Abstract
本发明涉及一种含有林蛙抗氧化肽微胶囊的功能性饮料及其制备方法。由GaCl2,海藻酸钠,林蛙肽粉,吐温80,为原料制备微胶囊粒子。该功能性饮料由微胶囊及一些辅料经过工艺处理制得。所述辅料包括选自明胶,果胶,黄原胶,经过复配得到的悬浮剂以及菊粉,柠檬酸,白砂糖,柠檬酸钠,抗坏血酸,氯化钠,和极少量的香精和色素。本发明具有抗氧化功效,同时补充人体所需的维生素,氨基酸,能清洁肠胃增强新陈代谢。
Description
技术领域
本发明属于保健饮品领域,涉及一种具有较强抗氧化功效,口感润滑有弹性,口味酸甜适中,粒子悬浮均匀,色泽鲜亮,开盖即饮的一种含有林蛙抗氧化肽微胶囊的功能性饮料。
背景技术
林蛙抗氧化肽是林蛙提取了林蛙油后剩余残体部分的主要成分,其氨基酸含量丰富,主要有亮氨酸,色氨酸,赖氨酸等,是不可多得的动物性氨基酸来源。迄今为止,通过酶解发酵等技术实现了林蛙抗氧化肽的工业化的生产,产出安全、实用、高效、低成本的林蛙抗氧化肽,对林蛙肽的相关食品行业贡献巨大。林蛙抗氧化肽表现出的抗氧化活性,用在食品中来增强人体得抗氧化能力。而抗氧化肽在医学和动物生产中应用比较多,在食品方面的应用相对没那么成熟,目前林蛙产品在市面上出售的仅有30多种,形式单一,种类不全。基于上述现状,本产品利用微胶囊技术将林蛙抗氧化肽以微胶囊粒子形式包埋起来,保护其敏感成分、隔离其活性物质,并将其放在饮料中使得该产品便携易食,辅以菊粉等原料增强其消化吸收能力,并创造出独特的口感风味。
发明内容
本发明的目的在于提供一种具有抗氧化功能的颗粒饮料及其制备方法,以解决上述背景技术中提出的问题。
在优化的工艺条件下,微胶囊粒子含抗氧化成分高,且形状弹性良好;果胶和黄原胶以一定比例复配后其悬浮效果好;加上多种多样的辅料以一定比例混合后制成的林蛙抗氧化肽微胶囊功能饮料,不仅具有明显的抗氧化功效,还具有较高的营养价值、口味酸甜适中的特点,是一款大众饮品。
为实现上述目的,本发明的技术方案为:
一种含有林蛙抗氧化肽微胶囊的功能性饮料,其特征在于按重量份计,由以下组分制备而成:
5~10重量份的微胶囊粒子;10.1~30.3重量份的甜味剂;10~20重量份的复配悬浮剂;0.1~0.3重量份的柠檬酸,0.02~0.06重量份的柠檬酸钠;2.4重量份的菊粉;0.02重量份的抗坏血酸;0.5重量份的氯化钠;40~80重量份的纯净水组成。
按重量份计,所述饮料还包括0.05重量份的防腐剂;0.08重量份的香精,0.02重量份的色素。
所述防腐剂为乳酸钙,山梨酸钾,苯甲酸钠中的一种;
所述的香精为甜橙,菠萝,西柚,芒果,香蕉或苹果中的一种;
所述的色素为柠檬黄,日落黄,姜黄,栀子黄,红花黄,红曲黄中的一种或多种。
所述甜味剂是由蔗糖与其他人工合成香精以100:1的比例混合而成;所述其他人工合成香精为阿斯巴甜,糖精,糖精钠或环己基氨基磺酸钠等。
一种含有林蛙抗氧化肽微胶囊的功能性饮料中的微胶囊制备方法如下:
1)微胶囊溶液的制备:
a)微胶囊壁材的制备:取2~3重量份的海藻酸钠,制成质量浓度为2~3%的溶液,40~60℃加热磁力搅拌至其完全溶解;将1重量份的乳化剂吐温80加入上述溶液中继续磁力加热搅拌1~2h;
b)芯壁材混合液的制备:加入0.8~2.0重量份的林蛙抗氧化肽到上述壁材溶液中,40~60℃磁力加热搅拌至其完全溶解得到混合液;
c)固化液的制备:取2~3重量份的氯化钙加纯净水制成质量浓度为2~3%的氯化钙溶液;
d)微胶囊粒子的制备:将所述芯材壁材混合液通过微胶囊造粒机滴入上述固化液中,边滴入边搅拌,用凝固浴法制成粒径300纳米的微胶囊,固化0.5~1h后分离水洗,冷冻保存;
2)复配悬浮剂的制备:
所述复配悬浮溶液是指由0.2~0.5重量份的果胶,按果胶与黄原胶的比例为1:2加入黄原胶,加纯净水10~20重量份,在40~60℃下磁力搅拌加热0.5~1h;
3)林蛙抗氧化肽微胶囊的功能性饮料的制备
将5~10重量份的微胶囊粒子,10.1~30.3重量份的甜味剂;10~20重量份的复配悬浮剂;0.1~0.3重量份的柠檬酸,0.02~0.06重量份的柠檬酸钠;2.4重量份的菊粉;0.02重量份的抗坏血酸;0.5重量份的氯化钠;0.05重量份的防腐剂;0.08重量份的香精,0.02重量份的色素;混合后加40~80重量份的纯净水,将所得林蛙抗氧化肽微胶囊的功能性饮料均质,杀菌,灌装。
本发明的有益效果:
1)本发明属于一种含有林蛙抗氧化肽微胶囊的功能性饮料。由林蛙抗氧化肽,菊粉为主要原料,不仅具有良好的抗氧化功效,而且产品中的颗粒悬浮均匀,色泽鲜亮,口感很好,其中林蛙抗氧化肽具有抗氧化,抗衰老,抑菌等功能,将其包埋在微胶囊中,使得其抗氧化活性稳定,作为动物性抗氧化肽,它在食品中的应用更为有效。2)辅料菊粉,具有控制血脂;降低血糖;促进矿物质吸收;调节肠道微生物菌群,改善肠道健康,防止便秘;抑制有毒发酵产物的生成,保护肝脏,预防结肠癌;低能量可用作减肥;新陈代谢功能增强,恢复伤口,也可用作美肤。3)所述的抗氧化功能性饮料,经优化已得到最优的微胶囊粒子制备工艺条件,配方简单合理,制造成本不高,产品属于大众饮品,适合工厂化生产。
具体实施方式:
实施例1:
A1:微胶囊溶液:
a)微胶囊壁材的制备:取2.0g的海藻酸钠,加入98g的纯净水中,40℃加热磁力搅拌至其完全溶解;将1g的乳化剂吐温80加入上述溶液中继续磁力加热搅拌1h。
b)芯壁材混合液的制备:加入0.8g的林蛙抗氧化肽到上述壁材溶液中,40℃磁力加热搅拌至其完全溶解得到混合液。
c)固化液的制备:取2g的氯化钙溶于98g的纯净水中。
d)微胶囊粒子的制备:将所述芯材壁材混合液通过微胶囊造粒机滴入上述固化液中,边滴入边搅拌,用凝固浴法制成粒径300纳米的微胶囊,固化0.5h后分离水洗制成微胶囊粒子,冷冻保存。
B1:复配悬浮溶液:
所述复配悬浮溶液是指由0.2g的果胶,0.4g的黄原胶,加10g纯净水,40℃磁力加热搅拌0.5h。
C1:林蛙抗氧化肽微胶囊的功能性饮料的制备:
将5g微胶囊粒子,10.1g的甜味剂;10g的复配悬浮剂;0.1g柠檬酸,0.02g的柠檬酸钠;2.4g菊粉;0.02g抗坏血酸;0.5g氯化钠;0.05g防腐剂;0.08g香精,0.02g色素;加入40g的纯净水。将所得林蛙抗氧化肽微胶囊的功能性饮料均质,杀菌,灌装。
实施例2:
A2:微胶囊溶液:
a)微胶囊壁材的制备:取2.5g的海藻酸钠,加入97.5g的纯净水中,50℃加热磁力搅拌至其完全溶解;将1g的乳化剂吐温80加入上述溶液中继续磁力加热搅拌1.5h。
b)芯壁材混合液的制备:加入1.4g的林蛙抗氧化肽到上述壁材溶液中,50℃磁力加热搅拌至其完全溶解得到混合液。
c)固化液的制备:取2.5g的氯化钙溶于97.5g的纯净水中。
d)微胶囊粒子的制备:将所述芯材壁材混合液通过微胶囊造粒机滴入上述固化液中,边滴入边搅拌,用凝固浴法制成粒径300纳米的微胶囊,固化1.5h后分离水洗制成微胶囊粒子,冷冻保存。
B2:复配悬浮溶液:
所述复配悬浮溶液是指由0.3g的果胶,0.6g的黄原胶,加15g纯净水,50℃磁力加热搅拌0.8h。
C2:林蛙抗氧化肽微胶囊的功能性饮料的制备:
将8g微胶囊粒子,20.2g的甜味剂;15g的复配悬浮剂;0.2g柠檬酸,0.04g的柠檬酸钠;2.4g菊粉;0.02g抗坏血酸;0.5g氯化钠;0.05g防腐剂;0.08g香精,0.02g色素;加入60g的纯净水。将所得林蛙抗氧化肽微胶囊的功能性饮料均质,杀菌,灌装。
实施例3:
A3:微胶囊溶液:
a)微胶囊壁材的制备:取3g的海藻酸钠,加入97g的纯净水中,60℃加热磁力搅拌至其完全溶解;将1g的乳化剂吐温80加入上述溶液中继续磁力加热搅拌2h。
b)芯材壁材混合液的制备:加入2g的林蛙抗氧化肽到上述壁材溶液中,60℃磁力加热搅拌至其完全溶解得到混合液。
c)固化液的制备:取3g的氯化钙溶于97g的纯净水中。
d)微胶囊粒子的制备:将所述芯材壁材混合液通过微胶囊造粒机滴入上述固化液中,边滴入边搅拌,用凝固浴法制成粒径300纳米的微胶囊,固化2h后分离水洗,微胶囊粒子,冷冻保存。
B3:复配悬浮溶液:
所述复配悬浮溶液是指由0.5g的果胶,1g的黄原胶,加20g纯净水,60℃磁力加热搅拌1h。
C3:林蛙抗氧化肽微胶囊的功能性饮料的制备:
将10g微胶囊粒子,30.3g的甜味剂;20g的复配悬浮剂;0.3g柠檬酸,0.06g的柠檬酸钠;2.4g菊粉;0.02g抗坏血酸;0.5g氯化钠;0.05g防腐剂;0.08g香精,0.02g色素;加入80g的纯净水。将所得林蛙抗氧化肽微胶囊的功能性饮料均质,杀菌,灌装。
试验例抗氧化速溶冲剂的评价
选择专家10名进行官能评价。标准如下表格:

根据上述结果可知:本发明将具有抗氧化功效的林蛙多肽采取优化后的微胶囊包埋工艺,其包埋率和成型性以及弹性都良好,成型后的微胶囊既能保证其较高的抗氧化活性,又使得微胶囊粒子饮料口感风味独特无异味,悬浮均匀,色泽鲜亮,口感风味优质,开盖即饮,方便大众日常饮用。
最后说明的是,以上实施方案仅用以说明本发明的技术方案而非限制,尽管参照较佳实施例对本发明进行了详细说明,本领域的普通技术人员应当理解,可以对本发明的技术方案进行修改或者等同替换,而不脱离本发明技术方案的宗旨和范围,其均应涵盖在本发明的权利要求范围当中。
Claims (5)
1.一种含有林蛙抗氧化肽微胶囊的功能性饮料,其特征在于按重量份计,由以下组分制备而成:
5~10重量份的微胶囊粒子;10.1~30.3重量份的甜味剂;10~20重量份的复配悬浮剂;0.1~0.3重量份的柠檬酸,0.02~0.06重量份的柠檬酸钠;2.4重量份的菊粉;0.02重量份的抗坏血酸;0.5重量份的氯化钠;40~80重量份的纯净水组成。
2.根据权利要求1所述的一种含有林蛙抗氧化肽微胶囊的功能性饮料,其特征在于:按重量份计,所述饮料还包括0.05重量份的防腐剂;0.08重量份的香精,0.02重量份的色素。
3.根据权利要求1所述的一种含有林蛙抗氧化肽微胶囊的功能性饮料,其特征在于:
所述防腐剂为乳酸钙,山梨酸钾,苯甲酸钠中的一种;
所述的香精为甜橙,菠萝,西柚,芒果,香蕉或苹果中的一种;
所述的色素为柠檬黄,日落黄,姜黄,栀子黄,红花黄,红曲黄中的一种或多种。
4.根据权利要求1所述的一种含有林蛙抗氧化肽微胶囊的功能性饮料,其特征在于:所述甜味剂是由蔗糖与其他人工合成香精以100:1的比例混合而成;所述其他人工合成香精为阿斯巴甜,糖精,糖精钠或环己基氨基磺酸钠等。
5.根据权利要求1所述的一种含有林蛙抗氧化肽微胶囊的功能性饮料中的微胶囊制备方法如下:
1)微胶囊溶液的制备:
a)微胶囊壁材的制备:取2~3重量份的海藻酸钠,制成质量浓度为2~3%的溶液,40~60℃加热磁力搅拌至其完全溶解;将1重量份的乳化剂吐温80加入上述溶液中继续磁力加热搅拌1~2h;
b)芯壁材混合液的制备:加入0.8~2.0重量份的林蛙抗氧化肽到上述壁材溶液中,40~60℃磁力加热搅拌至其完全溶解得到混合液;
c)固化液的制备:取2~3重量份的氯化钙加纯净水制成质量浓度为2~3%的氯化钙溶液;
d)微胶囊粒子的制备:将所述芯材壁材混合液通过微胶囊造粒机滴入上述固化液中,边滴入边搅拌,用凝固浴法制成粒径300纳米的微胶囊,固化0.5~1h后分离水洗,冷冻保存;
2)复配悬浮剂的制备:
所述复配悬浮溶液是指由0.2~0.5重量份的果胶,按果胶与黄原胶的比例为1:2加入黄原胶,加纯净水10~20重量份,在40~60℃下磁力搅拌加热0.5~1h;
3)林蛙抗氧化肽微胶囊的功能性饮料的制备
将5~10重量份的微胶囊粒子,10.1~30.3重量份的甜味剂;10~20重量份的复配悬浮剂;0.1~0.3重量份的柠檬酸,0.02~0.06重量份的柠檬酸钠;2.4重量份的菊粉;0.02重量份的抗坏血酸;0.5重量份的氯化钠;0.05重量份的防腐剂;0.08重量份的香精,0.02重量份的色素;混合后加40~80重量份的纯净水,将所得林蛙抗氧化肽微胶囊的功能性饮料均质,杀菌,灌装。
