背景技术
运动营养食品是在食品门类中较新的概念,在不同的国家定义有相似之处,但也不完全相同,运动营养食品均归类于“特殊膳食”。运动营养食品是为满足运动人群的生理代谢状态、运动能力及对某些营养成分的特殊需求专门加工的食品。
近几年来,国内外的运动营养品市场规模发展迅速,使用方便,具有一定功能的运动营养食品占得市场份额越来越大。2010年美国运动营养市场总销售额达到100亿元,每年约有10亿美元新产品进入市场。我国运动营养食品市场,2004年已形成10亿-15亿元的规模,2008年达50亿元的规模,运动营养食品还存在着相当大的市场增长空间。
我国运动营养食品是按照特征营养素的添加和产品消费者所从事的运动类型进行分类。特征营养素包括能量补充、能量控制和蛋白质补充;消费者所从事的运动类型包括速度、力量、耐力运动或运动后帮助恢复的产品。
发明内容
本发明所要解决的技术问题在于提供一种用于满足机体组织生长和修复需求的组合物,所述组合物为运动营养特殊膳食食品,具有促进机体组织肌肉蛋白的生长及修复的功效。
本发明所要解决的另一技术问题在于提供上述用于机体组织生长和修复需求的组合物的制备方法。

一种用于满足机体组织生长和修复需求的组合物,由蛋白粉、可可粉、粉末磷脂粉、微晶纤维素、麦芽糊精、重质碳酸钙、维生素预混料、矿物质及微量元素预混料和食品添加剂组成,按其重量份数计蛋白粉50-90份、可可粉5-13份、粉末磷脂粉0.1-0.5份、微晶纤维素0.5-1.2份、麦芽糊精2-6.8份、重质碳酸钙0.2-0.73份、维生素预混料0.2-0.7份、矿物质及微量元素预混料0.1-0.48份、食品添加剂0.25-3.2份,其中,

(1)按组方量称取蛋白粉、可可粉、粉末磷脂粉、微晶纤维素、麦芽糊精、重质碳酸钙、维生素预混料、矿物质及微量元素预混料和食品添加剂,备用;
(2)混料:先将微晶纤维素、重质碳酸钙、维生素预混料、矿物质及微量元素预混料、食品添加剂进行混合5-20mi n;再将余下的原料加入混料罐,总混30-60mi n;
(3)杀菌清洁、灌装,即得。
本发明的有益效果是:
所述用于满足机体组织生长和修复需求的组合物,根据需求可制作成运动营养特殊膳食、固体饮料等等其他的形式。含有丰富的高消化率、氨基酸组成合理的优质蛋白,补充运动时蛋白质的消耗,增加肌肉的力量,促进肌肉蛋白质合成,各组分协同作用,能够有助于改善恢复运动后肌肉蛋白质的合成、提供大量必需的氨基酸以及支链氨基酸,同时氨基酸的特定配比更为接近特定时期人体需要,且有利于肌肉的增长和力量的增加;在运动中可以帮助抗体疲劳,延缓中枢神经系统的疲劳,抗肌肉分解,更好的提高运动耐力,其制备方法简单,适合规模化工业生产的需要。

乳清蛋白是利用现代生产工艺从牛奶中提取出来的一种具有高生物利用效价的蛋白质;具有抗氧化、增加免疫功能、提高骨质、控制体重等功能。乳清蛋白含有丰富的天然之链氨基酸的来源。支链氨基酸中的亮氨酸在启动肌肉蛋白合成中起着重要的作用,亮氨酸及其氧化产物能抑制蛋白水解酶的活性,有助于肌肉蛋白质合成,增加瘦体重。研究表明,在负重运动或抗组运动以后,可以很大程度地促进肌肉合成,邦之保持肌肉质量的良好状态,增加肌肉力量和做功能力,促进人体脂肪的燃烧,有助于减肥。还可以很大程度上促进肌肉组织的恢复,缩短免疫抑制时间、有效缓解运动后肌肉酸痛感。
牛磺酸存在于身体的大部分器官和组织中,维持身体功能的正常运作与平衡。牛磺酸能调节各种原因(包括运动)所指的钙离子稳态失调,能双向调节纤维。运动是自由基的生成增加,造成细胞膜的损伤,补充牛磺酸能够减少运动后脂质过氧化反应,保护细胞免受氧化剂和自由基的攻击。
维生素是人和动物营养及生长所必需的某些少量有机化合物,对机体的新陈代谢、生长、发育、健康有极重要作用。研究表明,维生素的缺乏在运动员群体中缺乏已经很普遍。维生素A缺乏可导致暗视力下降,不仅可引起呼吸道、肠道风上皮细胞变性,还可能使细胞免疫、体液免疫功能下降,维生素C是维护免疫系统的生力军,是所有细胞的重要成分。维生素B1缺乏可导致肌力下降、肌肉酸痛等症状。维生素B2是体内辅酶的构成成分,参与物质代谢,对三大能源物质的彻底氧化功能起着重要作用。
对运动员来说。矿物质的含量甚微,但作用非常大。矿物质可以调节运动员神经系统的兴奋性、参与免疫应答反应、防止生物氧化、运动训练中运动员出汗较多,几个月的连续大量出汗会带来铁的流失,缺铁,体内就不能生成足量的血红素,运送到肌肉的氧气量也会减少,从而影响运动员的发挥。钙和锌的缺乏,会对运动员的神经兴奋性和机体水平造成不良影响。钙与肌肉收缩、神经信号传导以及体液环境的稳定有着密切的关系。
综上,本发明所述组方将各组分协同作用,从多方面对食用者进行调节,提供了运动者的每日营养需求以及能量需求,促进机体组织生长和修复。
实验例
96名健康志愿者(年龄介于20到67岁),平均分成两组,进行为期8周的举重训练计划,一组48人为试验组给予实施例1所述组合物,另一组48人为对照组给予相同量的安慰剂(麦芽糊精)。
参与者每周训练三次,训练12周(包括二头肌卷曲、三头肌卷曲、腿卷曲、腿压、腿部扩展等),每次训练后根据分组分别给予70克的实施例1所述组合物或70克的麦芽糊精(调成相同体积的液体)。
结果:对照组无显著性变化。试验组平均肌肉力量增加35%,大腿肌肉厚度增加5%(p<0.05)。

2.根据权利要求1所述的用于满足机体组织生长和修复需求的组合物,其特征在于:所述维生素预混料各组分按重量份数计为:维生素A 0.29份、维生素D 0.004份、维生素E7.075份、维生素B1 1.83份、维生素B20.51份、维生素B6 0.71份、维生素B12 0.002份、维生素C 80.45份、烟酸6.75份、叶酸0.13份、生物素0.02份、泛酸2.24份。
3.根据权利要求1所述的用于满足机体组织生长和修复需求的组合物,其特征在于:所述矿物质及微量元素预混料各组分按重量份数计为:磷23.49份,钾51.51份,镁8.785份,铁0.59份,锌0.42份,碘0.004份,硒0.001份,铜0.08份,锰0.12份,牛磺酸15份。
4.根据权利要求1所述的用于满足机体组织生长和修复需求的组合物,其特征在于:按其重量份数计蛋白粉83份、可可粉8份、粉末磷脂粉0.3份、微晶纤维素0.8份、麦芽糊精4.2份、重质碳酸钙0.45份、维生素预混料0.65份、矿物质及微量元素预混料0.25份、食品添加剂2.35份。
5.根据权利要求1所述的用于满足机体组织生长和修复需求的组合物,其特征在于:所述蛋白粉由分离乳清蛋白和浓缩乳清蛋白组成,其中,各组分按其重量百分比计分离乳清蛋白88.5%、浓缩乳清蛋白11.5%。
6.根据权利要求1所述的补充蛋白类运动营养特殊膳食食品,其特征在于:优质蛋白所占比例不低于50%。
7.根据权利要求1所述的补充蛋白类运动营养特殊膳食食品,其特征在于:粉状产品蛋白质含量≥50g/100g,脂肪含量≤6g/100g。
8.根据权利要求1所述的补充蛋白类运动营养特殊膳食食品,其特征在于:含有丰富的氨基酸以及必需氨基酸,其中支链氨基酸的含量可高达10~20%。
9.权利要求1所述用于满足机体组织生长和修复需求的组合物的制备方法,其特征在于:具体步骤如下:
(1)按组方量称取蛋白粉、可可粉、粉末磷脂粉、微晶纤维素、麦芽糊精、重质碳酸钙、维生素预混料、矿物质及微量元素预混料和食品添加剂,备用;
(2)混料:先将微晶纤维素、重质碳酸钙、维生素预混料、矿物质及微量元素预混料、食品添加剂进行混合5-20min;再将余下的原料加入混料罐,总混30-60min;
(3)杀菌清洁、灌装,即得。
