本发明提供了一种高原富硒排酸羊肉的生产方法。本发明在民乐县特有的富硒高原生态山地上精准放养及圈养相结合方式标准化养殖羔羊,屠宰肉羊,经过排酸后,最终生产出绿色有机的高原富硒排酸羊肉。本发明所述羊肉符合消费者健康、时尚、绿色有机的理念追求。

本发明涉及农业养殖领域,具体涉及一种高原富硒排酸羊肉的生产方法。
背景技术
民乐县隶属于甘肃省张掖市,地处祁连山北麓,河西走廊中段,张掖市东南部,县境东与山丹、永昌二县接壤,南与青海省祁连县、门源县相连,西南与肃南裕固族自治县交界,西和西北同张掖市甘州区毗邻。地理坐标在东经100°22’59”~101°13’9”, 北纬37°56’19”~38°48’17”之间。民乐县祁连山区海拔2500-3000米,祁连雪山的冰川融水滋养了祁连山下世世代代的民乐人民。祁连山脚下肥沃的土壤含有硒、钼、锶、碘等人体必需元素。在当前人们追求绿色、健康、环保、生态的大前提下,通过生产高原富硒的排酸羊肉,符合当前社会消费理念。
本发明提供了一种高原富硒排酸羊肉的生产方法,以科学化的方法,从育种、养殖到羊肉屠宰加工及排酸,制定了标准化的生产方法,生产出零污染、高标准、健康绿色且具有养生滋补效果的富硒排酸羊肉,形成产业链,促进和刺激当地养殖产业的发展,具有良好的生态、人文和健康消费效应,高原富硒排酸羊肉成为一种时尚、健康、滋补、养生的新型肉制品,将成为人们居家消费、馈赠亲友的时尚礼品。
发明内容
本发明的目的是提供一种高原富硒排酸羊肉的生产方法,所述方法包括以下步骤:
1)选择平均日增重达200克以上的月龄2-4月的羔羊,为最佳育肥品种;
2)羔羊育肥,所述育肥过程由放养阶段和圈养阶段组成;
所述的放养的地点为甘肃省张掖市民乐县祁连山区,海拔2500-3000米;
所述的放养阶段的饲料为甘肃省张掖市民乐县祁连山区种植的草料和野生中药材;
3)羔羊饲养至1岁龄为屠宰时间;
4)屠宰后的羊肉进行排酸,生产出富硒排酸羊肉。
所述放养阶段的野生中草药包括胡草、沙葱、沙棘、柴胡、野生当归、冬虫夏草、淫羊藿。当地山地生长的羊胡草、沙葱、沙棘、柴胡、野生当归、冬虫夏草、淫羊藿等富含营养的野生植物,能明显促进肉羊肉质改善,无膻味,且长期放养,使肉质富含多种维生素、氨基酸,使养殖的羊肉具有一定养生、滋补效果。当地的野生植物也不存在农药残留,是天然的有机饲料,进一步保证羊肉的安全性。
所述放养时间为夏季早5时至9时,下午17时至20时,冬季早10时至下午16时,增加肉羊运动量,所产羊肉肉质紧密。
其余时间为圈养时间。
圈养期间,配置饲草料包括高原区种植的青稞青草料、大麦青草料,同时辅以当地产豌豆、青稞粗粉精饲料配合饲喂,饲喂标准按照肉羊每公斤每天饲喂0.1kg青草料和0.01kg豌豆粉或青稞粉精饲料。因当地富硒土壤环境,使当地野生植物及青稞、大麦的青草料和豌豆、青稞粗饲料均富硒,故以此方法喂养的肉羊有效吸收了硒元素,是生产富硒排酸羊肉的关键。
所述青草料以种植周期100天为最佳收割期,青稞、大麦刚接穗尚未开花为最佳收割期。
所述圈养阶段还包括音乐干预环节,所述音乐干预环节为早、中、晚3次给料时间各播放古典轻音乐0.5h。音乐干预环节有明显的避免肉羊因焦躁产生体内毒素,保持肉质鲜嫩的效果。
所述排酸流程如下:a、肉羊屠宰后立即将羊肉洗净,吸干水分,再放在保鲜膜上;b、捏住保鲜膜的两头,往前滚,用保鲜膜把羊肉卷紧实,将保鲜膜的两端绑紧;c、为了保证恒温效果,取一块干净的棉布把羊肉卷包起来,之后把棉布和保鲜膜包裹的羊肉放在冷库或冰箱内,环境温度-4℃,排酸时间为7-12小时,生产得到富硒排酸羊肉。
所述冷库为气调冷库,气调冷库的气体由O2、CO2和N2组成,所述气体的体积比为60%O2:20%CO2:20%N2。发明人经过筛选,实验筛选气调冷库中各填充气体的配比,不仅保证了脱酸过程的顺利实施,还在最大程度上避免了羊肉脱酸过程中微生物的污染和繁殖,保证了羊肉的安全性,使其肉质更加鲜美。
通过排酸处理将羊肉中的乳酸分解成二氧化碳、水和酒精然后挥发掉,同时羊肉肉细胞内的大分子三磷酸腺苷在酶的作用下分解为新鲜的物质——基苷(即IMP,味精的主要成分),肉的酸碱度被改变,新陈代谢产物被最大程度的分解和排出。排酸羊肉软嫩多汁,营养价值提高,肉质显弱酸性。
Claims (8)
1.一种高原富硒排酸羊肉的生产方法,其特征在于所述方法包括以下步骤:
1)选择平均日增重达200克以上的月龄2-4月的羔羊,为待育肥羔羊;
2)羔羊育肥,所述育肥过程由放养阶段和圈养阶段组成;
所述的放养的地点为甘肃省张掖市民乐县祁连山区,海拔2500-3000米;
所述的放养阶段的饲料为甘肃省张掖市民乐县祁连山区种植的草料和野生中药材;
3)羔羊饲养至1岁龄为屠宰时间;
4)屠宰后的羊肉进行排酸,生产出富硒排酸羊肉。
2.根据权利要求1所述的一种高原富硒排酸羊肉的生产方法,其特征在于所述放养阶段的野生中草药包括胡草、沙葱、沙棘、柴胡、野生当归、冬虫夏草、淫羊藿。
3.根据权利要求1所述的一种高原富硒排酸羊肉的生产方法,其特征在于所述放养时间为夏季早5时至9时,下午17时至20时,冬季早10时至下午16时,其余时间为圈养时间。
4.根据权利要求1所述的一种高原富硒排酸羊肉的生产方法,其特征在于,圈养期间,配置饲草料包括高原区种植的青稞青草料、大麦青草料,同时辅以当地产豌豆、青稞粗粉精饲料配合饲喂,饲喂标准按照肉羊每公斤每天饲喂0.1kg青草料和0.01kg豌豆粉或青稞粉精饲料。
5.根据权利要求4所述的一种高原富硒排酸羊肉的生产方法,其特征在于,所述青草料以种植周期100天为最佳收割期,青稞、大麦刚接穗尚未开花为最佳收割期。
6.根据权利要求1所述的一种高原富硒排酸羊肉的生产方法,其特征在于,所述圈养阶段还包括音乐干预环节,所述音乐干预环节为早、中、晚3次给料时间各播放古典轻音乐0.5h。
7.根据权利要求1所述的一种高原富硒排酸羊肉的生产方法,其特征在于所述排酸流程如下:a、肉羊屠宰后立即将羊肉洗净,吸干水分;b、用保鲜膜包裹羊肉;c、把保鲜膜包裹的羊肉放在冷库内,冷库温度-4℃,排酸时间为7-12小时,生产得到富硒排酸羊肉。
8.根据权利要求7所述的一种高原富硒排酸羊肉的生产方法,其特征在于所述冷库为气调冷库,气调冷库的填充气体由O2、CO2和N2组成,所述气体的体积比为55%O2:25%CO2:20%N2。
