Abstract
本发明公开了一种含小分子肽的亚麻籽油微胶囊及其制备方法,该胶囊包括以下组份,亚麻籽油、多糖、壁材、小分子肽、功能因子、乳化剂、迷迭香、维生素B、维生素E、海藻糖、大豆磷脂,该胶囊稳定性好;产品具有良好的口感和风味,质量安全可靠、保质期长,该制备方法工艺简单,易操作、成膜性好,生产效率高。
Description
技术领域
本发明涉及亚麻籽油微胶囊,具体是涉及一种含小分子肽的亚麻籽油微胶囊及其制备方法。
技术背景
α—亚麻酸是人体必需脂肪酸,对人体正常的代谢和营养起着必不可少的作用。该不饱和脂肪酸在哺乳动物体内不能自身合成,必须依靠食物的供给,在体内转化成为二十碳五烯酸(EPA)和二十二碳六烯酸(DHA),从而在体内发挥作用,有研究表明,n—3型必需脂肪酸摄入量不足的动物学习能力和视觉敏锐度均会下降,此外还会导致免疫力降低、疲劳、动脉粥样硬化等症状的发生。
亚麻籽油的脂肪酸组成主要为不饱和脂肪酸,其含量达到90%以上,其中以α-亚麻酸比例最高,超过50%,是世界上α-亚麻酸含量最高的植物油。
目前亚麻籽油产品的形式比较单一,基本就是普通的油瓶装形式,加工、利用、包装、食用等也都比较单一,亚麻籽油的不饱和脂肪酸含量超过90%,但该胶囊稳定性较差,生产胶囊时成膜性较低,生产效率低。
发明内容
为了解决上述技术问题,本发明提供了一种含小分子肽的亚麻籽油微胶囊,该胶囊稳定性强、营养成分全、口感风味甚佳,本发明还提供了一种含小分子肽的亚麻籽油微胶囊的制备方法,该方法成膜性好,生产效率高。
本发明的目的是通过下述技术方案实现的:
一种含小分子肽的亚麻籽油微胶囊,由以下质量份数的原料组成:亚麻籽油10-50份、多糖5-10份、壁材40-90份、小分子肽0.1-1份、功能因子0.1-0.6份、乳化剂0.05-2份。
进一步的,所述含小分子肽的亚麻籽油微胶囊,由以下质量份数的原料组成:亚麻籽油10-50份、多糖5-10份、壁材40-90份、小分子肽0.1-1份、功能因子0.1-5份、乳化剂0.05-2份、迷迭香0.1-0.5份、维生素B 1-8份、维生素E 1-8份、海藻糖 3-10份、大豆磷脂2-6份。
进一步的,所述壁材为明胶或阿拉伯胶中的一种或两种。
进一步的,所述功能因子由以下质量份数的成分组成:核酸1-2份、黄酮0.3-1份、锌0.5份、钙0.2-1份、硒0.2-0.5份,白藜芦醇0.1-1份。
进一步的,所述乳化剂由以下质量份数的成分组成:丁酸香叶酯0.2份、蛋黄卵磷脂0.3-0.8份、山梨醇0.4-0.9份、蔗糖脂肪酸酯1份。
含小分子肽的亚麻籽油微胶囊的制备方法,制备步骤如下:
(1) 将多糖、壁材混合成混合物,将混合物加入至68℃-80℃热水中,高速搅拌使之完全溶解,形成水相,所述混合物与水的重量份数比为3:8-10;
(2)将所述的亚麻籽油升温至20~80℃,加入乳化剂、迷迭香、小分子肽、功能因子、维生素B溶解后倒入至搅拌机中,搅拌10-20分钟,搅拌均匀,再将维生素E 、海藻糖、大豆磷脂加入继续搅拌,搅拌20~30Min,制得混合物B;
(3)用剪切机对步骤(1)所得水相在15000rpm~21000rpm下进行高速剪切,并缓慢加入步骤(2)所得混合物B,在混合物B完全加入后,保持剪切8~15min,得到乳状液;
(4)用高压均质机对上述步骤(3)所得乳状液于35-48℃进行均质3次,均质压力为25~33MPa;
(5)应用超高温瞬时灭菌机对步骤(4)所得均质后的乳状液在110℃~115℃下灭菌10-15s;
(6)将步骤(5)所得灭菌后的乳状液进行喷雾干燥,进风温度为140℃~160℃,出风温度为80℃~100℃,得到含小分子肽的亚麻籽油微胶囊。
有益效果
该胶囊含有小分子肽功能因子,其安全性高,生理功能强,具有用量少的独特优势 而且具有抗氧化和抗衰老的功能,该胶囊还包括迷迭香、维生素E 、海藻糖、大豆磷脂、乳化剂,一方面,营养丰富,保证了产品的天然性而且稳定性好,另一方面提高了亚麻籽油的稳定性(热敏性及抗氧化性较高);同时采用超高温瞬时杀菌工艺,既降低了油脂的氧化,又达到了灭菌要求,产品具有良好的口感和风味,质量安全可靠、保质期长,该制备方法工艺简单,易操作、成膜性好,生产效率高。
具体实施方式
下面通过具体的实施方案叙述本发明中一种亚麻籽油微胶囊生产方法。除非特别说明,本发明中所用的技术手段均为本领域技术人员所公知的方法。另外,实施方案应理解为说明性的,而非限制本发明的范围,本发明的实质和范围仅由权利要求书所 限定。对于本领域技术人员而言,在不背离本发明实质和范围的前提下,对这些实施方案中的物料成分和用量进行的各种改变或改动也属于本发明的保护范围。
实施例1
一种含小分子肽的亚麻籽油微胶囊,由以下质量份数的原料组成:亚麻籽油10份、多糖5份、壁材40份、小分子肽0.1份、功能因子0.1份、乳化剂0.05份,所述壁材为明胶,所述功能因子由以下质量份数的成分组成:核酸1份、黄酮0.3份、锌0.5份、钙0.2份、硒0.2份,白藜芦醇0.1份。
所述乳化剂由以下质量份数的成分组成:丁酸香叶酯0.2份、蛋黄卵磷脂0.3份、山梨醇0.4份、蔗糖脂肪酸酯1份。
含小分子肽的亚麻籽油微胶囊的制备方法,制备步骤如下:
(1) 将多糖、壁材混合成混合物,将混合物加入至68℃热水中,高速搅拌使之完全溶解,形成水相,所述混合物与水的重量份数比为3:8;
(2)将所述的亚麻籽油升温至20℃,加入乳化剂、小分子肽、功能因子、溶解后倒入至搅拌机中,搅拌10分钟,搅拌均匀,制得混合物B;
(3)用剪切机对步骤(1)所得水相在15000rpm下进行高速剪切,并缓慢加入步骤(2)所得混合物B,在混合物B完全加入后,保持剪切8min,得到乳状液;
(4)用高压均质机对上述步骤(3)所得乳状液于35℃进行均质3次,均质压力为25MPa;
(5)应用超高温瞬时灭菌机对步骤(4)所得均质后的乳状液在110℃下灭菌 10s;
(6)将步骤(5)所得灭菌后的乳状液进行喷雾干燥,进风温度为140℃,出风温度为80℃,得到含小分子肽的亚麻籽油微胶囊。
实施例2
一种含小分子肽的亚麻籽油微胶囊,由以下质量份数的原料组成:亚麻籽油50份、多糖10份、壁材90份、小分子肽1份、功能因子0.6份、乳化剂2份;所述壁材为阿拉伯胶;所述功能因子由以下质量份数的成分组成:核酸2份、黄酮1份、锌0.5份、钙1份、硒0.5份,白藜芦醇1份;所述乳化剂由以下质量份数的成分组成:丁酸香叶酯0.2份、蛋黄卵磷脂0.8份、山梨醇0.9份、蔗糖脂肪酸酯1份。
含小分子肽的亚麻籽油微胶囊的制备方法,制备步骤如下:
(1) 将多糖、壁材混合成混合物,将混合物加入至80℃热水中,高速搅拌使之完全溶解,形成水相,所述混合物与水的重量份数比为10;
(2)将所述的亚麻籽油升温至20℃,加入乳化剂、小分子肽、功能因子、溶解后倒入至搅拌机中,搅拌10分钟,搅拌均匀,制得混合物B;
(3)用剪切机对步骤(1)所得水相在21000rpm下进行高速剪切,并缓慢加入步骤(2)所得混合物B,在混合物B完全加入后,保持剪切15min,得到乳状液;
(4)用高压均质机对上述步骤(3)所得乳状液于48℃进行均质3次,均质压力为33MPa;
(5)应用超高温瞬时灭菌机对步骤(4)所得均质后的乳状液在115℃下灭菌 15s;
(6)将步骤(5)所得灭菌后的乳状液进行喷雾干燥,进风温度为160℃,出风温度为100℃,得到含小分子肽的亚麻籽油微胶囊。
实施例3
一种含小分子肽的亚麻籽油微胶囊,由以下质量份数的原料组成:亚麻籽油40份、多糖8份、壁材80份、小分子肽0.5份、功能因子4份、乳化剂1份、迷迭香0.5份、维生素B 8份、维生素E 8份、海藻糖 10份、大豆磷脂6份;所述壁材由明胶和阿拉伯胶组成,所述质量份数比为3:1;所述功能因子由以下质量份数的成分组成:核酸2份、黄酮1份、锌0.5份、钙1份、硒0.5份,白藜芦醇1份;所述乳化剂由以下质量份数的成分组成:丁酸香叶酯0.2份、蛋黄卵磷脂0.8份、山梨醇0.9份、蔗糖脂肪酸酯1份。
含小分子肽的亚麻籽油微胶囊的制备方法,制备步骤如下:
(1) 将多糖、壁材混合成混合物,将混合物加入至75℃热水中,高速搅拌使之完全溶解,形成水相,所述混合物与水的重量份数比为3:8;
(2)将所述的亚麻籽油升温至20~80℃,加入乳化剂、迷迭香、小分子肽、功能因子、维生素B溶解后倒入至搅拌机中,搅拌10-20分钟,搅拌均匀,再将维生素E 、海藻糖、大豆磷脂加入继续搅拌,搅拌20~30Min,制得混合物B;
(3)用剪切机对步骤(1)所得水相在15000rpm~21000rpm下进行高速剪切,并缓慢加入步骤(2)所得混合物B,在混合物B完全加入后,保持剪切8~15min,得到乳状液;
(4)用高压均质机对上述步骤(3)所得乳状液于35-48℃进行均质3次,均质压力为25~33MPa;
(5)应用超高温瞬时灭菌机对步骤(4)所得均质后的乳状液在110℃~115℃下灭菌10-15s;
(6)将步骤(5)所得灭菌后的乳状液进行喷雾干燥,进风温度为140℃~160℃,出风温度为80℃~100℃,得到含小分子肽的亚麻籽油微胶囊。
实施例4
一种含小分子肽的亚麻籽油微胶囊,由以下质量份数的原料组成:亚麻籽油30份、多糖9份、壁材80份、小分子肽1份、功能因子0.1份、乳化剂0.05份、迷迭香0.1份、维生素B 1份、维生素E 7份、海藻糖 9份、大豆磷脂5份;所述壁材为阿拉伯胶;所述功能因子由以下质量份数的成分组成:核酸2份、黄酮0.3份、锌0.5份、钙1份、硒0.5份,白藜芦醇1份;所述乳化剂由以下质量份数的成分组成:丁酸香叶酯0.2份、蛋黄卵磷脂0.8份、山梨醇0.9份、蔗糖脂肪酸酯1份。
含小分子肽的亚麻籽油微胶囊的制备方法,制备步骤如下:
(1) 将多糖、壁材混合成混合物,将混合物加入至80℃热水中,高速搅拌使之完全溶解,形成水相,所述混合物与水的重量份数比为3:8-10;
(2)将所述的亚麻籽油升温至80℃,加入乳化剂、迷迭香、小分子肽、功能因子、维生素B溶解后倒入至搅拌机中,搅拌15分钟,搅拌均匀,再将维生素E 、海藻糖、大豆磷脂加入继续搅拌,搅拌25Min,制得混合物B;
(3)用剪切机对步骤(1)所得水相在21000rpm下进行高速剪切,并缓慢加入步骤(2)所得混合物B,在混合物B完全加入后,保持剪切10min,得到乳状液;
(4)用高压均质机对上述步骤(3)所得乳状液于45℃进行均质3次,均质压力为30MPa;
(5)应用超高温瞬时灭菌机对步骤(4)所得均质后的乳状液在113℃下灭菌 14s;
(6)将步骤(5)所得灭菌后的乳状液进行喷雾干燥,进风温度为150℃,出风温度为95℃,得到含小分子肽的亚麻籽油微胶囊。
微胶囊化亚麻籽油稳定性的测定
使用压力差示扫描量热仪(PDSC)测定亚麻籽油及微胶囊化亚麻籽油的热稳定性。 扫描速率为7℃/min,氧气压力为1.5MPa,氧气流速为30mL/min。试样量约5mg,温度从100升高到300℃,观察其稳定性。
使用TGA/SDTA851型热重分析仪,氮气流量为20ml/min.升温速度为15℃/min,从室温加热到685℃,分别测定亚麻籽油和微胶囊化亚麻籽油的热重曲线,得到亚麻籽油的热分解的起始温度大约为230℃,而微胶囊化亚麻籽油的分解起始温度大约在195℃。
该微胶囊稳定性好,产品具有良好的口感和风味,质量安全可靠、保质期长,该制备方法工艺简单,易操作、成膜性好,生产效率高。

Claims (6)
1.一种含小分子肽的亚麻籽油微胶囊,其特征在于,由以下质量份数的原料组成:亚麻籽油10-50份、多糖5-10份、壁材40-90份、小分子肽0.1-1份、功能因子0.1-0.6份、乳化剂0.05-2份。
2.根据权利要求1所述的一种含小分子肽的亚麻籽油微胶囊,其特征在于,所述含小分子肽的亚麻籽油微胶囊,由以下质量份数的原料组成:亚麻籽油10-50份、多糖5-10份、壁材40-90份、小分子肽0.1-1份、功能因子0.1-5份、乳化剂0.05-2份、迷迭香0.1-0.5份、维生素B 1-8份、维生素E 1-8份、海藻糖 3-10份、大豆磷脂2-6份。
3.根据权利要求1所述的一种含小分子肽的亚麻籽油微胶囊,其特征在于,所述壁材为明胶或阿拉伯胶中的一种或两种。
4.根据权利要求1所述的一种含小分子肽的亚麻籽油微胶囊,其特征在于,所述功能因子由以下质量份数的成分组成:核酸1-2份、黄酮0.3-1份、锌0.5份、钙0.2-1份、硒0.2-0.5份,白藜芦醇0.1-1份。
5.根据权利要求1所述的一种含小分子肽的亚麻籽油微胶囊,其特征在于,所述乳化剂由以下质量份数的成分组成:丁酸香叶酯0.2份、蛋黄卵磷脂0.3-0.8份、山梨醇0.4-0.9份、蔗糖脂肪酸酯1份。
6.根据权利要求1所述的一种含小分子肽的亚麻籽油微胶囊的制备方法,其特征在于,制备步骤如下:
(1) 将多糖、壁材混合成混合物,将混合物加入至68℃-80℃热水中,高速搅拌使之完全溶解,形成水相,所述混合物与水的重量份数比为3:8-10;
(2)将所述的亚麻籽油升温至20~80℃,加入乳化剂、迷迭香、小分子肽、功能因子、维生素B溶解后倒入至搅拌机中,搅拌10-20分钟,搅拌均匀,再将维生素E 、海藻糖、大豆磷脂加入继续搅拌,搅拌20~30Min,制得混合物B;
(3)用剪切机对步骤(1)所得水相在15000rpm~21000rpm下进行高速剪切,并缓慢加入步骤(2)所得混合物B,在混合物B完全加入后,保持剪切8~15min,得到乳状液;
(4)用高压均质机对上述步骤(3)所得乳状液于35-48℃进行均质3次,均质压力为25~33MPa;
(5)应用超高温瞬时灭菌机对步骤(4)所得均质后的乳状液在110℃~115℃下灭菌10-15s;
(6)将步骤(5)所得灭菌后的乳状液进行喷雾干燥,进风温度为140℃~160℃,出风温度为80℃~100℃,得到含小分子肽的亚麻籽油微胶囊。
