本发明公开了一种蜂蜜中果糖和葡萄糖含量的测定方法,其具体的测定步骤如下:用0.1毫升‑0.3毫升塑料吸管移取搅拌均匀的液态蜂蜜,滴加1滴至5毫升样品显色管中,加蒸馏水至样品显色管4毫升刻线处,加盖后上下摇动8‑10次,使蜂蜜与水混合均匀;将一片蜂蜜果糖和葡萄糖试纸浸入样品显色管溶液中8‑10秒,取出时沿样品显色管内壁除去多余溶液,在30‑60秒内与色阶卡进行比较。本发明的技术方案,通过观察试纸颜色,来快速分辨试样蜂蜜中的葡萄糖和果糖,起到快速测定的目的,其测定步骤简单,操作易性,通用性较好。

技术领域
本发明涉及蜂蜜检测的技术领域,尤其涉及一种蜂蜜中果糖和葡萄糖含量的测定方法。
背景技术
蜂蜜中的糖分以单糖为主,即葡萄糖和果糖,通常占蜂蜜总成分的 65%以上,蜂蜜中的葡萄糖和果糖因为它具有还原性,所以称之为还原 糖,它们是来自于花蜜中的葡萄糖和果糖,最主要的来源是花蜜中的蔗糖通过蜜蜂分泌的转化酶的作用而产生的葡萄糖和果糖,赋与蜂蜜的甜味,吸湿性 和能量的价值及有形的特性。在一般的情况下,蜂蜜中的葡萄糖 和果糖含量大致相同。 蜂蜜中含量较少的糖分大多数都不存在于花蜜里,它们可能是在蜂蜜的酿造过程中通过各种酶和酸类的作用下形成的,所以说蜂蜜中的果糖却是种特殊的果糖。
现有对蜂蜜中的果糖和葡萄糖含量的测定多采用液相色谱法测定,该测定方法步骤复杂,测定时间较长,不便于快速检测使用,为此,我们提出一种蜂蜜中果糖和葡萄糖含量的测定方法。
发明内容
为解决现有技术方案的缺陷,本发明公开了一种蜂蜜中果糖和葡萄糖含量的测定方法。
本发明公开了一种蜂蜜中果糖和葡萄糖含量的测定方法,其具体的测定步骤如下:
1)用0.1毫升-0.3毫升塑料吸管移取搅拌均匀的液态蜂蜜,滴加1滴至5毫升样品显色管中,加蒸馏水至样品显色管4毫升刻线处,加盖后上下摇动8-10次,使蜂蜜与水混合均匀;
2)将一片蜂蜜果糖和葡萄糖试纸浸入样品显色管溶液中8-10秒,取出时沿样品显色管内壁除去多余溶液,在30-60秒内与色阶卡进行比较。
优选的,所述步骤1)中蜂蜜如果有白色结晶现象,应该50-60℃水浴使其溶化,搅匀后再取样测定。
优选的,所述步骤2)中取出试纸后在30-60秒内与标准比色板对照,最好在光线充足处观察。
若试纸为蓝色,说明样品中不含葡萄糖和果糖;若试纸呈现绿色或棕色,说明样品中含有葡萄糖和果糖;根据所测结果,与国家标准限量进行比较,判断出蜂蜜中果糖和葡萄糖是否达标;蜂蜜中果糖和葡萄糖含量的国家限量标准为≥60%。
有益效果是:通过观察试纸颜色,来快速分辨试样蜂蜜中的葡萄糖和果糖,起到快速测定的目的,其测定步骤简单,操作易性,通用性较好。
具体实施方式
实施例1

2)将一片蜂蜜果糖和葡萄糖试纸浸入样品显色管溶液中8秒,取出时沿样品显色管内壁除去多余溶液,在30秒内与色阶卡进行比较。

2)将一片蜂蜜果糖和葡萄糖试纸浸入样品显色管溶液中10秒,取出时沿样品显色管内壁除去多余溶液,在60秒内与色阶卡进行比较。
所述步骤1)中蜂蜜如果有白色结晶现象,应该60℃水浴使其溶化,搅匀后再取样测定。
所述步骤2)中取出试纸后在60秒内与标准比色板对照,最好在光线充足处观察。
若试纸为蓝色,说明样品中不含葡萄糖和果糖;若试纸呈现绿色或棕色,说明样品中含有葡萄糖和果糖;根据所测结果,与国家标准限量进行比较,判断出蜂蜜中果糖和葡萄糖是否达标;蜂蜜中果糖和葡萄糖含量的国家限量标准为≥60%。

1)用0.1毫升-0.3毫升塑料吸管移取搅拌均匀的液态蜂蜜,滴加1滴至5毫升样品显色管中,加蒸馏水至样品显色管4毫升刻线处,加盖后上下摇动8-10次,使蜂蜜与水混合均匀;
2)将一片蜂蜜果糖和葡萄糖试纸浸入样品显色管溶液中8-10秒,取出时沿样品显色管内壁除去多余溶液,在30-60秒内与色阶卡进行比较。
2.根据权利要求1所述的一种蜂蜜中果糖和葡萄糖含量的测定方法,其特征在于,所述步骤1)中蜂蜜如果有白色结晶现象,应该50-60℃水浴使其溶化,搅匀后再取样测定。
3.根据权利要求1所述的一种蜂蜜中果糖和葡萄糖含量的测定方法,其特征在于,所述步骤2)中取出试纸后在30-60秒内与标准比色板对照,最好在光线充足处观察。
