本发明涉及功能饮料技术领域,具体涉及一种青少年椰子水运动饮料及其制备方法。
背景技术
目前市场上的运动饮料大部分主要以补充电解质和碳水化合物为主,含有钾、钙、铁、钠、磷等多种矿物质,这些矿物质在人体中起到稳定细胞内外渗透压,维持酸碱平衡、参与能量代谢,保证心肌、骨骼肌及神经细胞正常等重要生理作用。大部分运动饮料的针对性不强,专门为青少年设计的运动饮料也是少之又少,不仅不能满足青少年对氨基酸、蛋白质及多种维生素和微量元素的摄入要求,还可能影响青少年正常的生长发育。
椰子水是椰子坚果腔内的液体胚乳,与人的体液等渗,是一种营养丰富的天然饮料,其所含的矿物质如钠、钾、钙、铁、镁等微量元素含量是市场上常见运动饮料的几倍甚至几十倍,椰子水完全可以替代添加剂或营养强化剂作为运动饮料的电解质来源,但目前市场上却尚无以天然的椰子水作电解质来源的运动饮料。因此,如何科学、合理地研制出一款以天然椰子水作电解质来源,符合青少年生长发育的运动饮料是目前亟需解决的问题。
发明内容
为了解决上述问题,本发明提供了一种青少年椰子水运动饮料及其制备方法,不仅能够补充青少年运动后缺乏的能量、糖、矿物质和维生素等,同时能够满足青少年的生长发育,具有清凉止渴、消除疲劳、恢复体能的功效。
本发明通过以下技术方案来实现:
一种青少年椰子水运动饮料,由以下重量份的原材料组成:脱脂椰子种皮多肽8~12份、茉莉花茎乙酸乙酯提取液10~15份、红枣2~6份、桂圆肉5~8份、桑葚3~5份、蔗糖3.5~7.5份、甘露糖醇0.01~0.03份、葡萄糖酸0.05~0.08份,椰子水至200份。
优选地,一种青少年椰子水运动饮料,由以下重量份的原材料组成:脱脂椰子种皮多肽9~11份、茉莉花茎乙酸乙酯提取液12~14份、红枣3~5份、桂圆肉6~7份、桑葚3.5~4.5份、蔗糖4.5~6.5份、甘露糖醇0.015~0.025份、葡萄糖酸0.06~0.07份,椰子水至200份。
优选地,一种青少年椰子水运动饮料,由以下重量份的原材料组成:脱脂椰子种皮多肽10份、茉莉花茎乙酸乙酯提取液12.5份、红枣4份、桂圆肉6.5份、桑葚4份、蔗糖5.5份、甘露糖醇0.02份、葡萄糖酸0.06份,椰子水至200份。
优选地,所述脱脂椰子种皮多肽的制备方法:
a.取脱脂椰子种皮,经40℃干燥4~6h,按料液比为1:20加入pH为8.0的磷酸盐缓冲液,震荡提取2h,得提取液;
b.取提取液于4℃,6000r/min离心15min,取上清液,用6mol/LHCl调pH值至3.5~4.5,收集沉淀,冷冻干燥,得脱脂椰子种皮蛋白;
c.按酶用量为0.2%加入酸性蛋白酶,于45℃、pH为2.0的条件下静置6h,再提高温度至95℃,静置10min,经10000r/min离心15min,真空浓缩至原体积的1/2,真空干燥,得脱脂椰子种皮多肽。
优选地,所述茉莉花茎乙酸乙酯提取液的制备方法为:取茉莉花茎烘干粉碎,过50目筛,按料液比为1:16加入乙酸乙酯,在75℃下水浴超声辅助提取30min,抽滤,取滤渣重复提取1~2次,合并滤液,旋转蒸发除去乙酸乙酯,浓缩至原体积的1/2,得茉莉花茎乙酸乙酯提取液。
优选地,所述甘露糖醇可以用果葡糖浆、葡萄糖、麦芽糖、果糖、三氯蔗糖、木糖醇、低聚果糖、阿斯巴甜、山梨糖醇、安塞蜜、甘露糖浆、低聚乳糖或糖精钠中的一种或几种取代。
优选地,所述葡萄糖酸可以用柠檬酸、苹果酸、乳酸、酒石酸、富马酸中的一种或几种取代。
本发明还提供一种青少年椰子水运动饮料的制备方法,包括以下步骤:
(1)将1/2的椰子水加热至50℃,按重量份称取红枣、桂圆肉和桑葚,粉碎过80目筛,加入到加热的椰子水中,混合搅拌均匀,静置30~50min后加入蔗糖,继续搅拌,静置10~20min,经3000r/min离心分离10~15min,提取上清液,即为精制滤液;
(2)将脱脂椰子种皮多肽、花茎乙酸乙酯提取液、甘露糖醇、葡萄糖酸和剩余1/2椰子水混合,搅拌均匀后与步骤(1)所得精制滤液混合,得混合液。
(3)将步骤(3)得到的混合液于120~140℃,压力为130~150KPa的条件下灭菌4~6min,即可得青少年椰子水运动饮料。
本发明所述各主要功效成分作用机理如下:
椰子水含有丰富的营养物质,如蔗糖、果糖、葡萄糖、氨基酸、蛋白质、维生素、纤维素及矿物质等,其蛋白质中的精氨酸、丙氨酸、胧氨酸和丝氨酸的含量高于牛奶,含游离氨基酸17种以上,椰子水可促进细胞再生长,具有生津、利尿等良好的营养保健功能。
脱脂椰子种皮是椰子种皮在提取油脂后的副产物,其产量约占椰子种皮总质量的33~36%。其中,蛋白质约占16%,且氨基酸种类齐全,有降血脂、降低胆固醇以及抑制高血脂症等多种保健功能,是一种优质的蛋白质资源。
茉莉花茎乙酸乙酯提取物中含有较高多酚含量,具有较强的抗氧化能力,对DPPH·、·OH以及O2-自由基有良好的清除能力。
与现有技术相比,本发明的有益之处为:
1、本发明从脱脂椰子种皮中提取多肽,所得脱脂椰子种皮多肽具有显著的抗氧化活性,且能通过抑制硫代巴比妥酸反应物的形成来抑制脂质过氧化,将其添加至饮料中,能增强青少年机体的抗氧化能力,清除体内自由基,降低丙二醛含量,具有抗疲劳效果;
2、本发明超声波法从茉莉花茎中提取有效成分,所得茉莉花茎乙酸乙酯提取液具有较强的抗氧化能力及清除自由基能力,将其添加至饮料中,能加快青少年运动后恢复的时间,具有消除疲劳的效果;
3、本发明采用椰子水作基料,所含营养物质丰富,不仅能够补充青少年运动消耗的能量、电解质和维生素等,还能提供蛋白质等营养物质,补充青少年生长发育所需;
4、本发明将脱脂椰子种皮多肽、茉莉花茎乙酸乙酯提取液和椰子水复配在一起制成一种青少年椰子水运动饮料,能够为青少年补充能量,减缓疲劳的产生、消除肌肉疲劳,加快自由基的清除效率,帮助青少年快速恢复体能。
具体实施方式
为了使本发明实现的技术手段、创作特征、达成目的与功效易于明白了解,下面结合具体实施例,进一步阐述本发明。
实施例1
一种青少年椰子水运动饮料,由以下重量份的原材料组成:脱脂椰子种皮多肽8份、茉莉花茎乙酸乙酯提取液15份、红枣2份、桂圆肉8份、桑葚3份、蔗糖7.5份、甘露糖醇0.01份、葡萄糖酸0.08份,椰子水至200份。
所述脱脂椰子种皮多肽的制备方法:a.取脱脂椰子种皮,经40℃干燥4~6h,按料液比为1:20加入pH为8.0的磷酸盐缓冲液,震荡提取2h,得提取液;b.取提取液于4℃,6000r/min离心15min,取上清液,用6mol/L HCl调pH值至3.5~4.5,收集沉淀,冷冻干燥,得脱脂椰子种皮蛋白;c.按酶用量为0.2%加入酸性蛋白酶,于45℃、pH为2.0的条件下静置6h,再提高温度至95℃,静置10min,经10000r/min离心15min,真空浓缩至原体积的1/2,真空干燥,得脱脂椰子种皮多肽。

(3)将步骤(3)得到的混合液于120~140℃,压力为130~150KPa的条件下灭菌4~6min,即可得青少年椰子水运动饮料。
实施例2
一种青少年椰子水运动饮料,由以下重量份的原材料组成:脱脂椰子种皮多肽12份、茉莉花茎乙酸乙酯提取液10份、红枣6份、桂圆肉5份、桑葚5份、蔗糖3.5份、甘露糖醇0.03份、葡萄糖酸0.05份,椰子水至200份。
实施例3
一种青少年椰子水运动饮料,由以下重量份的原材料组成:脱脂椰子种皮多肽9份、茉莉花茎乙酸乙酯提取液14份、红枣3份、桂圆肉7份、桑葚3.5份、蔗糖6.5份、甘露糖醇0.015份、葡萄糖酸0.07份,椰子水至200份。
实施例4
一种青少年椰子水运动饮料,由以下重量份的原材料组成:脱脂椰子种皮多肽11份、茉莉花茎乙酸乙酯提取液12份、红枣5份、桂圆肉6份、桑葚4.5份、蔗糖4.5份、甘露糖醇0.025份、葡萄糖酸0.06份,椰子水至200份。
实施例5
一种青少年椰子水运动饮料,由以下重量份的原材料组成:脱脂椰子种皮多肽10份、茉莉花茎乙酸乙酯提取液12.5份、红枣4份、桂圆肉6.5份、桑葚4份、蔗糖5.5份、甘露糖醇0.02份、葡萄糖酸0.06份,椰子水至200份。
对比例1
与实施例1的区别在于,原料配方中没有添加脱脂椰子种皮多肽,具体为:茉莉花茎乙酸乙酯提取液15份、红枣2份、桂圆肉8份、桑葚3份、蔗糖7.5份、甘露糖醇0.01份、葡萄糖酸0.08份,椰子水至200份。
对比例2
与实施例1的区别在于,原料配方中没有添加茉莉花茎乙酸乙酯提取液,具体为:脱脂椰子种皮多肽8份、红枣2份、桂圆肉8份、桑葚3份、蔗糖7.5份、甘露糖醇0.01份、葡萄糖酸0.08份,椰子水至200份。
功效验证
试验例1
取本发明实施例1-5和对比例1-2制备的饮料进行营养成分含量的测定。实验结果如下表1所示:

由上表可知,通过实施例1与对比例1的对比可知,在本发明制备的饮料中添加脱脂椰子种皮多肽,可将饮料中蛋白质、矿物质、膳食纤维、维生素的成分含量提高56.7%、70.9%、64.5%和56.2%;通过实施例1与对比例2的对比可知,在本发明制备的饮料中添加茉莉花茎乙酸乙酯提取液,可将饮料中蛋白质、矿物质、膳食纤维、维生素的成分含量提高27.7%、30.1%、36.5%和28.0%;。
综上可知,在本发明制备的饮料中加入脱脂椰子种皮多肽和茉莉花茎乙酸乙酯提取液,可显著提高饮料中蛋白质、矿物质、膳食纤维和维生素等营养成分的含量,能够为青少年提供充分的能量,膳食纤维的提高还能改善食欲,促进消化,提高青少年机体对营养物质的利用率。
试验例2
选择70只雄性小鼠进行实验,体重18-24g,随机分成7组,每组10只,在2个月内,分别灌喂本发明实施例1-5和对比例1-2制备的运动饮料50ml/d。两个月后,采取各组小鼠血液样本,分离出血清,测定各组小鼠血清中谷胱甘肽过氧化物酶活性、超氧化物歧化酶活性以及丙二醛的含量。测定结果如下表2所示:

如上表所示,通过实施例1与对比例1的对比可知,在本发明制备的饮料中添加脱脂椰子种皮多肽,能将小鼠血清中谷胱甘肽过氧化物酶和超氧化物歧化酶活性分别提高43.6%和13.9%,并且可将小鼠血清中丙二醛含量降低29.0%;通过实施例1与对比例2的对比可知,在本发明制备的饮料中添加茉莉花茎乙酸乙酯提取液,能将小鼠血清中谷胱甘肽过氧化物酶和超氧化物歧化酶活性分别提高69.3%和42.3%,并且可将小鼠血清中丙二醛含量降低42.6%。
综上可知,在本发明制备的饮料中加入脱脂椰子种皮多肽和茉莉花茎乙酸乙酯提取液复配制作饮料,所制得的饮料能够显著提高小鼠血清中谷胱甘肽过氧化酶和超氧化物歧化酶的活性,加快自由基清除效率,显著减少血清中丙二醛的含量,具有保护机体细胞免受自由基引起的氧化损害的作用,能够加速机体消除疲劳感。

2.根据权利要求1所述的一种青少年椰子水运动饮料,其特征在于,由以下重量份的原材料组成:脱脂椰子种皮多肽9~11份、茉莉花茎乙酸乙酯提取液12~14份、红枣3~5份、桂圆肉6~7份、桑葚3.5~4.5份、蔗糖4.5~6.5份、甘露糖醇0.015~0.025份、葡萄糖酸0.06~0.07份,椰子水至200份。
3.根据权利要求2所述的一种青少年椰子水运动饮料,其特征在于,由以下重量份的原材料组成:脱脂椰子种皮多肽10份、茉莉花茎乙酸乙酯提取液12.5份、红枣4份、桂圆肉6.5份、桑葚4份、蔗糖5.5份、甘露糖醇0.02份、葡萄糖酸0.06份,椰子水至200份。
4.根据权利要求1~3任一项所述的一种青少年椰子水运动饮料,其特征在于,所述脱脂椰子种皮多肽的制备方法:
a.取脱脂椰子种皮,经40℃干燥4~6h,按料液比为1:20加入pH为8.0的磷酸盐缓冲液,震荡提取2h,得提取液;
b.取提取液于4℃,6000r/min离心15min,取上清液,用6mol/L HCl调pH值至3.5~4.5,收集沉淀,冷冻干燥,得脱脂椰子种皮蛋白;
c.按酶用量为0.2%加入酸性蛋白酶,于45℃、pH为2.0的条件下静置6h,再提高温度至95℃,静置10min,经10000r/min离心15min,真空浓缩至原体积的1/2,真空干燥,得脱脂椰子种皮多肽。
5.根据权利要求1~3任一项所述的一种青少年椰子水运动饮料,其特征在于,所述茉莉花茎乙酸乙酯提取液的制备方法为:取茉莉花茎烘干粉碎,过50目筛,按料液比为1:16加入乙酸乙酯,在75℃下水浴超声辅助提取30min,抽滤,取滤渣重复提取1~2次,合并滤液,旋转蒸发除去乙酸乙酯,浓缩至原体积的1/2,得茉莉花茎乙酸乙酯提取液。
6.根据权利要求1~3任一项所述的一种青少年椰子水运动饮料,其特征在于,所述甘露糖醇可以用果葡糖浆、葡萄糖、麦芽糖、果糖、三氯蔗糖、木糖醇、低聚果糖、阿斯巴甜、山梨糖醇、安塞蜜、甘露糖浆、低聚乳糖或糖精钠中的一种或几种取代。
7.根据权利要求1~3任一项所述的一种青少年椰子水运动饮料,其特征在于,所述葡萄糖酸可以用柠檬酸、苹果酸、乳酸、酒石酸、富马酸中的一种或几种取代。
8.一种制备如权利要求1~7任一项所述青少年椰子水运动饮料的方法,其特征在于,包括以下步骤:
(1)将1/2的椰子水加热至50℃,按重量份称取红枣、桂圆肉和桑葚,粉碎过80目筛,加入到加热的椰子水中,混合搅拌均匀,静置30~50min后加入蔗糖,继续搅拌,静置10~20min,经3000r/min离心分离10~15min,提取上清液,即为精制滤液;
(2)将脱脂椰子种皮多肽、花茎乙酸乙酯提取液、甘露糖醇、葡萄糖酸和剩余1/2椰子水混合,搅拌均匀后与步骤(1)所得精制滤液混合,得混合液。
(3)将步骤(3)得到的混合液于120~140℃,压力为130~150KPa的条件下灭菌4~6min,即可得青少年椰子水运动饮料。
