 37 and a third flushing part 38, wherein the first flushing part 36 is matched with the first brushing part 33, the second flushing part 37 is matched with the second brushing part 34, and the third flushing part 38 is arranged in front of the second flushing part 37 along the abalone conveying direction; the first flushing part 36 includes a first bracket 361, two ends of the first bracket 361 are disposed in the first slideway 51, the second flushing part 37 includes a second bracket 371, two ends of the second bracket 371 are disposed in the second slideway 52, the third flushing part 38 includes a third bracket 381, and further includes a third slideway 53 for lifting the third bracket 381, as shown in fig. 5, a plurality of spray head groups 39 are disposed on one sides of the first bracket 361, the second bracket 371 and the third bracket 381, which are close to the transport part 1, and the spray head groups 39 include a plurality of high-pressure spray heads 391 with different angles.
The turnover part 4 is a distance between one end of the first conveying belt 111, which is close to the second conveying belt 112, and the distance is 0.1-0.2m.
As shown in fig. 7, through holes 113 are provided in each of the first and second conveyor belts 111 and 112, and the through holes 113 are used for dropping impurities washed off the abalone body through the through holes 113.
The outside of the elastic extrusion part 2 is provided with a mucus receiving device; a liquid collecting pipe 6 is arranged below the transport part 1.
When the abalone cleaning device is used, abalone is put into a gap 23 between a first extrusion plate 21 and a second extrusion plate 22, most of sediment dirt and mucus on the abalone body can be extruded out, the abalone is collected by using a mucus receiving device and enters a first conveying belt 111, meanwhile, a first supporting frame 331 descends in a first slideway 51 to reach the upper part of the first conveying belt 111, a rotating brush 35 is used for brushing the passing abalone, then the abalone leaves the first conveying belt 111, and enters a second conveying belt 112 after being overturned by a turnover part 4; similarly, the second supporting frame 341 descends on the second slide way 52, and brushes the abalone passing through the turning over by using the rotating brush 35, and when the abalone brushes on the first conveyor belt 111 and the second conveyor belt 112, the abalone can be washed by using the first washing part 36 or the second washing part 37 if necessary; then, in the final stage, the abalone is washed by the high-pressure nozzle 391 in the third washing part 38, the abalone is washed, the washed abalone is processed in the next step, and the water containing impurities and dirt washed from the abalone body flows into the liquid collecting pipe 6 through the through hole 113 on the transmission belt.
It is to be understood that the transporting portion 1 is a transporting roller set, the transporting roller set includes a plurality of parallel rotating rollers, a space is provided between the rotating rollers, a mesh enclosure is provided on the rotating rollers, a mesh opening is provided on the mesh enclosure, and the space is matched with the mesh opening.
In this specification, each embodiment is described in a progressive manner, and identical and similar parts of each embodiment are all referred to each other, and each embodiment mainly describes differences from other embodiments. In particular, for system embodiments, since they are substantially similar to method embodiments, the description is relatively simple, as relevant to see a section of the description of method embodiments.

Claims (4)
1. A production method of instant abalone is characterized by comprising the following steps: the method comprises the following steps:
s1: removing shells of fresh abalones and adopting an abalone cleaning device to carry out cleaning treatment;
s2: conditioning and flavoring;
cutting the surface of the abalone body, and then placing the abalone body into a curing material for curing;
s3: carrying out rapid dehydration shaping on the abalone surface;
in an anaerobic environment, carrying out far infrared treatment for 3-5s or carrying out rapid dehydration shaping treatment on the abalone surface under the ultra-high temperature condition, wherein the ultra-high temperature condition is 125-150 ℃, and the heating time is 6-8s;
s4: curing;
curing is divided into the steps of earlier stage softening treatment and later stage cooking abalone to enable the abalone to be cured, and the softening conditions are as follows: the initial cooking temperature is 70-90 ℃, the cooking time is 5-10min, the cooking temperature is set to 90-100 ℃ after the abalone surface is softened, and the cooking is continued for 10-20min;
s5: packaging;
bagging abalone, vacuumizing and sealing;
s6: sterilizing;
performing irradiation sterilization on the abalone by utilizing electron irradiation, wherein the irradiation conditions are as follows: the irradiation dose is 6-15kGy, and the beam energy flow is 8-10MeV;
the abalone cleaning device comprises a conveying part, an elastic extrusion part and a cleaning part are sequentially arranged along the abalone conveying direction, the elastic extrusion part is used for removing abalone body surface mucus, the cleaning part comprises a brushing mechanism and a flushing mechanism, the conveying part comprises a plurality of conveying belts which are sequentially and adjacently arranged, and a plurality of overturning parts for overturning the abalone are arranged between the conveying belts; the elastic extrusion part and the cleaning part are arranged above the conveying part;
the elastic extrusion part comprises a first extrusion plate and a second extrusion plate which are correspondingly arranged, a gap is arranged between the first extrusion plate and the second extrusion plate, a plurality of first elastic pieces are arranged on one side, far away from the second extrusion plate, of the first extrusion plate, and a plurality of second elastic pieces are arranged on one side, far away from the first extrusion plate, of the second extrusion plate; according to the abalone conveying direction, one end of the first extrusion plate, which is close to the second extrusion plate, is inclined forwards, and one end of the second extrusion plate, which is close to the first extrusion plate, is inclined forwards; the elastic extrusion part is also provided with a sliding rail, and the sliding rail comprises a first sliding rail matched with the first extrusion plate and a second sliding rail matched with the second extrusion plate; one side of the first extrusion plate, which is close to the second extrusion plate, and one side of the second extrusion plate, which is close to the first extrusion plate, are arranged in a corresponding arc tooth shape.

A method of producing ready-to-eat abalone according to claim 1, wherein the abalone cleaning apparatus further comprises a frame, the conveyor belt is disposed on the frame, the conveyor belt comprises a first conveyor belt and a second conveyor belt, and a turnover part is disposed between the first conveyor belt and the second conveyor belt; the brushing mechanism comprises a first brushing part matched with the first conveying belt and a second brushing part matched with the second conveying belt; the first brushing part comprises a first supporting frame, the second brushing part comprises a second supporting frame, and the frame is provided with a first slideway for lifting movement of the first supporting frame and a second slideway for lifting movement of the second supporting frame; and a plurality of rotary brushes are arranged on one sides of the first support frame and the second support frame, which are close to the conveying part.

A method of producing ready-to-eat abalone according to claim 2, wherein the flushing mechanism comprises a first flushing part, a second flushing part and a third flushing part, the first flushing part being arranged in cooperation with the first brushing part, the second flushing part being arranged in cooperation with the second brushing part, the third flushing part being arranged in front of the second flushing part in the direction of transport of the abalone; the first washing part comprises a first support, the first support is arranged in a first slideway, the second washing part comprises a second support, the second support is arranged in a second slideway, the third washing part comprises a third support, the frame is further provided with a third slideway for the third support to do lifting motion, one side of the first support, the second support and the third support, which is close to the transportation part, is provided with a plurality of spray head groups, and the spray head groups comprise a plurality of high-pressure spray heads with different angles.
4. The method for producing instant abalone according to claim 2, wherein the overturning part is a distance between one end of the first conveyor belt, which is close to the second conveyor belt, and the distance is 0.1-0.2m; the first conveying belt and the second conveying belt are respectively provided with a through hole, and the through holes are used for enabling impurities cleaned off by abalone bodies to fall down through the through holes.
